Rowan Berries, looking good before the birds descend on them, great winter food though for our feathered friends.

went out for an hour yesterday as it was a 'barmy' 6deg, still plenty of snow about & big drifts at the roadsides but last night we had rain & today it's almost gone...

There was a group of Redpolls scouring the fields in search of food during the deep of winter at minus 20C temperatures.

They found a few left over wild plants which obviously offered some seeds.

The birds will be happy this winter

Pfeffernuesse are very typical German christmas cookies (Peppery Gingerbread Cookies). They are made with black pepper and ginger. After baking you have to store them for a few days before they get the typical flavor.

Since I returned from Copenhagen that I have ben thinking about making this soup - Cauliflower. I was never that fond of cauliflower, so I was quite surprised when I ate a soup made of it and was delicious. Mine was as well, specially with the roasted prosciutto on the side!

With creamy hard-smoked bacon filling.

My wife makes this every Christmas, and these things are absolutely delicious!!!

These are tradtional German Christmas cookies called "Spitzbuben" (jam filled cookies) with a little secret: the jam is passion fruit and orange jam. And the dought is base on coconut. Added some Rum for a tropic touch of these.

Open pancake with Västerbotten cheese and chives creme.

And smoked ham.

The KEY is to use the right cut of The Cow-

From The Hind Leg- a section near the hamstring,

officially called "super digital flexor muscle" .

It has very distinct marbling of tendons all throughout the meat;

turning quite soft and tender in a soup or stew.

It's sweet, it's sour.

It's soft, it's fragrant.

It's life.

Taste it to the last bit.

Don't let the meaningless emotions spoil it.
