I knit this big, rectangular wrap with pockets for my mom as a belated Christmas gift.

Wrapped Turkey

 

This makes a really pleasant change from the standard roast turkey with all the trimmings, and would be good for a smaller crowd at Christmas, with no waste. The sausage meat and bacon makes for a very moist and tender joint.

 

Serves 4

400g turkey breast joint

400g Joe's sausage meat

1 onion, finely chopped

4 mushrooms, finely chopped

1 tbsp dried sage

1 tsp sweetener

½ tsp salt

6 slices lean back bacon, all visible fat removed

 

Sauté the onion and mushrooms in Fry Light until soft. Add the salt, sweetener and sage and mix well. Allow the mixture to cool before adding the sausage meat and stirring very well – I found using a fork to do this worked well, alternating between 'cutting' through the mixture with the sides of the fork and squeezing it through the prongs.

 

Place a piece of kitchen foil on the work surface, large enough to wrap loosely around the joint. With wet hands, spread a thin layer of sausage meat the same size as the turkey joint on the foil. Place the turkey on top of this, and form the rest of the sausage meat around the joint to cover it completely. Overlap the bacon slices over the top of the sausage meat and join the foil up loosely, with space to breathe for the meat underneath.

 

Bake, covered, for 30 minutes at 200°C. Fold back the foil to expose the meat and turn up the temperature to 220°C for a further 30 minutes. Ensure the meat is cooked through and slice carefully with a sharp knife – I found using a sweeping motion in just one direction worked better than moving the knife backwards and forwards.

 

Serve with Slimming World roast potatoes and plenty of superfree vegetables.

This is a great project we did for the City of Las Vegas. They are signal boxes that we wrapped in a high-quality 3M Vinyl. The beauty of these, they are coated with an Anti-Graffiti Lamination.

These signal boxes always got tagged. Now if they spray paint graffiti on them it takes a pump of denatured alcohol and a microfiber, and it comes off with ease.

One of the three train wrap designs that I have done for Miami Metrozoo. This train uses my own photos that I filtered in Photoshop to make it appear more painterly. Nearly impossible to get the whole train in one frame with any detail. It's like 200 feet long. Featuring an Asian theme "Wonders of the East". Also designed one for the African section and Tropical Americas. May start work on the fourth and final one in the near future.

Since I've been stuck inside a lot lately, overstressed from virus paranoia, and now, literally prevented from going to my day job, I've been messing around using graphics editing software to make better graphics for my Etsy shop.

 

I've been using a combination of GIMP and Autodesk Sketchbook to make interesting and attractive thumbnail photos for things for sale in my shop.

 

It's quite relaxing and I'm quickly becoming more adept at using the software.

This is my no-sew baby wrap I made with two rubber bands and five yards of plain cotton fabric from Wal-Mart. I used instructions from mamatoto.org.

I have "borrowed" some bubble wrap from work to lag some of the pipes in the attic that were too tricky (!) for the gas board to lag properly
