It's Girl Scout cookie time. And that means the annual fight between Todd and I over which cookies are better -Samoas or Thin Mints.

 

I think I've made it clear before how I feel about coconut. It is the devil. Evil, vile stuff.

 

Thin Mints, on the other hand, are made with rainbows and magic fairy dust.

 

So I ask you to join our debate: Which cookie is yours?

Sorry for the less than revolutionary shot but the efforts tonight went into an add on set to my adobe lightroom presets. Sam was kind enough to test them out for me and found that she could use a softer version of each, so I created 5 more for the "Organic Preserves" set. Flickr friends rock! Please, if you have a chance, buy a box or four or five of these cookies and support your local Girl Scout Troop and Council. The Girl Scouts (or Girl Guides) promote and support, and offer venues for, the positive and healthy values that we all wish for our daughters, sisters and all young women as they prepare for the world of the future. Cookie sales fund camps, other outdoor experiences, science fairs, encampments, business and leadership seminars and many other worthwhile activities.

 

A surprisingly substantial percentage of the money you spend on each box of cookies goes directly to the selling Girl Scout’s troop to support their activities. You could be helping to fund canoeing and kayaking camp this summer, trips to a local museum, or perhaps you’ll be assisting that troop in their upcoming summer project to repair and upgrade a local park’s series of wheelchair accessible pathways.

 

Please, if you’re in a local store and see some green-vested Girl Scouts selling cookies, or if one comes to your home or office or place of work and asks politely if you’d like to support the Girl Scouts, think about the very good things you’ll be investing in by buying several boxes. They’ll thank you, and the future may be just a bit better because you did so. (Oh, yes: you’ll also be getting some of those peanut-buttery, chocolate-covered coconut bits of goodness for your munching pleasure!)

Ordered tooo many girl scout cookies so I was inspired by Rick to make them into cupcakes. I have to say I was pretty proud of these along with the presentation which was Phoebe's brilliant idea (although I was thinking the same thing right when she voiced it...haha). They were very fun and very yummy.

...four days post surgery....She's not happy about this.

 

This was shot off camera, at 1/2 power with the included diffuser attached.Camera was synced at 1/125' at ISO 320, lens at f8.

I think she was trying to look around me to the activities next door!

the cookie mom was stacking them deep and selling them cheap... well... $3.50 a box... so 1636 boxes... great caesar's ghost (always wanted to work that one in) that's $5726 worth of cookies moved through our house... $899.80 of that goes to katie's troop...

 

that's roughly 420kg (924lbs) of cookies... 90kg (198lbs) of fat... 279kg (614lbs) of carbs... that'll wreck your diet...

I decided to make some yummy shaped chocolate dipped mint cookies. These cookies are soft, not crunchy -- though you can easily make them crunchy by letting them cook for a bit longer than normal.

Girl Scout Thin Mint Cookie recipe

  

Here is the recipe:

Chocolate Covered Chocolate Mint Cookies

Makes about 30 cookies

 

For the cookies:

3 Tbsp butter

1 egg white

1/4 cup packed brown sugar

pinch of Baking Soda (1/16 of a tsp, but if you get more it is ok)

1/2 tsp salt

1/4 cup cocoa powder

1/2 cup flour (plus 1/4 cup)

2 drops pure peppermint or mint oil (If using mint or peppermint extract it'll be more than this amount, as the extract is not as concentrated as the oil)

 

Directions:

1. Combine all ingredients together. Add the extra 1/4 cup flour as needed, until dough is roll-able and not sticky at all.

2. Flour the surface of a clean counter and use a rolling pin to roll the dough very thin. Use a cookie cutter to cut rolled dough into desired shapes.

3. Bake at 325 F for 4-7 minutes on a greased cookie sheet, or until cookies have firmed. For crunchier cookies let them cook a bit longer. Remove from oven and cool completely.

 

Mint Buttercream Layer:

2 cup packed powdered sugar

4 Tbsp melted butter

2-3 drops pure peppermint oil (again you will need more if using extract instead of oil)

1/2 tsp. milk

 

Directions:

1. Mix ingredients together (with a spoon, and then by hand, it is easier) until frosting dough becomes thick, you may need more powdered sugar.

2. Spread powered sugar on a clean counter top and use a rolling pin to roll out that frosting-dough. You want the mint dough to be somewhere around 1/4″ thick, but if you make it thinner it will still be great!

3. Use the same cookie cutter that you used to cut the cookies, and cut the frosting-dough into your chosen shape(s).

4. Place the cut frosting on top of cooled cookies.

 

Now you need to melt chocolate for dipping. Many people fear melting/dipping things in chocolate -- but I know a fool-proof way, just follow the instructions below.

1. Get milk chocolate chips, or unwrap a couple handfuls of Hershey kisses. Place the chocolate into microwave-safe glass bowl.

2. Heat the chocolate for about 1 min, in the microwave and then stir. Continue to heat for 30 second intervals until you can stir out all the chunks. Do not get ANY amount of water in the chocolate, and do not overcook.

3. Now you are ready to dip your cookies. Note that there is no added butter, or sugar to the chocolate, it is not needed. You can also use the easy melt-away chocolates that you can get from your local baking store.

4. The easiest way to dip the cookies is to not dip them at all. Simply spoon chocolate on top of the cookie, and use the bottom of the spoon to spread around the cookie top and sides.

Allow cookies to dry on a piece of parchment paper, foil, or plastic wrap also works. Place cookies in the refrigerator, or freezer to let the chocolate set.

With the heat wave hitting in full force today I decided to break into our stash of frozen Thin Mints. The only way to eat these Girl Scout cookies is straight out of the freezer. Taken with a Canon 35mm f/2 lens. Type L for a better view.

A yummy snack. Girl Scout cookies (Thin Mints) and a glass of cold milk.

Ahhhh Girl Scout cookie time! Cookies arrived today Yay! Now we just have to deliver them all before we leave for vacation!

 

Girl Scout History:

Juliette "Daisy" Gordon Low assembled 18 girls from Savannah, Georgia, on March 12, 1912, for a local Girl Scout meeting. She believed that all girls should be given the opportunity to develop physically, mentally, and spiritually. With the goal of bringing girls out of isolated home environments and into community service and the open air, Girl Scouts hiked, played basketball, went on camping trips, learned how to tell time by the stars, and studied first aid.

They turned out great! Moist cake...nice consistency to the frosting...perfect amount of peppermint. Normally I just think my cupcakes are good, but I actually wanted to eat all of these...haha.

At Starved Rock State Park: this was Thin Mint's first time climbing more than three steps. She made it up like a champ, leaving me winded!
