After visiting Magnolia Bakery in Greenwich Village in New York and trying their banana pudding, I decided to recreate it at home. Several online recipes follow the recipe provided by the bakery, but I simplified mine without changing the taste.

Here’s how I make it:
Ingredients:
1 packet of custard powder (or 500g ready-made custard)
600 mL double cream
2 packets of sponge biscuits (340g)*
5 bananas, sliced
Instructions:
Prepare the custard: If using custard powder, make it according to the packet instructions. Cover with clingfilm touching the custard and chill. Skip this step if using ready-made custard.
Whip the cream: Beat the double cream until soft peaks form. Gradually whisk in the custard until fully combined and fluffy.
Layer the pudding: Set aside a few biscuits for decoration, then break the rest into large chunks. Layer a trifle bowl with the cream-custard mix, biscuit pieces, and sliced bananas. Repeat the layers, finishing with a layer of cream and custard on top.
Alternatively, you can fold the biscuits and banana slices into the cream-custard mix, then transfer to a trifle bowl.
Individual ramekins or bowls can also be used.
Chill: Refrigerate overnight.
Decorate: Before serving, decorate with the remaining biscuits and fresh banana slices.
Makes 10-12 portions
*Plain sponge biscuits are similar to what American recipes call Nilla wafers. In Poland, they’re known as Biszkopty. They are the base of Jaffa Cakes and taste similar to sponge fingers.
My wife and I went more than 100 miles out of our way while on a road trip, just to return to the Loveless Café for dinner and the most amazing banana pudding we ever had.

This is for those of you who have never had banana pudding.
My recipe:
Layer vanilla wafers in the bottom of a bowl. Slice a banana into 1/4" rounds and place the slices evenly on top of the wafers. Mix a large box of vanilla pudding according to the package directions and pour 1/3 of it over the bananas. Add a layer of whipped topping. Repeat two more times.
My mom made the vanilla pudding from scratch but I never got the hang of that. It always came out lumpy so I use a packaged pudding mix.

Really simple, really clear in terms of flavor (all vanilla) and really comforting. I might try it again in a few months, and lighten the pudding by mixing in some whipped cream before layering.
I made the custard, with eggs yolks, flour and sugar. The recipe is on the side of the Vanilla Wafers box.
Here is proof that I actually did make pudding out of yesterday's bananas.
I thought I would share my favorite recipe.
16 oz. CoolWhip thawed
16 oz. Sour Cream
2 small boxes instant vanilla pudding
1-2 boxes vanilla wafers
bananas 8-10
Mix pudding according to pkg. directions. Add CoolWhip and sour cream
Layer cookies, bananas, pudding, ending with pudding. I like many thin layers.
This has been a favorite of my family for years. The CoolWhip keeps it light and the sour cream keeps it yummy! Enjoy!

Chocolate-Chip Cookie Banana Pudding
Just a simple substitution makes for an incredible dessert!
Ingredients
1 box (small) banana cream pudding
1 box (small) chocolate pudding
4 cups cold milk (2% or whole (2 cups for each box))
4 bananas (peeled & sliced)
18-24 chocolate chip cream sandwich cookies (reserve at least 4)
1/2 cup milk chocolate chips morsels
Instructions
In a medium size mixing bowl add the pudding powder from both boxes. Mix together all 4 cups of milk according to the instructions on the box with either a wire whisk or hand mixer. Once pudding has come to the right consistency set aside to prepare the banana and cookies.
Using a cutting board or what ever you fill comfortable using. Peel and cut each banana into slices approx. 1/2 in or so and set aside. In a medium serving bowl add a layer of the pudding mixture to the bottom of the bowl alternating pudding, bananas, cookies and chocolate chips. For this particular dish I separated each cookie sandwich and alternated the cookie layer with one side of the cookie down and the other side up. You can choose to layer them whole or as stated above.
With the remaining 4 cookies you reserved earlier, place these in a plastic zip lock bag and crush until cookies become a crumbly topping. Sprinkle cookie crumbles over the top as the finial step. Chill or eat right away. I’m not sure why but when chocolate and bananas are served together it’s more than delicious. Enjoy!
This is my Mammaw Barrett's from-scratch banana pudding recipe. It was one of my absolutely favorite things to eat at her house when I was a child, and it eventually turned into a running joke that she had to find time to make one every time I was coming to her house or I would be disappointed. I was so spoiled by her pudding at such a young age that as an adult I can barely choke down well-meaning attempts that save time with store-bought pudding mix or whipped cream... they'd be delicious if they were all you'd ever had, but once you've visited tastebud heaven it's hard to settle for less.
In fact, one of my very first not-actually-dating-yet dates with my future wife was when she came over to my apartment in college to learn this recipe for a "demonstration speech" in her communications class. She took the finished pudding and a bunch of spoons to class as one of her "visual aids" and got an A... and I got a second date.
This banana pudding will change your life.
INGREDIENTS
Pudding
• 1/3 c all-purpose flour
• 1/2 c sugar
• 2 c milk
• 2 to 3 egg yolks
• 1 Tbsp margarine
• 2 tsp vanilla
• 1 box Nilla wafers
• 4 to 5 ripe bananas
Meringue
• 2 to 3 egg whites
• 1 dash salt
• 1/4 tsp vanilla
• 3 Tbsp sugar
INSTRUCTIONS
Pudding
1. Mix flour and sugar well
2. Heat milk in double boiler until scalded
3. Add dry mixture to milk and stir until beginning to thicken
4. Beat egg yolks and add to mixture
5. Stir while heating until thick as desired
6. Add margarine and vanilla and stir
7. Allow to cool (Can place pot in cold water to cool quickly)
8. Line bottom of Pyrex bowl with layer of wafers
9. Add layer of banana slices
10. Add layer of 1/3 pudding
11. Repeat all three layers two more times
Meringue
1. Mix egg whites with dash of salt until beginning to form peaks
2. Add vanilla and sugar and continue mixing until forming stiff peaks
3. Spread over pudding and heat in oven (set at broil/400°) until meringue begins to tan but before it browns (Watch closely - takes less than a minute)
NOTES
Serve warm or refrigerated
Homemade banana pudding and creamy cocoa for breakfast. My summer cold, which had been lurking for days, jumped out at me Saturday night. Sunday morning I wanted comfort food for breakfast. Fortunately I'd already made the banana pudding, using the recipe on the box of Nilla Wafers. No instant pudding here. real eggs to make the pudding from scratch.
The cocoa: 6 tbsp of sugar, 6 tbsp of dutch cocoa powder, 2.5 cups of whole milk, heat and stir till chocolate is dissolved. Add 2.5 cups of half and half, 1/2 teaspoon of cinnamon. Top each cup with whipped cream and orange zest. Internet source said this is the hot chocolate recipe used at the White House.
