Bœuf en Daube. (Healthy country food!)

 

(Daube comes from “daubière,” a terracotta pot in which the dish is traditionally cooked.)

 

For the marinade:

2 tablespoons olive oil

2 cups dry wine

2 teaspoons salt and 1⁄4 teaspoon pepper

2 cloves garlic, minced

2 cups sliced carrots

1 cup thinly sliced white onions

1 cup sliced challots

Bouquet garni: 1⁄2 teaspoon thyme or 1/2 teaspoon sage

1 bay leaf

3 lbs chuck steaks, cut in 2 ½ x 2 ½ x 1 inch squares

 

3 Tbsp flour (to roll the steak in once removed from the marinade)

1 1⁄2 cups firm ripe tomatoes, peeled, seeded and chopped

1 1⁄2 cups sliced fresh mushrooms (use a variety)

1 cup black olives (optional. I use kalamata olives)

2 tablespoons Dijon mustard

beef bouillon, if you need additional liquid

cornstarch or flour, if necessary to thicken the sauce

 

For the marinade: Mix olive oil, wine, salt & pepper, garlic, carrots and onions and marinate steak in refrigerator overnight or at least 6 hours, stirring meat several times.

Take the meat out of the marinade and reserve the marinade.

Season meat lightly with salt and pepper; roll in flour and set aside.

Briefly sauté the meat.

In a bowl toss marinade with tomatoes, olives and mushrooms. Add 2 Tbsp mustard.

 

Layer vegetables and meat in 6 quart flame-proof casserole.

Cover with any left-over marinade and add a little bouillon if necessary.

Cover, set over moderate heat and simmer, or bake, 1½-2 hours until meat is tender when pierced.

Trim out fat and taste for seasoning.

If liquid has not reduced and thickened, drain out into a saucepan and thicken with 1 Tbs cornstarch mixed with bouillon, boil 2 minutes, then pour into casserole.

Sprinkle with chopped parsley.

 

Serve with steamed potatoes, a mix of Camargue red rice and white rice or Basmati rice.

Good to be back in the kitchen, pain-free and able to concentrate on the work in hand.

 

Among the many and varied exercises I have been given to practise, the physio showed me how to walk sideways, like a crab, which means I can walk without crutches in this room because if I get nervous there is always a work surface handy to grab on to!

 

I'm making chorizo rice, a one pot dish.

 

To the whole chorizo chopped medium small, I added a chopped red and a yellow pepper, a red onion and 2 cloves of garlic, grilled peppers from a jar, cooked all in one large pot with a tbsp of olive oil and then mixed with the cooked basmati rice.

Lamb marinade: 1 lbs lamb tenderloin

1 cup full fat whole milk yogurt

2 tsp smoked sea salt

5 large garlic cloves grated

2 tsp red pepper flakes

1 tbsp ancho chile powder

2 tsp smoked paprika

1 tsp turmeric

Marinade under refrigeration for 3 hours. Grill at 375º for 15 minutes turning once.

I couldn't tell you the name of half of what's on this platter. There is the basmati; the jalebi; and a samosa. I know one thing for certain, I can't finish this on my own. I'm willing to share with good company.

Gluten Free Vegetable Korma With Basmati Rice Dec 2019 Sony

Heute #Basmati - Reis#mit Hühnerfrikassee und rote Beete - Salat.

 

Basmati- Reis ist eine lange,feinkörnige aromatische Reissorte,die traditionell auf dem indischen Subkontinent,hauptsächlich in Indien,Pakistan und Nepal,angebaut wird.

Fruchtiges Paprikagemüse mit Zwiebel und Melone

  

1 Zwiebel, in Streifen geschnitten und in Olivenöl andünsten

1 Knoblauchzehe, zerdrückt, dazugeben.

2 Paprikaschoten, in Stücke geschnitten beifügen und anbraten.

Mit Zucker und Salz würzen.

1/2 Honigmelone, in Stücke geschnitten, zu den Paprika geben, dünsten lassen.

1 Dose Pizzatomaten dazu,

Oregano und Pfeffer, Salz und etwas einkochen lassen.

Mit Basmati-Reis schmeckt das gut.

INGREDIENTS:

 

1 can (13.5 oz) unsweetened coconut milk (not cream of coconut)

3/4 cup water

1 1/2 teaspoons salt

1 cup uncooked basmati rice

1 bag (1 lb) frozen sliced carrots, thawed, drained (about 4 cups)

1 bag (1 lb) frozen cauliflower florets, thawed, drained (about 5 cups)

1 can (15.8 oz) black-eyed peas, drained, rinsed

1 serrano chile, seeded, finely chopped

2 tablespoons olive oil

1 1/2 teaspoons garam masala

Chopped fresh cilantro, if desired

Lime wedges, if desired

 

DIRECTIONS:

 

1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

 

2. In 2-quart saucepan, stir 1 cup of the coconut milk, the water, 1/2 teaspoon of the salt and the rice. Heat to boiling over high heat. Stir; reduce heat to low. Cover; simmer 15 minutes or until liquid is absorbed. Remove from heat; fluff rice with fork.

 

3. In large bowl, stir carrots, cauliflower, peas, chile, oil, remaining 1 teaspoon salt and the garam masala. Stir in cooked rice and remaining coconut milk until well blended. Spoon into baking dish.

 

4. Cover; bake 40 minutes or until thoroughly heated. Garnish with cilantro; squeeze lime juice over top.

 

Garam masala is a traditional Indian spice blend often consisting of as many as 12 spices, including coriander, black pepper, cumin, cardamom and cinnamon.

 

Be sure to use plastic gloves when seeding and chopping the chile. Its essential oils can burn if you use your hands and then touch your face. If you’d like extra heat, don’t remove all of the seeds…or try using 2 serranos!

to the spicey dahl curry base was added some extra tomato paste, coconut cream and a small cup of water,

together with fresh kale, fresh mushrooms, cooked chick peas and cooked sliced potato

chick peas and potato were precooked

the lid remained on apart from when the ingredients were stirred

no more spices were added as the curry was spicey enough

 

i broke the large white plate so went back to the charity shop and bought this large yellow plate, sunny and bright :)

i cooked today's portion of dhal curry with coconut cream and an extra 2/3rds cup of water, three chicken drumsticks were added

the drumsticks were cooked slowly on a low heat in the dhal curry

when the meat came away from the bone i shredded it and stirred

i left the curry to continue slowy cooking on a low heat until the oil was visibly simmering on the top

i used rapeseed oil instead of extra virgin olive oil

i made sure i dry roasted the hard spices, then blitzed in the nutribullet before any other cooking.

i also used some curry leaves. the curry leaves are not blitzed

450g Turkey mince

400g Tin of chopped tomatoes

290g Tin of Borlotti Beans

1 Red onion

1 Red pepper

2 tsp (or to your taste) Chilli powder

Dash of dried marjpram (opt)

Dash of ground cumin (opt)

 

Serves 4 (250kcal per person)

 

Serve with a 75g of basmati rice per person for a healthy low calorie meal (510kcal per person - chilli + rice), with a 300g baked potato (670kcal per person - chilli + potato) or a couple of tortillas (490kcal per person - chilli + 2 wraps).

 

Go easy if you add cheese. That's 410kcal extra per 100grams.
