In a rustic outdoor kitchen, two people prepare a flavorful dish. One stirs a large pot filled with colorful ingredients, adding seasonings with care amidst a natural setting.
As a young child, I never used to like foo gah (bitter melon) but as I grew older, I've come to love it, whether stuffed, or cooked with beef or chicken.
Stuffing foo gah with ground pork is my preferred way of cooking and eating it but that requires a lot or preparation. In a pinch, stir frying it with chicken (or beef) is also very delicious. Fa chong (Chinese sausage) goes great with it!
I've since learned that it has several health benefits, including lowering blood sugar levels, making it a good food choice for diabetics. That does not mean, however, that it will replace insulin or other treatments.
