I gather this was the first Custom House Hotel in Macquarie Place...I don't think there was an earlier one...I haven't yet managed to discover anything conclusive re its origins ...it appears that the original part of the building might have been built in the very early 19th century...and that it was later added to and turned into a hotel...

So far, the first reference I've found to the Custom House Hotel in Macquarie Place* appears in this auction notice involving Prosper de Mestre's insolvent estate that appeared in the Australian in July and August 1845...

trove.nla.gov.au/newspaper/article/37158915 - the Australian, 22nd July, 1845 - see notice in column 2nd rhs...4th from top...

'Mr Samuel Lyons will sell by auction, at his Mart, corner of George-street and Charlotte- place, on Wednesday, 20th August, at eleven o’clock precisely, by order of the trustees. First, in one lot, that excellent dwelling house in Macquarie-place, near the Circular Wharf and opposite the “Obelisk” known as the “Custom House Hotel,” in the occupation of Mr. William Hay, with about an acre and a quarter of ground, reaching the Tanks, on which stores and offices are erected, and at present occupied by S. Wilkinson, Jun., and the American Consul. This property stands in one of the finest situations for business the City affords, being near the head of the Circular Wharf; the Hotel alone having a frontage of about fifty feet to Macquarie-place; and the alterations intended to be made in that part, as determined by the Government regulations, when completed, will add to its value to an incalculable degree.

The house is in good repair, has a handsome colonnade in front, and contains on the ground floor an entrance-hall, and two large rooms; the chamber story consists of nine rooms, besides a verandah balcony ten feet wide; the cellars are very convenient, and are approached from the yard in the rear, which is well secured, and has a carriage entrance from Macquarie-place. The buildings in the yard consist of kitchen, servants’ rooms, gig house, etc.'

Prosper de Mestre acquired the allotment on which the Custom House Hotel was built by grant in 1840...

trove.nla.gov.au/newspaper/article/230137802/14286622 - NSW GG, 6th June, 1840… 'Grants of Town Allotments…14. PROSPER DE MESTRE, 1a. 10p., One acre and ten perches ; bounded on the east by Macquarie-place, bearing north 34 degrees 30 minutes east 185¾ links ; on the north by allotment No. 13, bearing west 39 degrees north 540 links ; on the west by the stream of the tanks, bearing south 11 degrees west 283¼ links ; and on the south by allotment No. 15, bearing east 30 degrees 30 minutes south 429 links…’

This original Custom House Hotel was evidently demolished in 1896 and replaced by the Custom House Hotel that has survived (with additions and alterations) to the present day...

I'm not sure when the hotel became plural...just going on the various references that appear in the digitised newspapers...it was strictly singular in the 19th century...in the early 20th century it was occasionally referred to in the plural...but the singular appears to have been predominant until the 1920s...but from the 1930s it's been more or less universally known as the Customs House Hotel...

* there was evidently another Custom House Hotel in Argyle St at the Rocks...take care not to mix them up...
