My new way of doing biscotti since seeing a little old Nona on Youtube several years ago.
Let it remain a bit sticky in the mixing bowl... set it out in big spoonfuls and join it all in a log shape.... leave it rough.
Looks so nice when baked and cut.
This is cranberry and almond.

Week 16 Be Still class. Needing to photograph cookies was a good excuse to make biscotti - my anytime of the day cookie! (Kim Klassen texture)
I tried a new method of making biscotti. Actually it may be the old, traditional method. I discovered it when I watched a little elderly Italian lady named Nonna Pia.. so I wanted to try it. I love the lovely rustic look of it!! It is not as hard and difficult to bite into either.... yep... my new method is probably the ancient tried and true method! Thanks Nonna Pia..!
