for the McGill Daily

It's not too easy to see in this pic, but after I sealed the bag I snipped off one corner. This allows for a straw or tube to be inserted into the air space above the contents. Don't go nuts and cut a big chunk out of your bag - the newly opened corner should be just big enough to push a straw or tube through. Too big and it'll be hard to get a good seal around it. I seal around the tube with my fingers and CAREFULLY suck out as much air as possible without pulling up any of the contents. Go slow - you don't want to breathe it in, or end up with a mouthful of whatever you're storing. You're not looking for a perfect vacuum - what you want to do is minimize the amount of air in the bag/food so that the absorbers have as little oxygen to remove as possible. I still have the wooden pole resting on the top of the bucket at this point and the iron plugged in so when I'm ready to pull out the straw, I can quickly run it across the corner to permanently seal it. I use lung power for this step as some finely powdered material, like flour, is explosively combustible. Under certain circumstances, (eg. if it came into contact with the brushes in an electric pump), it might have dangerous consequences. Probably just me being overly cautious, but this method works fine.

This is all the prep for everything that goes on the cake. I will say that when you are able to do all of this stuff in advance, it makes completing a finished cake a lot easier.
