This is the part wherein I bore you to death with the details from my mundane life.....cause I'm a little too busy either to leave the house, or seek out beauty with my camera.

 

Last week's treasure..... I've been watching endless hours of food network and cooking channel over the last few months, dreaming of seared......well, seared anything really. I cooked some halibut with it over the weekend. Seared, perhaps. Delicious, yes.

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66 gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

One of the advantages of having a small dog is that you can do fun things like this! And while we're at it, let's talk about what a good sport Flint is. I can tell you that there were more than a few snaps showing camera shake due to my "Hee-Hee-ing" at my cutie pie. What a good boy.

 

And yes, still playing around with watermarks...

YES!!!! Lawn darts, IN THE BOX. This is like when people sell their old alcohol at a yardsale -- I'm not sure if that's technically legal, guys. These things go for $100 on Craigslist, but I'm simply going to display them in my house. I now have TWO sets of lawn darts: My childhood ones, and these in-the-box ones.

 

I took my childhood ones to a festival once. We played with it for about 15 seconds before things got dangerous -- the darts did a 180 in mid-air and came back at the spot they were thrown from.

 

They were promptly put away again, never to return to a campsite.

 

Unfortunately, the lawn dice are pretty boring. You roll dice and add up the totals, only if you roll them into the ring. Way too simple.

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66 gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

I've never had one of these in an adult living space of my own. They are actually pretty amazing. Instead of shaving my whole neck raw, I can focus on specific, individual hairs. I guess the women were right, after all. These things are awesome. Don't get me started about zits... They make zit management amazing.

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66 gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

$1 guitar. This is the tiniest guitar I own, a quarter-size (19.875" playable string length, only 31.25" long). It's actually my favorite guitar (out of a dozen) for when I want to pick up something small and light. And it was only a dollar!

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66 gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66 gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

Another late arrival from a busy day at work, another panic to figure out what to shoot. A few of my kitchen pans were out, so I tried to see what I could do with them, and I'm actually fairly pleased with the end result. This set of pans gets the most use of any non-cast-iron cookware I own: a Calphalon nonstick pan on the top (which gets omelet, fried egg, and crêpe duty), a ChefMate stainless skillet in the middle, and a Calphalon grill pan on the bottom.

 

Because of the handle shapes, and the fact that I had to light with a strobe, it was impossible to avoid a few hot highlights, and because I was shooting on my stovetop, there were some deep shadows. I decided to try HDR both to even out the shadows and highlights some and enhance the texture of the patina on the pans. Since I was using strobes, I couldn't vary shutter speed, so I varied flash power instead. I contemplated going black & white, but it thought losing the brownish color of the patina (the pans are steel) hurt, rather than helped, so I toned vibrance down instead.

 

Nikon D7000 w/Nikkor 18-200mm @ 95mm, 1/250s @ ƒ/8, ISO100. Single SB-700 camera left firing through white umbrella, full, 1/2, 1/4 and 1/8 power. All our exposures merged to HDR in Photomatix Pro, with additional color finishing and a wee bit of dodging and burning in Aperture.

BACKSTORY: Got up around 8:50AM, made it out driving by ~9:15 and went out until 2:27PM for a total of 5.25 hours. Spent $60.55 plus ~$10.66 gas for 40.0 miles of driving (14 mpg @ $3.73/G), for a total cost of $71.21. We drove to 24 yard sales, stopping at 15 (62%) of them. We made 44 purchases (69 items) for a total estimated value of $814.81, leading to a profit/savings of $743.60. So in essence, we multiplied our $71.21 investment by 11.44X. (Also, if you think about it, the profit counts for even more when you consider that we have to earn ~$900 on the job, pre-tax, in order to take home the $789 in cash that we saved. How long does $900 of disposable income take to earn, vs the 5.25 hrs we spent here?) Anyway, this works out to a *post-tax* "wage" of $124.26/hr as a couple or $62.13/hr per person.

I call this the lazy frittata, not so much to mislead you into thinking you can just dump everything together in a pan, but because the traditional frittata is flipped in the pan using a plate and then served, but in this recipe (and just as acceptable!) I use the oven to finish the eggs and add mozzarella that browns to a nice finish on top. The plate flip takes a little practice, but you can’t add cheese like in this recipe using that method or you’ll end up with a gooey, and quite possibly burnt disaster.

 

These measurements are all approximate so use your best judgment, but I tend to use quite a lot of basil, oregano, or depending on what I’m cooking, marjoram. This recipe has a definite southern Italian hand to it with the spicy-but-not-overwhelming kick and fair amount of garlic. Use the equivalent of fresh basil and oregano if you have it, but I was in a hurry. Also, the same goes for the spinach, but that’s a bit of extra work with the blanching and draining, mincing, etc. Frozen spinach works just fine. For the mixed-in cheese, I use a parmigiano reggiano because it doesn’t add too much extra moisture to the mixture. Too much melted high-moisture cheese inside the frittata will cause the mixture to be a runny mess and won’t hold its form.

 

Since this frittata is basically the equivalent of an omelette made with vegetables and leftovers, you can pretty well clean up whatever you had for dinner the night before in one of these with the right combinations. Serve it hot or at room temp. You can eat it for lunch, dinner, even serve it as appetizer before a long dinner. I have even read of people using frittate for sandwiches! I can imagine how incredibly decadent that would be especially with a pasta frittata.

 

Don’t feel limited by the following recipe. There are infinite variations of the frittata, so, as I note in some places, do what works best for you. This is a guideline, but if you do follow it directly, you won’t be dissatisfied in the slightest. Unless you just don’t like Italian food. Ha! NO wait. Boooo! BOOO!

  

INGREDIENTS:

8 eggs, well beaten. I actually used 2 cups/16oz. of egg beaters/Kroger brand egg substitute – the eggs without all the cholesterol from the yolks, but once you add cheeses and meats, who knows what the equivalencies are. The eggs in a carton were just more convenient and a lot faster to use. However, please note, if you decide to separate your own eggs, you will need about

4-6 more eggs (separated whites) to make this recipe work.

 

4 Tbs olive oil

 

1 tsp finely ground sea salt (more or less to taste)

 

2-3 Tbs dried basil (be sure to rub this firmly together between your fingertips or palms when adding in order to release the oils in the leaves)

 

1 tsp dried oregano

 

½ tsp dried red pepper flakes (or more, to taste)

 

1 large yellow onion, diced

 

4-6 large cloves garlic, smashed and minced

 

1 cup yellow/orange/red bell pepper, diced

 

3-4 large tomatoes (I usually have romas on hand and these were super ripe and just about to go so they don’t have to be beautiful) diced whole (Do use the pulp, skin, etc. DO NOT de-pulp, de-seed, skin, etc.)

 

1 12 oz. pkg. frozen spinach

 

1C finely shredded parmigiano reggiano

 

2C shredded mozzarella

 

3 pan-grilled spicy Italian pork sausages, sliced into ¼” thick rounds. I happened to have those remaining from the night before when I made risotto. Had they been mesquite fire grill smoked however, the results of this recipe would have been not superior, but divine.

 

No "Italian pork sausages"? (This is an American thing with the best of intentions) Make bacon ahead of time. Got leftover hamburgers? Ham? Meatloaf? Polska Kielbasa? Just remember that the fat content in the meat you use (or don’t use at all) will add to the oils in the pan, so adjust accordingly for cooking times and moisture reduction. Also remember, however, to not add items that will clash with the flavors you’ve already started with. For example, I do NOT recommend using any sort of sage-flavored breakfast sausages with this recipe.

  

TOOLS:

You’ll need an oven-safe 12” skillet. I use my trusty Calphalon, but a good old workhorse deep cast-iron will do the job nicely. Everything else is standard kitchen fare (knives, measuring, etc.). Use what works best for you.

  

INSTRUCTIONS:

 

Preheat oven to bake @ 375F convection – Preheat to 400F if you’re not using convection.

 

Defrost the frozen spinach in a microwaveable bowl with a lid. DO NOT ADD WATER. You would have to drain all of the liquid and the cooking time in the pan would increase. Once the spinach is defrosted, put it aside until it’s time to add it to the pan. You shouldn’t need to drain any liquid from the heated spinach.

 

Starting with the soffritto (That’s Italian for mirepoix and can be a mixture of many things – no parsley this time, but in this case):

 

Add olive oil to 12” skillet on stovetop.

 

Add ingredients in the following order:

1.diced onion

2.diced peppers

3.smashed and minced garlic

4.diced tomatoes

 

Turn heat to medium high. Once the mixture in the pan begins to sweat, give it a toss or two to mix the ingredients, or mix well with a spatula. Continue to cook on medium high until mixture becomes more liquid and bubbly. The point of setting the heat AFTER you add the mixture is to not overheat or brown the onion, or the garlic especially, which would become bitter, and allows for an even mixture of flavors in the pan.

 

Add salt, basil, oregano, and red pepper. Mix well.

 

Cook for another 3-5 minutes, allowing the juices to reduce slightly, but if the vegetables become dry quickly or the tomatoes don’t have much liquid to begin with, reduce heat to medium or medium low depending on whatever your cooktop requires to maintain a slow simmer without burning the contents of the pan – or even add more olive oil if necessary. Just be sure not to add an amount that would be the equivalent of deep-frying the contents of the pan. You should be getting a nice aromatic liquid vapor from the pan, not smoke.

 

Add the sliced sausages and mix again until well blended. Cook for another 3-5 minutes.

 

Add the thawed and heated spinach to the pan, mix well to evenly distribute. Lightly simmer for another minute or two until the contents of the pan are well blended. At this time, the mixture should be fairly well reduced. If the spinach does happen to contain more liquid, just simmer lightly to reduce until the mixture is nearly solid, but not soupy. The trick is to meld the soffritto, spinach, and sausage flavors together before adding the eggs, but not cooking them to a point of dryness that won’t combine with the eggs.

 

Sprinkle the grated parmigiano reggiano evenly over the top of the contents of the pan. DO NOT MIX.

 

Some people add cheese to the beaten eggs, but if you aren’t watching carefully, you can end up with a mound of soggy cheese at the bottom of the bowl that you then have to quickly fold into the pan. I don’t recommend this method at all.

 

Immediately pour in the well-beaten eggs or egg substitute/reduced cholesterol eggs and quickly blend thoroughly with the contents of the pan, evenly distributing the eggs throughout the soffritto/spinach/sausage/cheese. I find that it’s easiest to use (in my case with the Calphalon non-stick) a two-pronged plastic cooking fork rather than try to mix everything with a spoon or spatula. Use the utensil handle if necessary.

 

Without stirring, continue to cook over medium heat until the egg mixture begins to firm. You can check this by just gently shaking the pan handle. When the uncooked eggs run lightly over the solid portion below, add the shredded mozzarella and immediately place in the preheated oven.

 

Allow the frittata to bake until the mozzarella on top has become lightly browned all over. This can be anywhere from 8-15 minutes depending on your oven.

 

When desired browning of the mozzarella occurs, carefully remove the pan from the oven and place on a cooling rack or countertop away from your fingertips! Allow to cool for approximately ten minutes.

 

Slice the frittata with a spatula, either in the pan, or if you prefer to present the dish, loosen the entire pan and slide off onto a serving dish and then cut, just like you would divide a pie and serve!

 

Each quarter slice is the equivalent of 2 eggs, but this will easily serve 8.

 

Store any leftover slices refrigerated in a flat, air-tight container. If you need to layer the slices, I have found that a placing a piece of wax paper between layers will keep them well separated. The bottoms of the frittata slices can become slightly wet when refrigerated.

 

Reheat in the microwave whenever you need an easy something for lunch or dinner, a quick bite to eat, or an appetizer before dinner. I have also found that when stored wrapped in wax paper and then in either freezer paper or plastic, they can be frozen until needed and quickly thawed in the microwave, again, whenever you need something ready to go.

For six weeks (it's a long story...), I can't have tomatoes, garlic, chocolate, onions, coffee, black tea, soda, wine (actually, alcohol of any kind), or mint. Additionally, I have to severely limit dairy and avoid anything spicy. I have to stop eating every day by 7:00 p.m. - so I've had to adjust to early dinners.

 

For someone who loves to cook and eat, this is sheer torture.

 

Tonight, I marinated some sirloin and stir fried the meat with three bell peppers and a pound of mushrooms. I made a homemade teriyaki sauce with pineapple juice, chicken broth, soy sauce and cornstarch. I served it over brown rice. It was pretty close to something I'd normally eat, but teriyaki sauce falls so flat without garlic, sherry and crushed red pepper.

 

So... does anyone have recipe suggestions to help me find some flavor and variety?

Frozen spinach -- thawed, slightly warmed, and pressed dry

Kerrygold Reserve Cheddar (uniquely wonderful aged cheddar)

Served with a sprinkle of grated Pecorino Romano cheese.

 

A good frittata pan eliminates the oven and makes life MUCH easier. There are cheaper versions out there, but I expect this one to last MANY years.

In honor of 5 de mayo, which commemorates the Battle of Puebla, I made a favorite dish from Puebla state: tinga poblana.

 

Recipe

 

I actually made the recipe from the 1965 book The Complete Book of Mexican Cooking but I can't find that one online. It turned out perfect.

The original kitchen was a mess: inaccessible and unuseable countertop areas, no dining area, very little prep space, dark and without nearly enough storage.

 

The new kitchen triples the usable countertop area, doubles storage, brightens the room up substantially and makes it seem far larger - without moving any walls. We needed a modern cook's kitchen without having it clash with the rest of the house, and I think we succeeded.

 

The green hanging glass light fixture comes from Bruck Lighting; the beautiful green glass mosaic tile from Hakatai up in Ashland, Oregon; the enormous, apron-front stainless sink - big enough to bathe a small child in - from Lavello Sinks. The cabinet hardware is from House of Antique Hardware (the cabinet pulls are actually winow sash lifts, mounted sideways), and the faucet is from Delta. The cabinets are an inexpensive model from KraftMaid and the stone is from a local fabricator and installer. The floors are a solid-plank bamboo, and the color matches the original oak hardwood in the rest of the house.

 

The green motif matches Jineui's large collection of Jadeite plates, cups and bowls, some of which might be visible in certain photos.

My meals are set for the week! Thankfully I really do not mind eating the same thing a few days in a row, even twice a day if the meal is good. This is a great meal during the winter because it’s warm, spicy, and filling. If I eat it in small increments it really gets me by!

 

Chili Mac:

16 oz. elbow macaroni

16 oz. ground beef

2 Cans Corn

2 Cans Chili

4 oz. Cream cheese

16 oz. Mushrooms

Red Pepper Flakes (the more the merrier!!)

 

Cook the macaroni and set aside.

Brown the beef, drain the fat, and cook down the mushrooms

Add the corn and chili and heat through

Add the cream cheese and let it melt through (this adds a creaminess and will diffuse the spice of the red pepper flakes)

Fold in the macaroni

Wasabi Crusted Sea Scallops with Mango Salsa & Plantain Crisp

 

Ingredients

 

* 12 large fresh sea scallops (U10)

* 1/2 cup panko (dried white bread crumbs)

* 1 tbsp. wasabi paste

* 1/2 ripe mango, finely diced

* 1 green onion, finely diced

* 1/2 plum tomato, blanched, seeded and finely diced

* 1/2 jalapeno pepper, finely diced

* 2 tbsp. freshly chopped cilantro

* 2 tbsp. freshly chopped Italian parsley

* 2 tbsp. freshly squeezed limejuice

* 4 slices of plantain – lengthwise – fried crisp and seasoned with cayenne / salt

* 1/2 cup of seedlings

* 1 tbsp. rice wine vinegar

* olive oil

* salt / fresh pepper

 

Method

 

1. Preheat Oven to 400F

2. Remove muscle from scallops. Place on absorbent paper and chill.

3. Prepare brunoise (fine dice) of mango, green onion, tomato, and jalapeno pepper. Toss together and season with lime juice and 1/3 of chopped herbs. Chill.

4. In a food processor add panko, wasabi paste, olive oil to moisten, and 1/3 of herbs. Pulse until crumb comes together and green is blended throughout.

5. Preheat pan and add olive oil. Season scallops and sear. Turn and top with panko crust. Finish in hot oven for 2-3 minutes.

6. Prepare vinaigrette of rice wine vinegar, olive oil and remaining herbs.

7. To plate, mould salsa on plate. Top with lightly dressed seedlings and plantain crisp.

8. Remove scallops from oven and plate 3 per. Drizzle with remaining vinaigrette and serve
