Hair: Unruly, Doux
3 cups all-purpose flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
2/3 cup vegetable oil
2 large eggs
1 cup granulated sugar
1 cup apple sauce
1 teaspoon orange extract
1 teaspoon orange zest
½ cup raisins: soaked and drained. Add 1 Tbsp of any apple alcohol to raisins.
For the glaze, blend together:
1 ½ cups sifted confectioner’s sugar
½ cup orange juice
Preheat oven to 350 F.
Grease 3-quart bundt pan and sprinkle with flour.
In a medium bowl, prepare flour, baking powder and baking soda.
In a large bowl, beat together oil, eggs and sugar until combined.
Stir in applesauce. Add flour mixture, orange extract, orange zest and raisins. Stir until just combined.
Bake for 40 – 45 minutes, or until a tester comes out clean.
With a toothpick, prick the top of the cake before unmolding and spoon ¾ of the sauce over the cake.
Invert the cake on a serving plate and spoon the remaining sauce over the cake.

CURIOSIDADES
1.- En Oriente el sauce llorón posee un significado de muerte pero también de permanencia y continuidad, y muchos personajes míticos orientales han sido enterrados a la sombra de sauces llorones. Mientras que en la mitología griega el sauce llorón era símbolo de magia y misterio, así como los celtas consideraban el sauce llorón como uno de sus 21 árboles sagrados.
Era el árbol del encantamiento y de la melancolía. Incluso se llega a mencionar en la mismísima Biblia.
2.- Leyendas y mitos
Este árbol ha sido la fuente de inspiración para la creación de múltiples leyendas y mitos acerca de su origen o la “magia” que puede existir en ellos. Estas mismas hablan de maravillosas historias que relatan acerca de la creación del árbol y también de como este se ha visto en fascinantes historias de como ayuda a otros seres incluso sanándolos.
3.- ¿Remedio curativo?
Desde épocas muy antiguas el sauce llorón ha sido muy utilizado por chamanes y brujos por sus propiedades analgésicas, antipiréticas y antineurálgicas, el cual es muy aconsejado para tratar contra la fiebre, dolores reumáticos y musculares, entre otros usos.
Las propiedades medicinales del sauce se mencionan en muchos textos antiguos desde Asía, Egipto, África y América.
El sauce llorón, autor de múltiples leyendas así como usado en remedios naturales.
4.- El árbol de la sabiduría
El sauce llorón no solo fue uno de los remedios más utilizados para calmar el dolor así como otros males, sino también como símbolo de la sabiduría.
Los chamanes, curanderos y brujos solían sentarse a meditar bajo sus ramas, pues se decía que el sauce tenía la capacidad de conectar este mundo con el mundo de los espíritus.
Por eso aquellos que necesitaban respuestas se sentaban bajo sus hojas a escuchar, y el susurro del viento al pasar entre las hojas del sauce se convertía en palabras que les -daban guía o consejo.
5.- Una obra de arte
Su elegancia y belleza ha inspirado a múltiples escritores y artistas, Leonardo da Vici (El sauce y la calabaza), W. Shakespeare (Othello, acto IV, escena III), Gustavo Adolfo Becquer (Rima IX), F. G. Lorca (Mariana Pineda),…entre otros más.

Roasted Chicken with Cabbage and Prunes
Coq au chou et aux pruneaux
(6 servings)
1/2 cup plus 4 tablespoons extra virgin olive oil, divided
16 pearl onions, peeled
5 carrots, peeled and cut into 2-inch pieces
4 celery stalks, cut into 2-inch pieces
6 cloves of garlic, separated and peeled
salt, to taste
3/4 teaspoon ground black pepper, divided
1 (4-5 lb) chicken, rinsed and patted dry
1 tablespoon fresh parsley, chopped
2 teaspoons dried rosemary, crushed
1 teaspoon dried thyme
1 tablespoon lemon zest
1 1/3 cup pitted prunes
1 very small green cabbage, cored and quartered
1/2 cup wine
1 cup chicken stock
Preheat oven to 450F. Heat 2 tablespoons of the olive oil in a large, heavy skillet over medium-high heat. Add the onions, carrots, celery, garlic cloves, and ¼ teaspoon pepper, and cook, stirring occasionally, for 10 minutes. When the vegetables are caramelized, spoon them along the sides of a large roasting pan and set it aside – or place in a romertopf.
Reduce the burner heat slightly and allow the pan to cool a bit.
Add 2 tablespoons oil to pan and return the pan to medium-high heat. Season the prepared chicken, and brown it in the hot oil (the chicken will not brown when baked.) Transfer the chicken to the center of the roasting pan where you have added the vegetables, pour the pan juices on top of it and rub it with the parsley, rosemary, thyme, and lemon zest.
Add the wine to the skillet and deglaze, scraping up any browned bits from the pan. After the wine has simmered for 30 seconds, add the chicken stock and heat through. Pour the wine sauce over the chicken and place the prunes and cabbage on the caramelized vegetables. Cover the roasting pan with a lid or tightly sealed foil and roast in the preheated oven for 60-70 minutes.
Serve with steamed potatoes.

Flor de sauce conocido también como sauce capruno.
Pertenece a la familia Salicaceae (Salix), y sus ramas constituyen una de las fibras naturales vegetales que por su flexibilidad se ha utilizado desde antaño para la confección de cestas.
Thawed fish filet marinated in soy sauce, Maggi, the juice of 1/2 lime, a dash of garlic powder and a bit of sesame oil, pan fried in butter and a few drops of macadamia oil and sesame oil.
Accompanied by steamed asparagus, drizzled with a sauce of butter, pepper vinegar, ground cumin and a dash of mild curry powder.
