A firkin (10.8-gallon cask) of Heavy Seas Brewing (Baltimore, Maryland) Dubbel Cannon sits on a wooden platform.

 

A triple-hopped IPA fermented with a Belgian Dubbel yeast, and dry-hopped within the firkin with 'wet' West Coast Amarillo whole hops. 7.25% abv.

 

[The platforms are also used at the brewery by cellarmen filling the casks, saving their backs from stooping. 'Wet' refers to uncured hops, used, or frozen, immediately after harvest.]

A cask dry-hopped with locally grown hops is tapped at Galaxy Hut, Arlington, Virginia.

 

The cask:

Loose Cannon Hop3 Ale

7.3% abv (alcohol by volume)

IPA (India Pale Ale: highly hopped strong pale ale)

One of only 2 firkins (10.8 US gallon cask) exported to Virginia.

"Beans, Beans, The Magical Fruit" - white bean cassoulet, guanciale tidbits, frisee with truffle vinaigrette, and jalapeño quail egg

A collaborative effort between the Brewers Association of Maryland; Grow & Fortify; Milkhouse Brewery at Stillpoint Farm; and the University of Maryland Extension

Stillpoint Farm —of Mt. Airy, Maryland— has 2 acres devoted to hops: Cascade, Nugget, and Chinook.

 

Grown organically , 'fertilized' from grazing sheep and sprayed with copper sulfate if necessary to control downey mildew. Farmer Tom Barse predicts a late July/early August harvest.
