Sitting in the center of Millennium Park, this sculpture absorbs everything around it. It's surroundings become a part of art when it reflects back the city of Chicago, a bride and the weather. To get a good look at the sculpture means becoming a part of it. Your face, clothing, movement all are a part of The Bean and thus it is ever changing.

My sister's such a looker.

You might remember Bean, who came to us in 2009 as a two month old kitten who was severely injured after someone threw her from a moving car (How Bean Lost a Leg but Found a Forever Home). She’s still happily living with the foster family who nursed her back to health, helped her adapt to life on three legs, and eventually adopted her. We thought it would be fun to share this recent photo of Bean, all grown up and enjoying life!

A selection of the bean bags i made for my boys to play with. I didn't realise how much fun they would be to play with otherwise i would have made them earlier. Very easy to make using 5" novelty squares i had put aside for another project and lots of rice.

A childhood food conquer! I now grow it every year. This lot will be made into a dip. Next year I hope to dehydrate some spiced beans for a healthy(er) snack.

Phase One of the garden is finished! A six pack of bush beans and two varieties of tomatoes.

Broad beans aren’t something that you really see for sale in the supermarket. Or at least I don’t really notice them. But they are highly recommended in food growing books as something easy to grow and prolific in their crops. But my first attempts at growing Broad Beans ended in disaster when they were beaten down by high weeds and neglect. I decided to give them another go and we’ve been rewarded for our efforts.

Cowboy Beans

 

A close-up image of Cowboy Beans that my spouse Mary made for the Independence Day holiday.

These Cowboy Beans are in a 11x13-inch casserole dish.

 

She did not skimp on the bacon!

 

Typically (and just like this time) these beans are outstanding.

  

Cowboy Baked Beans

 

Makes about 10- 12 servings

 

6 slices, thick cut bacon (Mary uses 1 full pound of bacon)

2 (16 oz) can Ranch Style or Chili Beans (Mary uses Busch Beans for this)

3 (11 oz) cans of Campbell’s Pork ‘n Beans

1 (7 oz.) can chipotle peppers in adobo sauce, chopped

1 medium Vidalia onion, chopped (Sweet Onion)

1 – 1 ½ tablespoons yellow mustard

1 ½ - 2 cups light brown sugar

1/2-1 cup BBQ sauce (Mary uses “Sweet Baby Ray’s Steakhouse” for these beans)

 

1. Cut the raw bacon into 1-inch pieces. Add to a skillet and cook over medium-high heat until about ¾ done. Set aside.

2. Using a colander, drain the juices from the beans. Add to a 12-inch Dutch oven.

3. Stir in the chipotle peppers, to taste. Gently stir in the onion, mustard, brown sugar, BBQ sauce, and bacon. Adjust taste, if needed. (Stirring gently is to reduce damaging the beans and turning them to “mush”).

4. Cook over coals until the mixture reaches a boil, let simmer a few additional minutes and the mixture thickens just slightly. Serve warm with a slotted spoon.

 

Note: If cooking in a house, use an 11x13-inch casserole dish. Cook at 350℉ for about 30 – 40 minutes.

4 tsp. of capers

1/4 red onion sliced thin

5 Tbs Olive Oil

2 Tbs Red wine vinegar

salt, pepper, and basil to taste
