Some time ago, on one of our fabulous Faversham fungus forays Max got all excited about a mossy bank in a woodland renown for it's amazing fungal diversity, often used by the Kent Field Group, Natural History Museum and other official fungal research organisations. I too have permission to gain entry. A privately owned wood comprised of ancient woodland, forgotten fruit orchards and non-managed coppice full of gems fungal and orchid. Once I got to max he had found this stunning black truffle. I have spawned a truffle dog!

 

It was seen by Jim Cornish, webmaster for a non-profit making group specialising in the fauna and flora and fungi in Newfoundland and Labrador who regularly publish a web-letter and in numerous fungal publications. Jim has publishes a fabulous piece on Mushroom Odours that I am proud to have helped illustrate with my photos.

 

This piece will be published in the international recognised "Fungi Magazine" in early 2021!

One of the worlds most delectable morsels, durring an Autumn walk with my dog Max he started to bark, wag his tail and pore the ground under an old oak tree. This is what he found! I wish he had told me about this skill a little earlier.....

Bought a piece of Himilayan black truffle over the weekend. My first time cooking with truffles and I wanted to experiment. This is a toasted slice of baguette topped with leeks, proscuitto, poached egg and slices of black truffle. All seasoned with a little bit of truffle salt. (Thanks to SpeedM for helping me brainstorm this dish.) I was a little bit disappointed with the truffle. I could hardly taste it. It wasn't a really expensive truffle but I there really was such a lack flavor. Oh, well. At least the rest of the dish was good enough to stand on it's own.

 

The other dish I made was fresh made pasta with a roasted garlic cream sauce and seared scallops topped with that flavorless truffle. No picture. Terrible presentation. ;)

  

This simple recipe for roasted capon is enhanced with black truffle butter under the skin. Silky gravy made with pan drippings and plenty of fresh mushrooms makes this roast bird holiday worthy.

There is every year a huge truffle market in Alba. Walking through the streets you can smell the thrilling scent of this fungus. You like it or you hate it. We liked it so much that we took during three days 13 times some truffle menu!

 

Best way to taste: Tajerin (thin noodles) with very few olive oil and just fresh shredded truffle. You need a special tool for doing this. Eggs and Tartufi fit perfectly together (Scrambled eggs, Boiled (4 min.) eggs with some cream and cheese...

 

There is also black truffle. It is not as intense than the white one (means also not as expensive). In this case you can add some truffle oil to intense the bouquet.

 

NEWS!! During the traditional auction sale at the Castello di Grinzano an Italian business man has bought 2 white truffles for 100'000 Euros!! He will give them to Pope Benedikt XVI and to the owner of the Ferrero company as a gift. The overall amount during this charity auction was 307'000 Euros for 13 white truffles!

 

In 2008 a Chinese billionaire has paid 200'000 Euros for almost one kilo of white truffles!
