Inspired by the E.F Benson books this recipe came about because of the old adage 'one good turn deserves another'. Andy moved some livestock to help a neighbour, who just happens to be a fishmonger/fisherman. These fresh natural ingredients need very little added but I thought back to a recipe I had used many years ago and which was very apt for West Coast Normandie. Our finest ingredient here, apart from seafood and apples, is raw organic dairy and we also grow some of France's best carrots. Add a hint of cheese and there you have it. Crab Cakes
Ingredients:
1 pound crab meat
3/4 cup panko bread crumbs
1/4 cup milk
1 egg
3 tablespoons mayonnaise
1 tablespoon Worcestershire sauce
1 teaspoon mustard
2 green onions (sliced)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon oil
1 tablespoon butter
Directions:
1. Mix the crab, bread crumbs, milk, egg, mayonnaise, Worcestershire sauce, mustard, green onions, salt and pepper in a bowl.
2. Grab a handful of the mixture and form a patty.
3. Heat the oil and melt the butter in a pan.
4. Fry the patty in the oil and butter until golden brown on both sides, about 2-4 minutes per side

3 pounds large shrimp, peeled and deveined
1 cup butter. melted
1/3 cup olive oil
1/4 cup orange juice
6-8 cloves garlic, minced
2 tablespoons dry white wine
2 tablespoons fresh flat leaf parsley, chopped
1 tablespoon fresh basil, finely chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
skewers
Preparation:
Place shrimp in a large bowl. Combine remaining ingredients. Divide sauce in half. Pour 1/2 of the sauce onto shrimp. Toss to coat, cover, and place in refrigerator for 30-60 minutes. Preheat grill for medium heat. Heat reserved half of the sauce in a pan on low until warm. Put shrimp onto skewers. Try to fit about 5 on each skewer. Place onto grill and cook for 2-3 minutes per side. When shrimp no longer looks translucent, remove from heat, pour heats sauce over top, and serve.

I LOVE mackerel, so I was so eager to try this recipe! I was unable to find Korean radishes, so I used potatoes. It's not very beautiful, but it was so flavorful! The potatoes soaked up the flavors of the sauce and the fish, and the fish itself was tender, juicy, and falling off the bones! I used anaheim peppers instead of Korean peppers and only added about a tablespoon of hot pepper flakes. Next time I'll try to find Korean radish to make this.

Page from a Vintage Cookbook with recipe submitted on Franklin County Sheriff's official letterhead. Signed by the Sheriff, at the bottom he proudly noted, "The above is MY own recipe!" The recipe was found in the "Political Potluck" Cookbook from 1955 in the collection of Supporter Robin Rickel Vroegop. Robin prepared the recipe as described as the Supporter's entry in the First Annual Seafood Cooking Contest at the Florida Seafood Festival: Sheriff Herbert O. Marshall's Mullet Chowder, using fresh Island mullet. The cookbook was a compilation of recipes from political leaders around the State and was a fundraising project of the Tallahassee Women's Club.
