This dough is 225g ap flour, 150g room temp water, 1 tsp fine sea salt, 1/2 tsp active dry yeast. 36 hour rise at room temp - about 67°F.

Preheat oven to broil (my broiler is on the bottom) with pizza stone and cast iron pan above. Baked for about 10-12 minutes.
