Recipe No. 48 of 50 for 2025. We made a potato, carrot, and onion pot roast to go with our Lord of the Rings / Hobbit marathon weekend. This was sooooo tender it just melted when it touched the fork.
Recipe No. 32 of 50 for 2025. What better way to celebrate a long hike in the summer than a juicy cheeseburger?? I have been trying to make these for a while, but studied different methods and this was a great success. Think, crispy, flavorful, and definitely juicy!!

Everybody seems so busy to leave this country as early as possible because he is done here…

50/60 I think it’s less now.
And what is the age of my generation??? It’s about to 30 I think……
Then how much time do we have?? We have spent most of the time of our life in this type race….and no one knows when this race will end……And how much time did we really enjoy Life as it’s really a Life?????

Recipe No. 36 of 50 for 2025. The sweet potato was cooked to perfection, but to make it even better: goats cheese and a walnut crumble on top. There were absolutely zero leftovers on this one!
Recipe No. 42 of 50 for 2025. First of all, I know what you're thinking… sloppy joes? Really?
For starters I have not had these since I was a kid, because I didn't like the after taste they gave. So Beccy and I (actually just Beccy) invented a method to remove that kind of tangy/odd aftertaste: brown sugar.
It sounded unusual to me, but it worked- a great meal, easy, and best of all no strange after taste. Also side note: the green beans and sweet potato fries were also great!
Recipe No. 44 of 50 for 2025. I am a huge fan of crabmeat Rangoon, and making it into a dip is even better because it's far easier to eat, and the baked cheese on top sends this over the edge with goodness!
Recipe No. 30 of 50 for 2025. To go with the coconut shrimp we made some smashed potatoes as a side dish: red potatoes boiled, and then smashed down, covered with butter, garlic, and spices, and topped with cheddar cheese under the oven broiler. The more they sat, the better they tasted!
Recipe No. 40 of 50 for 2025. I have made this before, but I usually see it served with ice cream. I found an alternative which was mixing ricotta cheese, cream, vanilla, and honey. Once you blend it up the grainy-ness of the ricotta disappears and it's better than ice cream!
Recipe No. 49 of 50 for 2025. The secret to this dish is to have sliced Pepperoncini instead of whole pepperoncini. This recipe was requested multiple times since we discovered it, and it's simple- and oh-so-tasty!!
Recipe No. 37 of 50 for 2025. This is a very, very simple summer recipe if you're looking for a quick and easy dessert option.
Make the Jello, but instead of adding in cold water add in vanilla Greek yogurt and let set for 2 hours. This was a really great summer treat with zero guilt!
Recipe No. 35 of 50 for 2025. If there ever was a cure for the Monday blues, this is definitely it… the smokey flavor is subtle, but the sauce really brings the flavor to life.
Recipe No. 33 of 50 for 2025. Tender beef marinated for hours with a crisp broccoli in a sweet Asian sauce. This was a first-make, forever keep recipe!
Recipe No. 38 of 50 for 2025. I have not had meatloaf since I was a child, but this weekend we made miniature meatloafs that were honestly one of the best things I have had in some time. Cooking them in large-muffin tins was key, because you were able to get a little bit of the baked edge around all sides, similar to the edges of a brownie. The inside was tender and flavorful- definitely making this a part of the recipe rotation!
Recipe No. 31 of 50 for 2025. For Father's Day we made a Mexican street corn casserole: chicken thighs coated with corn, mayo, sour cream, and spices and then baked for 30 minutes. To finish it off (not pictured) we added queso and herbs. This is also great for food prep!
Recipe No. 29 of 50 for 2025. We made oven-baked coconut shrimp for date night on Friday. I have tried these before in the oven and they were not good, but this recipe method called for pre-toasting the panko crumbs and coconut in coconut oil first, and that made all the difference in the world; I couldn't even tell these were not fried!
