A little creation I whipped up last Saturday. I smoked this over Applewood on the Weber grill for about an hour and a half or so and then I grilled the andouille, chopped it and added it to the beans during the last 10 minutes of the cook.

 

This turned out delicious and disappeared fast at the meal

This tasty combination of asparagus and walnuts makes a very elegant side dish.

Zucchini & Tomato Saute"

I had zucchini left over from "I Made This....1" and so I decided to whip up my favorite summer side dish. This is easy and tasty.

 

Use whatever quantities you like, depending on the number of people you want to serve.

 

Slice zucchini and saute in olive oil for about 7 minutes. Dice tomato and add to the zucchini, along with some garlic, pepper, salt and fresh or dried basil. Cook another 3 minutes and remove from heat. Serve with shredded parmesan cheese on top.

 

You could also add other herbs if you like. Thyme would be nice, and even oregano.

It looks like it is soft and fluffy in the photo...it isn't. It's frozen solid. Had to let it sit on the counter for over 5 minutes just to be able to cut some squares and even then...they shattered a bit .... but, who cares? It's pretty tasty.

 

I found the recipe in an old cookbook whilst looking for some other salad.

 

Couldn't resist when it said 'whipping cream and cream cheese'....

The almond flavour from the maraschino cherries shows up every so often... which I love... and, I put some finely chopped bits of candied ginger in it as well.. mmmm.... oh, and.... I don't usually see kumquats at my grocery store. As if .!! hahahah.... so I chopped up some dried apricots instead. All good. Along with dates and pineapple and I also crumbled some flaked, toasted almonds in there as well...

 

they serve it on a bed of salad greens...hahahhah....we ate it for a dessert treat.

 

There is some "mayo" in it... but, I only had Miracle Whip, which is not the same flavour. I was hesitant to put in 3 TBSP...so only gave it one TBSP ...and, next time...if I make it again..I won't put in any at all...it is a great dessert. And, who wants mayo in dessert?

 

There are lots of different recipes online ... so many variations of 'frozen fruit salad'. Take your pick and give one a try. It's fun.

Friday’s dinner Soufflé is enough for the weekend too.

 

Here is my Aide, Heather’s recipe:

4 Egg whites beaten,

4 Egg yolks beaten and poured gently over the beaten egg whites,

Mrs. Dash Salt-Free Chipotle Spice,

Serrano medium hot peppers 🌶 from the garden, diced & sauteed,

Red Onion diced and sauteed,

Red Tomatoes from the garden, sliced,

Bake in 350 Degree Oven for approximately thirty minutes.

Afterward, garnish with basil leaves and flowers. This adds color and flavor. I grow spicy Thai Basil, sweet Red Basil, sweet Purple Basil, and sweet African Blue Basil.

Feel free to add other spices such as oregano and rosemary to taste.

The quality of light is getting really crappy here in the North by this time of the year. When I was taking this image, there was only about thirty minutes decent light. It was a gloomy, gloomy day. It will be more or less like this until the end of March.

My new summer love food to prepare...Mango Salsa...amazing.
