I’d never heard of jollof rice, but when @kcrwevan was talking about the Nigerian staple dish on her show, it sounded so intriguing. So I whizzed up some farmers market tomatoes and sweet and hot peppers and cooked me some jollof rice. It’s a winner! With some sautéed green beans with more peppers and tomato (food tone-on-tone). The flavor was as bright as the color.
