Our pantry and fridge have been pretty bare for a couple of months now. It is amazing the ideas you can come up with for meals after living on so little money for so long. In my single days I had money to spare and groceries always went to waste--especially produce. NOW, this is not the case. Nothing is wasted. See notes on picture for descriptions.

I thought others might appreciate these tidbits of forgotten history of People of Color.

This meal was very healthy because it had nutritious vegetables on it like tomato and lettuce and a pickle. Other than that, it also consisted of a 1/3 pound chicken breast, bacon, mushrooms, American cheese, and mayo. I also had a side of healthy blue cheese dressing to dip the potato chips in and to spread on the sandwich. This sandwich is usually $8.50, but I was there on Wednesday and that is 1/2 off any chicken sandwich day. So I was smart and got it for $4.25. I am a Superstar !!

Anyone tried buckwheat?
Buckwheat is actually not grain but seed and is a very nutrient-rich, gluten-free plant source for a wealth of health benefits.
Most of the time I eat buckwheat for breakfast with an avocado, pickles, sauerkraut or any other vegetable I have.
This meal is great for athletes as the protein level in buckwheat is in the range of 11-14g per 100g and it composes almoat all the essential amino acids at right proportions, especially lysine which otherwise is a limiting amino acid in grains like wheat., maize, rice., etc.
TIP: soak all grains, seeds, legumes. Soaking reduce anti-nutrients which interfere with the absorption of vitamins and minerals.
