The Story of Biryani: How This Exotic Dish Came, Saw and Conquered India!

Sanchari Pal July 6, 2016

Biryani is an evergreen classic that really needs no introduction. India offers so much on its culinary platter but the one dish Indians unanimously love indulging in is the mouth-watering biryani. With local and hyperlocal variations having evolved into distinctive styles of biryanis, one is spoilt for options when it comes to experiencing this melting pot of flavours.

So if you are a die-hard fan of this delicious dish, take things up a notch and tease your taste buds a little more with the story of what makes biryani so extraordinary.

Though it may appear to be a dish indigenous to India, in reality the dish originated quite far away. Biryani is derived from the Persian word Birian, which means ‘fried before cooking’ and Birinj, the Persian word for rice. While there are multiple theories about how biryani made its way to India, it is generally accepted that it originated in West Asia.

One legend has it that the Turk-Mongol conqueror, Timur, brought the precursor to the biryani with him when he arrived at the frontiers of India in 1398. Believed to be the war campaign diet of Timur’s army, an earthen pot full of rice, spices and whatever meats were available would be buried in a hot pit, before being eventually dug up and served to the warriors.

Another legend has it that the dish was brought to the southern Malabar coast of India by Arab traders who were frequent visitors there. There are records of a rice dish known as Oon Soru in Tamil literature as early as the year 2 A.D. Oon Soru was said to be made of rice, ghee, meat, turmeric, coriander, pepper, and bay leaf, and was used to feed military warriors.

It is said that Mumtaz once visited the army barracks and found the Mughal soldiers looking weak and undernourished. She asked the chef to prepare a special dish that combined meat and rice to provide balanced nutrition to the soldiers – and the result was biryani of course! At the time, rice was fried in ghee, without washing, to give it a nutty flavour and prevent it from clumping. Meat, aromatic spices, and saffron were added to it before cooking the mix over a wood fire.

The Nizams of Hyderabad and Nawabs of Lucknow were also famous for their appreciation of the subtle nuances of biryani. Their chefs were renowned the world over for their signature dishes. These rulers too were responsible for popularising their versions of the biryani – and mouth watering accompaniments like mirchi ka salan, dhanshak and baghare baingan – in different parts of the country.

The perfect biryani calls for meticulously measured ingredients and a practised technique. Traditionally , the dum pukht method (slow breathing oven in Persian) was used to make biryani. In this method, the ingredients are loaded in a pot and slow cooked over charcoal, sometimes from the top also, to allow the dum or steam to works its magic. The pot, sealed around the edges with dough, allows the steaming meat to tenderise in its own juices while flavouring the rice.

Other than the technique, spices also play a critical role in dishing out a good biryani – some recipes call for a very limited use of spices while others use more than 15 different spices. Meat or chicken is often the main ingredient, though in some coastal varieties, fish, prawns, and crabs are also used. Use of rose water, sweet edible ittar and kewra water in biryani is also common, a practice prevalent since the medieval era.

In general, there are two types of Biryani – the Kutchi (raw) biryani and the Pukki (cooked) biryani.

The evolution of biryani spans many centuries, many cultures, many ingredients and many cooking styles. From an army dish to a dish fit for royalty, the biryani today is a pan-India culinary favourite. Its many varieties reflect the local tastes, traditions and gastronomic histories of their regions of evolution.

My Tribute To Raja and Maharajah Cheek Piercers of Goddess Marriammen.

Raja and Maharajah are both dead they were veterans seniors and adept in the art of piercing the devotees cheeks with 18 feet rods that are specially made in Tamil Nadu and bought to Mumbai I am told.

They were experts in inserting hooks in the back of the devotees with these hooks well aligned the devotees became Horseman of Goddess Marriammen.

Pulling cars buses tempos jeeps rickshah huge coconut baskets all attached to a rope and to the hooks on their backs.

They hung from cranes with huge hooks in the back.

Raja mostly was the main piercer at Macchimar Colony and was very close to Ganesh Pujari and Laxmi the Pujaris sister.

Raja refused to believe I was Muslim.. He thought I was a covert Hindu.. And I let it remain that way till his death..

He was also the main piercer at the huge Marriammen Mandir at Sion Koliwada.

He would call me and Sion Koliwada was a great experience.

After his death the invitations and calls stopped.

Maharajah was an eminent piercer from Nehru Nagar Juhu and also the temple drum player he was best in both these fields.

He once stopped me from entering the Mandir he did not know me but apologizedd when Bhiman Devendra my best friend told him that I was a Muslim and devotee of Goddess Marriammen he too became a great friend.

I miss both these great masters of body piercing.

I do not boast when I say I don't shoot what others shoot... In all humility I promote Hinduism I promote Hindu Muslim amity.

Bhaichara Brotherhood.

My photography has a purpose.. It us not mundane or meaningless I am the bugle blowing the music of Hope as taught to me as a photographer by my Gurus Mr KG Maheshwari Prof BW Jatkar and living legend Shreekant Malushte ji.

All my 3 Gurus were Hindus. And I am proud to say they instilled this love of faith culture in my photography genes.

I have hardly ever skipped a Marriammen shoot and last evening I met a Kinnar Pujari from Yellamma Temple Mankhurd he liked me a lot and promised to take me to shoot the main Yellamma temple in the South during the Feast.

So these are thoughts at daybreak.. It's still dark outside my legs are in very bad shape so I am contemplating whether to go play tennis or just sleep.

Last night I could not upload my pictures to Flickr as my Internet was down.

So my three mainstreans of photography are Hinduism Sufism and my own Faith Shiasm that I shoot only during Moharam out of Mumbai.

I indulge in street photography and stretches slam poetry.

I shoot beggars horses of Bandra.

I shoot Garbage as fine Art.. And I feel happy about the Plastic ban but feel sorry how many poor people will be conned money extorted when the plastic ban penalty comes into implementation.

Not just the Marshals even those impersonating as Cops Marshal Municipal officers will make a bomb.

And the Government will look the other way.. As it always does there will be more corruption extortion bribes and we will be moving one step ahead of Modijis Promise of Acche Din Progress Development.

I mean I respect our PM he is an elected person but what hits me in the guts his sad choice of a CM for UP who is a Muslim hater and baiter.

I mean in all of UP there was no administrator with a vision of Pan India of Peace than Yogiji.

I as a Indian as a Muslim want the Ram Mandir to be built as soon as possible but we diverted that holistic mission caught up in the syndrome if misplaced cow lynchings and love Jihad.

I am happy that my brother a Shia Muslim married a beautiful Hindu lady her grandfather a luminary of Indian judiciary.

They have a son nurtured on both Ganga Jamuna Tehzeeb.. And nobody ever called it Love Jihad.

So a Hindu Brahminn lady can give birth to a Muslim child of peace or vice versa should not take you by surprise.

What God put together let no man out asunder.

I was born in Lucknow and I am happy first my grandmother in Lucknow did not take the train to Pakistan.

I am very happy that my handsome good looking father left Lucknow as a 16 year old lured by Indian cinema perhaps but finally worked with a British couturier as a tailor and later Master cutter.

Last I love my state Maharashtra and my challenge to other states of India once in your lifetime build a mini Mumbai where Peace Hope Humanity are bridesmaids of God.

I have lived in Mumbai for 65 years from the slums of Kurla to Wodehouse Road to Breach Candy to Stand Cinema Colaba and finally hope to die one time in Bandra.

I die almost everyday when I read the news of child rape Hindu Muslim divide and lying Ministers who would sell their own Mother to get a piece of the Indian Pie.

Happy Morning from Bandra.

Some of the ones I managed to find :) This, Dutch, cheese addict is quite happy :)

My compliments to the Editorial Team of Ajeet Arenja and Rtn.Mandar Tambe for the fantabulous job done by them which made our 'Inspiration' a talk of Rotary in District 3141. I am thankful to all the 11 sponsors of Inspiration, due to whose contribution only it could be possible to provide hard copies to each one of you.

All our projects received fantastic Publicity this year by print media, Inspiration, DG's GML Samvad & NMMT Buses (courtesy new member Abhishek Sharma) and off course our fully functional website www.rotarybombaynorth.com.

Rotary begins from home. Yes, friends I was fortunate to have a family of socially conscious members. My better half Pragati remained glued to me all through the year with almost 100% attendance. My sons Ankit & Anuj & daughters in law Pallavi & Shikha took care of our business and children in our absence due to Rotary engagements. A big thank you to all my dear children. A whole lot of other people worked as a great support in performing my Rotary duties this year. I would like to thank Mr.Adepu Shivramulu (popularly known as Shivram), Sarojini – our WWC incharge, Mr.Mohammed (Our Accountant), Mr.Niraj Anand our Auditors, Akansha in PP.Ajeet’s office and Anlet, Jayashree & Harsh in my Office. They were all a great help to me.

I would end my report with the famous Hindi Song which is absolutely apt and expresses my feelings;

“Ehsaan mere dil pe tumhara hai dosto

Ehsaan mere dil pe tumhara hai dosto

Yeh dil tumhare pyaar ka maara hai dosto

Yaaro ne mere vaaste kya kuchh nahin kiya

Sau baar shukriya are sau baar shukriya.”

I would end my report with the famous Hindi Song which is absolutely apt and expresses my feelings;

“Ehsaan mere dil pe tumhara hai dosto

Ehsaan mere dil pe tumhara hai dosto

Yeh dil tumhare pyaar ka maara hai dosto

Yaaro ne mere vaaste kya kuchh nahin kiya

Sau baar shukriya are sau baar shukriya.”

On 1st July, 2017 I started my journey as the President of this esteemed Club of Rotary District 3141. It was an amazing journey to me in the Rotary World. I made many friends, brothers, sisters & guide from here which made my job of President very easy.

Ashok Leyland's U-Trucks take off with innovative service packages

* 10 models roll out as sales commence

Chennai, 2nd November, 2010: The Hinduja Group flagship, Ashok Leyland, today announced sale of vehicles on the new U-Truck platform with the rolling out of the first set of 10 models of tippers and tractor trailers in the 16 - 49-tonne segment. Starting with Chennai, the vehicles will be available for sale pan-India in a phased manner over the next 6 weeks. Further, another 15 models are set to enter the market in the next 12 months.

The U-Truck platform is backed by innovative service care packages, a number of which are industry 'firsts'.

Synchronized service intervals for tractors at every 40,000 kms, being offered for the first time in the commercial vehicle industry ,enables the U-Truck to stay around 20% more time on the roads, the ideal way to derive the best from the vehicles.Setting a benchmark is the 4-year driveline warranty being offered on tractors whereas the warranty on tippers is for 2years/5,000 hours/200,000 kms.Yet another unique offering is ALLCOVER Insurance, which if opted for, covers customers for cashless repair against accidents under which minor restorations are carried out in 3 days and major ones in 7 days. The Company's increased focus on customer centricity is reflected in the huge success of the Tatkaal scheme that promises attention to distress calls within 4 hours and restoration within 48,with assured response time for breakdowns on the Golden Quadrilateral. The Tatkaal promise is now also being extended to cover the North-South and East-West corridors.

"The U-Truck platform comes with the definitive promise of a holistically superior product, superior driving and superior service experience,"said Mr.R.Seshasayee,Managing Director,Ashok Leyland. "More significantly, this future-ready platform has the unique ability to continuously morph itself to meet ever-evolving consumer needs. After all ,the 'U' in the 'U-Truck' stands for the customer and the platform is a sublimation of our insightful understanding of customer's needs and their pain points.Hence, we have gone to great lengths to have a product with excellent fuel efficiency, superior driveability and higher reliability all leading to better operating economics" he explained.

"The commercial vehicle driver community has for long been neglected one and we are taking a number of significant steps to play a meaningful role in their lives not only through driver training but by introducing features that enhance driver comfort and safety," said Mr. Vinod K. Dasari, Whole-time Director and chief Operating Officer, Ashook Leyland. Some of the features are super suspended long-haul sleeper cabs in tractors and day cabs in tippers having sleeper provision, better NVH ( Noise, Vibration, Harshness ) characteristics, optional air-conditioning and music systems. Ride quality is further enhanced from a choice of parabolic front suspensions with longer span and up-rated multi-leaf front suspensions. Safety is taken care of through high performance braking systems with larger sized brakes, ABS and exhaust brakes in select models.

As part of this comprehensive drive care programme, every driver of a U-Truck will be given a 'Driver kit' worth Rs. 15,000 to meet some of his requirements when on the road. The kit will include a mobile phone with a lifetime incoming connection, a blanket, a windcheater, two T-shirts, a torch and a document holder. Further, every U-Truck driver is covered by an insurance of Rs. 1 lakh against accidents and injuries.

The fully-built U-Trucks are available with optional features like Telematics for real time track and trace and driver managment.

"The modularity gives us the agility to respond to customer needs quickly and control our inventories while on the manufacturing side we will see a transition from a stock-and-sell to a make-to-order system. Everything considered, we are on the threshold of some very exciting times," concluded Mr. Seshasayee.
