Agent G and I decided to celebrate choti diwali by making some scrumptious Indian style fish chops. The recipe is quite simple:
1. Two tins of tuna fish
2. 4 medium potatoes
3. three teaspoons of coriander powder
4. two teaspoons of cumin powder
5. one teaspoon of chili powder
6. two teaspoons of garam masala powder
7. two teaspoons of salt
8. Breadcrumbs (we used finely ground golden breakcrumbs)
9. 3-4 eggs beaten in a bowl.
So basically you chop up the potatoes, dunk them in a large bowl, fill it up with water till the potatoes are covered and blitz it all in the microwave for up to 8-10 minutes or until they're soft. Drain the water away and whilst the potatoes are hot, you should mash them up nicely. Add in the tuna and mix it all in to the potato. At this point add all the masala powders mentioned above and mix up.
Now you need to scoop out hand fulls of the mixture and form in to balls using your hands. Do a few at a time till you have about 4-6 balls. I like to make my chops slightly smaller than fist size. One at a time, role the balls in to the beaten egg that you whisked up earlier in a bowl and make sure the whole surface is covered. In another bowl pour out a good helping of the breadcrumbs and then coat the whole surface of the ball with it. You can repeat this one more time by dunking the bread crumb covered ball back in to the egg and then re-applying more breadcrumbs all around the surface. When done, place to one side. Now do the same to the other balls you have had on standby.
Whilst you're doing the above, you should have a Karahi (or a deep frying pan with curved edges - similar to a Chinese wok) on the stove filled with vegetable oil heating up. The oil needs to be quite hot. Once it's hot enough (give it about 3-4 minutes to heat up on a medium to high flame) you should lower the gas to medium and then very carefully drop in the breadcrumb covered chops. Rolls them down the side very carefully so you don't burn yourself. You need to turn the chops every 20-30 seconds so they get evenly fried. Fry them till they're golden brown and then take them out of the pan and lay them on a piece of kitchen towel. You can fry more than one chop at a time depending on the size of your frying pan/wok/karahi. Don't fry too many at once or you'll not be able to turn them easily.
Serve the chops hot with some tomato ketchup or maggi chilli sauce :-) Enjoy!

The fatty salmon belly was so rich!
Next time, I should cut the fillet into cross-sections, so that everyone can have a balance of fatty belly and moist flesh. And more lemon rind in the breadcrumbs!
The tartare sauce with mayonnaise, horseradish, seeded mustard, mustard powder, diced pickled gherkins and lemon juice was tart enough to cut through the richness of the salmon, and to give it a zing.
A very nostalgic dish for me. Stuffed with breadcrumbs, Romano cheese, black pepper, parsley. Some olive oil and vinegar to dip in.

A Good Dark Christmas Pudding
2oz plain flour
1/2 level teaspoon baking powder
" " " grated nutmeg
1/4 level teaspoon salt
" " " cinnamon
1 level teaspoon mixed spice
2-4oz suet or fat
3oz sugar
1/2-1 1b mixed dried fruit
4oz breadcrumbs
1oz marmalade
2 reconstituted eggs
1/4 pt brandy, rum, ale, stout or milk
method
Sift flour, baking powder, salt and spices together. Add the sugar, fruit and breadcrumbs and grated suet or melted fat. Mix with the marmalade, eggs and brandy, rum or other liquid. Mix very thoroughly. Put in a greased basin, 2 pt size, cover with greased paper and steam for 4 hours. Remove the paper and cover with a fresh piece and a clean cloth. Store in a cool place. Steam 2 to 3 hours before serving. N.B. if the smaller quantities of suet (or fat) and fruit are used, the pudding should not be made more than 10 days before it is to be used. With the larger quantities you can make it right away.
Christmas Cake
3oz sugar
4oz margarine
1 level tablesp. syrup
3oz flour
2 level teasp b pdr
1 level teasp cinnamon
" " " mixed spice
2-3 reconstituted eggs
1 1b mixed dried fruit
1/2 teaspoon lemon substitute or essence
pinch of salt
1/8 pt milk to mix
method- cream sugar and margarine. Add syrup. Mix flour, baking powder, salt and spices together. Add alternatively with eggs to the creamed mixture and beat well. Add fruit and lemon substitute and enough milk to make a fairly soft dough. Line a 7in tin with greased paper, put in the mixture and bake in a moderate oven for 2 hours. This cake should keep about 2 months if stored in a clean, dry, air tight tin. Do not store until quite cold. Examine from time to time to make sure it's keeping all right.
Mock Marzipan
2oz margarine
2 tablespoons water
2-3 teaspoons ratafia or almond essence
4oz sugar or syrup

Melt margarine in the water, add essence and sugar or syrup, ten soya.
Turn on to a board and kneed well. Roll out;cut into circular shape with the tin cake was baked in. Smear top of cake with jam or jelly; them cover with marzipan.

Feeding bread crumbs to a hungry little bird in China Town (San Francisco)
This is a red-winged bicolored Blackbird (Agelaius phoeniceus gubernator).

Remember, birds are in fact flying dinosaurs, the only survivors from this extinct prehistoric animal family that had ruled the world, so they deserve some respect!

Auf ihrem Spaziergang fanden die Danbos jede Menge Brotkrumen. Danbo sagte: "Wir sollten ihnen folgen und schauen, wo sie uns hinführen!" Aber Mini verwehrte diesen Wunsch sofort. "Denk nur an die Smarties-Falle! Die sah auch so schön und interessant aus. Und am Ende war sie nichts Gutes. Oder Hänsel und Gretel. Sie gingen und den Wald und wurden von der Hexe gefangen. Nein, wir sollten den Krumen nicht folgen!" Er hatte wirklich gute Argumente, Danbo dachte einen Moment darüber nach und sagte dann: "Stimmt, du hast Recht. Könnte zu gefährlich sein." Und dann gingen sie in eine andere Richtung.
Übrigens: Es nur noch ein Monat übrig in meinem Danbo-365-Projekt. Ich bin schon sehr gespannt, welche Abenteuer auf die beiden in den letzten 30 Tagen warten.
On their walk the Danbos found a lot of breadcrumbs. Danbo said: "We should follow them and look where they are leading us to!" But Mini denied that wish instantaneous. "Remember that smarties-trap! It looked so nice and interesting, too. And in the end it wasn't something good. And the Hansel and Gretel. They walked into the forrest and got caught by the witch. No, we shouldn't follow them!" He was really got with his arguments, Danbo thought a moment about what to and that said: "Well, you're right. Might be too dangerous." And then they walked into another direction.
By the way: It's just one month to go in my Danbo-365-project. I'm really excited to see what adventures are waiting for them in the last 30 days.

Made this for lunches this week. Its a variation listed at the bottom of the linked recipe (and here). I ended up tossing the breadcrumbs with olive oil to try and lighten it a little. Still nice and crisp.
1 tablespoon canola oil
1/2 cup chopped onion
1 tablespoon minced fresh garlic
2 tablespoons all-purpose flour
1 cup 2% reduced-fat milk
1/2 cup unsalted chicken stock
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 ounces 1/3-less-fat cream cheese
1 cup organic canned black beans, rinsed and drained
3 cups chopped cooked chicken breast
4 ounces baked tortilla chips, crushed
1 roasted red bell pepper, chopped
8 ounces lower-sodium green chile enchilada sauce (such as Frontera)
2.5 ounces shredded cheddar-Monterey Jack cheese blend (about 2/3 cup)
2 tablespoons chopped green onions
Preparation
1. Preheat oven to 350°.
2. Heat oil in a saucepan over medium heat. Add onion; cook 6 minutes. Add garlic and flour; cook 2 minutes. Gradually add milk and stock, stirring constantly; bring to a boil. Remove from heat; stir in cumin, coriander, salt, pepper, and cream cheese.
3. Spread 1/2 cup milk mixture over bottom of a broiler-safe 11 x 7-inch baking dish. Layer beans, 1 1/2 cups chicken, and 2 ounces chips. Top with 1/2 cup milk mixture. Layer 1 1/2 cups chicken, bell pepper, and 2 ounces chips; top with 1 cup milk mixture and enchilada sauce. Sprinkle with shredded cheese. Bake at 350° for 30 minutes. Sprinkle with green onions.
If you like wild rice, try Chicken and Wild Rice Casserole: Prepare Tortilla Chip Casserole through step 2, omitting milk, cumin, and coriander from sauce, and increasing onion to 1 cup and stock to 1 1/2 cups. Cook 2 slices chopped bacon in a skillet over medium heat. Remove bacon. Add 1 (8-ounce) container sliced button mushrooms to drippings in pan; cook 5 minutes. Add 2 teaspoons canola oil to pan; swirl to coat. Add 1 cup chopped leek, 1/2 cup chopped celery, and 1/2 cup chopped carrot; cook 5 minutes, stirring occasionally. Stir in 1/4 cup dry sherry; bring to a boil. Cook 3 minutes or until liquid evaporates. Add leek mixture, 4 cups chopped cooked chicken breast, 3 cups cooked brown and wild rice blend, 1/3 cup chopped fresh flat-leaf parsley, 1/2 teaspoon salt, and 1/2 teaspoon black pepper to sauce; toss to combine. Scrape mixture into an 11 x 7-inch baking dish. Toss 1 1/4 cups fresh breadcrumbs with 2 tablespoons melted butter; sprinkle over casserole. Bake at 350° for 25 minutes. Serves 6 Calories 475; Fat 16.9g (sat 6.6g); Sodium 535mg
If you like poppy seeds try Poppy Seed Chicken: Prepare Tortilla Chip Casserole through step 2, omitting milk, cream cheese, cumin, and coriander from sauce. Add 1/4 cup finely chopped celery to the pan with the onion. Increase the chicken stock to 1 cup, and combine it with 1/2 cup half-and-half for the sauce. Remove from heat, and stir in 2 cups chopped cooked chicken breast, 1 tablespoon chopped fresh flat-leaf parsley, 1 1/2 teaspoons poppy seeds, 1 teaspoon Worcestershire sauce, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Scrape the mixture into an 11 x 7-inch glass or ceramic baking dish. Combine 1 cup fresh breadcrumbs, 1/4 cup sliced almonds, and 2 tablespoons melted butter in a bowl, and toss to combine. Sprinkle breadcrumb mixture over top of casserole, and bake at 350° for 30 minutes. Serves 6 Calories 235; Fat 12.7g (sat 4.8g); Sodium 288mg

Fish pie made with Haddock, Prawns and diced mushrooms in Parsley sauce, topped with mashed potato and breadcrumbs (including one digestive and one ginger biscuit) as well as 3 oz of cheddar cheese and a sliced tomato, oven baked until golden brown on top. Served with Samphire (Rock samphire, Crithmum maritimum) steamed in Lemon juice. Yes I cooked it and ate it too!
I didn't keep a note but it was approximately........
Should serve 3-4 people.
300 grams of Haddock Fillet
100 grams of peeled prawns
2 medium sized mushrooms
1 cup of Peas
4 medium sized spuds
1 large "Beefsteak" Tomato
1 packet of Colemans Parsley sauce mix
Half a pint (0.28 litres) semi-skimmed milk
1 slice of bread, end crust is best, a ginger biscuit and a Digestive biscuit.
100 grams of cheese.
70-100 grams Samphire
Peel the spuds and boil in saucepan of water (a spot of cooking oil will break the water surface tension and stop the spuds boiling over, by the way)
Place the Haddock in a baking dish and put in the oven at gas mark 4.
While the potatos and fish cook put the bread, biscuits and cheese in a food processor and turn them to crumbs (I add fresh ground pepper to taste here)
Take the fish out of the oven, turn the fish and add the diced mushrooms and peas and a knob of butter, place back in oven.
Mix Parsley sauce powder and milk as per the pack instructions.
Take fish etc out of oven, add sauce mix and stir so the fish breaks up within the sauce, mash the spuds with a little milk and a knob of butter, then smooth over the fish etc in the dish.
Thinly slice the tomato and lay on the mashed spuds. Then spread the breadcrumbs/cheese mix over the top.
Put it all back in the oven at gas mark 6 for 25 minutes until the top is golden brown.
The Samphire should be washed and wrapped tightly in a foil "parcel" with the juice of half a Lemon and placed in the oven for about 6-8 minutes.

Those onion rings? Crack-tastic. At least in the addictive sense. Not available as a side, but should be. They are the most incredible, crisp & light battered perfect onion ring possible. I think using the descriptor perfect is generally abused, but there is no other way to describe these light as air, non-oily, chip like crisp onion rings that melt away into the stuff of blissful dreams. Excellent. Seriously.

so, I saw this amazing dish and I needed it in my life but could find zero info! so I sort of just went with what felt right. I steeped saffron in warm cream; sautéed some shrimp and grape tomatoes in butter; made fresh breadcrumbs tossed in lemon zest. set those all aside. then I sautéed the garlic and chopped Serrano peppers in olive oil, deglazed the pan with lots of white wine, some lemon juice, then reduced. added saffron cream, thickened. added the shrimps and tomatoes, then tossed everything with the hot pasta. finishes with some chives, plated, and topped with the breadcrumbs. it's a revelation! I wish I got inspired like this more often. official 2013 goal-- more original dishes.
