INGREDIENTS:
1/4 cup butter or margarine, melted
2 tablespoons Dijon mustard
3/4 cup Progresso® dry bread crumbs (any flavor)
1/4 cup grated Parmesan cheese
6 boneless skinless chicken breast halves (1 3/4 pounds)
DIRECTIONS:
1. Heat oven to 375ºF. Mix butter and mustard in shallow dish until well mixed. Mix bread crumbs and cheese in large plastic bag.
2. Dip one piece of chicken at a time into butter mixture, coating all sides. Then place in bag of bread crumbs, seal bag and shake to coat with crumb mixture. Place chicken in single layer in ungreased rectangular pan, 13x9x2 inches.
3. Bake uncovered 20 to 30 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.
Apparently no restaurants in Quincy can manage to make delicious Chinese food, so I just had to attempt it on my own. I used bits of chicken tenderloin coated in a single layer of flour and cornmeal, fried, and then tossed in Trader Joe's stir fry sauce (and sprinkled with sesame seeds!). Served on a heap of basmati rice.
I also thought it was about time to get some new bowls and plates...the same old white square dish was getting a little old.
Breaded chicken, baked in oven, with rice pilaf. Generic bagged garden salad with croutons and several choices of "Paul Neumann's" dressing.

Our easy pan version of this classic recipe. All natural chicken breasts are layered with a traditional Italian breading and topped with our flavorful marinara sauce. Finished with a layer of Mozzarella and Parmesan cheese. Serve with our toasted garlic bread (provided). For added ease this dinner can be baked from frozen.
