Le origini di questo alimento, molto diffuso nella vita quotidiana, sono assai antiche ed incerte. La scoperta, probabilmente, fu casuale: il latte, se lasciato a contatto con gli otri ricavati dalla pelle o dallo stomaco degli animali da cui veniva ottenuto, venendo a contatto con particolari tipi di fermenti e grazie all'azione del calore, si tramuta naturalmente in yogurt. Si ritiene che siano state le popolazioni turche dell'Asia centrale a diffonderlo per prime fra i popoli circostanti, al punto che la stessa parola yogurt sembra derivi dal Turco yoğurmak, che ha il significato di "mescolare".

 

In seguito ai contatti culturali ed alle migrazioni dei popoli che già lo usavano presso di loro, l'uso dello yogurt si diffuse presto in tutto l'Occidente fra i fenici, i greci, gli egizi ed i romani. L'opera di diffusione continuò, al contempo, in Oriente: se ne trova traccia nelle novelle delle Mille e una notte, d'uso diffuso, quindi, anche fra gli Arabi. Lo yogurt incontrò un eccezionale successo anche in India, ove a tutt'oggi costituisce uno dei principali alimenti della dieta locale.

 

Circondato dalla fama di panacea, di rimedio per l'insonnia e la tubercolosi e di ausilio per la rigenerazione del sangue, lo yogurt non era ancora mai stato analizzato dal punto di vista scientifico. Così Ilya Ilyich Mechnikov, microbiologo russo, incuriosito dalla longevità delle popolazioni bulgare che facevano uso di yogurt, fu il primo a studiarlo in laboratorio. Egli riuscì ad isolare il Lactobacillus bulgaricus, uno degli organismi responsabili della fermentazione del latte. Credendo che questo lattobacillo fosse essenziale per la buona salute, riuscì a convincere l'imprenditore Isaac Carasso a sviluppare tecnologie industriali per la produzione dello yogurt.

 

Nel 1919 quest'ultimo realizzò il primo stabilimento commerciale per la produzione di yogurt a Barcellona, chiamando la sua impresa Danone, nome che porta ancor oggi.

Adjust the water in accordance... and, voila.... a lovely tasty loaf. Well, two of them actually, seeing as I double the recipe.

 

I've given up on bread boxes ... now I slice the two loaves the following day once they are totally cooled and easier to slice.

 

Package them ( 4 slices to a bag) in plastic bread bags and into the freezer they go.

Fresh bread every time I take a bag out of the freezer. So much easier not having to slice it every time I need some and fresher than leaving it in the bread box.

 

If I forget to take out a bag and we need toast in the morning...the frozen slices still toast perfectly....

 

This recipe works so well every single time I make it.

Title explanation: These colors kind of remind me of yogurt, the strawberry and blueberry flavored ones. Teehee. And these past few days my sisters and I have been ADDICTED to yogurt, buying tons at a time. Hahaha.

Consumare spesso yogurt, un paio di volte al giorno, è una buona abitudine per la linea. Lo yogurt è un alimento completo: contiene proteine, carboidrati e grassi in proporzione bilanciata. Ha un ottimo indice di sazietà, soprattutto nella versione parzialmente scremata, e le sue proteine sono già parzialmente predigerite: questa caratteristica tipica dello yogurt permette la liberazione di aminoacidi essenziali, rendendoli perciò più assimilabili rispetto alle stesse proteine contenute nel latte.

Le fragole sono tra i frutti primaverili meno calorici (solo 37 kcal per etto) e conferiscono allo yogurt una consistenza corposa e “croccante” che appaga il palato e sazia in fretta. Contengono vitamina C (antinfiammatoria), vitamina E e betacarotene (conservano sodi i tessuti), calcio (anti fame), magnesio e potassio (minerali altamente diuretici).

I've really changed up my diet the past two years, elminating many foods. This means I spend a lot more time making my own food. The most recent addition is cashew yogurt. Before it goes into the fermentor it gets strained into 1/2 pint jars. So as I made it this morning I decided I'd try a shot of it for the theme. Now I'm wishing I hadn't! What is that dark blob and stringy thing?? If I hadn't taken this picture I would have never noticed it. In good news the strainer kept it out of the final product.
