So I've been baking with sourdough almost a year and improved a lot. the first loaves were flat and didn't rise as they should. Did try different types of methods and recipes some worked out some didn't but finally got near the final product i was aiming for.

patience and consistent pay off :)

now I'm off to make some sourdough baguette.

Next to the small bakery Georgian Bread, a woman stands outside selling fresh vegetables, simply displayed on a wooden board. It’s a modest stall, but it attracts a lot of attention from passers-by. The woman offers seasonal products such as tomatoes, cucumbers, fresh herbs, and sometimes even homemade products such as pickled vegetables or spice mixes. Although her stall is small, the vegetables are always fresh, often straight from the countryside or from her own garden. Locals often stop by to quickly pick up some fresh ingredients. The board of colorful vegetables, the smell of fresh bread from the bakery next door, and the woman’s friendly smile give this corner of the street a cozy and local feel. It’s a small but lively slice of everyday life in Tbilisi, where the community comes together around simple but essential products.

This was a popular and highly recommended pick by a number of magazines or reports I've read over the years, so needless to say this breadlover knew she had to stop by to see for herself. While the selection was more than impressive, the product artisan and available at consumer friendly prices, the breads were truly pedestrian. There just wasn't any character to the breads (re: flavour esp. with the levain based breads). The crumb was a little too stiff spongy soft, the crusts thin and slightly chewy (I like thick crackly). What I did find entirely pleasing was the texture of the laminated dough - multiple sheets that flaked off each other. It was neither greasy nor heavy, but it also wasn't very buttery fragrant. Either way, the visit wasn't entirely lost because the pastries were very nice.

This vendor at the Saturday Market held along the riverfront in Augusta, Georgia had all types of baked goods but this bread is what had my attention. If photographs had smell you could better understand what I mean. I did leave with a loaf of each!

Blue Ribbon Bakery Market on Bedford Street in the West Village had the most delicious freshly baked brick oven breads. Sadly it closed in 2016 after a sharp rent increase at their nearby Blue Ribbon Bakery Kitchen as chefs Bruce & Eric Bromberg, relied on the kitchen space to bake all of their breads using a 150 year-old wood fired oven (which they lovingly restored after a fire in the building in 1997). You can still visit one of the Blue Ribbon restaurants today including a brasserie, fried chicken and sushi bar and grills.
