Lacking the energy for "real" canning, I tried out two kinds of quick refrigerator pickles today. L: classic quick pickles courtesy of M. Stewart recipe, R: East Asian spicy pickles courtesy of Mark Bittman's book "How to Cook Everything Vegetarian."

Not long after the bright, cheerful bulbs of radishes turn woody, and the greens grow tall and develop flowers, one more gift appears on this quick growing member of the Mustard family. Radish pods are fresh, crunchy, and a succulent delicacy that lends itself to many different ways of preparation. Pickled and fermented are a favourite of mine (who would have guessed! 😋) but they are also excellent quick sautéed, or eaten fresh in salads, adding a peppery crunch. Sprouted Chickpeas quick pickled with homemade tangy preserved Lemons, green garlic from the garden, carrots, sweet red and pepperoncini peppers, toasted fennel and cumin seeds, Ras El Hanout spice blend brought home from Morocco. I love pickled or fermented anything, and will incorporate some of either or both in all my meals. Sprouted chickpeas make the nutritious goodness inside more bioavailable for us, but more than that, it also just makes for amazing taste and texture in these pickles. Will be piling these babies on all my summer salads! 😍 These sprouted chickpeas also took no time at all to soak, just a gentle simmer for an hour, taking loads of time off.
