*** Cake base
- Crush and mix 100 gr Oreo biscuits (without the filling) in a food processor
- Mix the crumbs with 50 gr melted butter
- Press the crumbs into the bottom of the springform tin ( i used a 18 cm one)
- Let cool in fridge
*** Oreo cream cheese filling :
- Beat 500 gr cream cheese (softened at room temperature) with 120 gr granulated sugar
- Add 2 eggs into the cream cheese mixture and whisk well
- Add 1 tbsp vanilla extract
- Stir in some crushed Oreo biscuits (abour 25 gr)
- Pour the mixture into the cake tin and bake at 180°C for 1 hour
- Take out, let cool and keep in fridge before decoration...
These dark chocolate, pecan and cream cheese truffles are perfect as after-school snacks or fancy looking mini desserts for guests. So incredibly delicious!

I will end my 52 Week Photo project with a montage of Holiday desserts made by my best friend with whom our celebrates Christmas day. This is a small selecion of the various desserts she made which were outstanding.

Ingredients
Crust
1 1/2 cups Oreo cookie crumbs (about 23 Oreos, finely chopped)
2 tablespoons butter, melted, plus more for the pan
Filling
3 (8-ounce) packages cream cheese, at room temperature
1 cup sugar
5 large eggs, at room temperature
2 teaspoons vanilla extract
1/4 teaspoon salt
1/4 cup all-purpose flour
1 (8-ounce) container sour cream, at room temperature
14 Oreo cookies
Crust
Mix melted butter with Oreo crumbs and press in spring pan cover the bottom and 1 1/2" up the sides with crumbs, set aside.
Filling
All Ingredients need to be at room temperature before beginning. Beat cream cheese until light and fluffy. Keep mixer on a low setting during the mixing and beating process. Add sugar gradually and continue beating cream cheese until mixed through. Add eggs one at a time and continue to beat until blended. Measure the vanilla, salt and flour, pour into the cream cheese and egg mixture and beat until smooth. Add the sour cream and beat well. Turn off the mixer and stir in the coarsely chopped Oreo cookies with a spoon.
Pour cream cheese into the spring form pan and place the nine coarsely chopped Oreo Cookies on top of the cream mixture. Place pan on the top rack and in the middle of a preheated oven at 160 degrees celsius and bake for one hour. The cheesecake will be done when it jiggles slightly in the middle when the pan is gently shaken. If the cheesecake is very jiggle, then cook for an additional 15 minutes. When time is up prop the oven door open and let the cheese cake stay in the oven for one hour. Remove from oven and let cool enough to place in the refrigerator for 24 hours. It is worth the anticipation. A cheese cake should season. The flavor ripens and becomes enriched.

What You Need
24 OREO Cookies, crushed (about 2 cups)
2 Tbsp. butter or margarine, melted
1 pkg. (6 squares) BAKER'S White Chocolate, divided
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened, divided
1 cup sugar, divided
1/2 tsp. vanilla
3 eggs
3 squares BAKER'S Semi-Sweet Chocolate, divided
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
Make It
HEAT oven to 325ºF.
MIX cookie crumbs and butter; press onto bottom of 9-inch springform pan. Melt 5 white chocolate squares as directed on package; cool slightly.
BEAT 3 pkg. cream cheese, 3/4 cup sugar and vanilla with mixer until well blended. Add melted white chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
BAKE 50 to 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool completely. Meanwhile, melt 2 semi-sweet chocolate squares; cool.
BEAT remaining cream cheese and sugar in large bowl until well blended. Add melted semi-sweet chocolate; mix well. Whisk in COOL WHIP; spread over cheesecake. Refrigerate 4 hours. Garnish with chocolate curls from remaining white and semi-sweet chocolates.

So yesterday was Father's Day for me here in Australia. So my sister & I took over the kitchen and it meant I didn't have to feel guilty when I angrily told mum to stop snooping about in the kitchen, trying seeing what we were up to.
I had no idea how to take a picture of this dessert in which I could show you the base and still make it look somewhat appetising since the damn container is opaque. As I was pondering how to go about achieving this I belatedly realised that my fork was actually digging through the dessert already. Ah, another part of my brain rebelling against me. Yay.
Note: this dessert is not one you want to make if you’ve got all these angry feels pent up inside of you. If you pack the base too hard together, you might as well eat this dessert with a hammer and fork to break the base. That being said, this is one of those desserts that you could serve to people you sincerely disliked and they wouldn’t realise you added poison into it because it’s just that scrummy. They'd probably just say, 'oh god this tastes so good what did you put in it?' The credit for making this dessert doesn’t actually go to me however, it goes to my sister; so I'm not sure if she altered the recipe or not! Either way, I doubt you can really go wrong with this! (Unless you're allergic to nuts.)

Brought these to St Anne's Children's Day party this morning.
This is my 1st take on what I've learnt from the workshop earlier. I put in only 1 biscuit instead of the whole sandwich and put in a little more cheesecake into it. Still too sweet.
I used finely crushed oreo biscuits as base (including the oreo biscuit cream). As for the cream cheese filling it was just a combination of cream cheese, condensed milk, whipped cream and some crushed oreo biscuits

I've officially reached sugar overload. I baked some treats for a party at another friend's house. Oreo Cheesecake bites and two different caramel filled tarts. Yum!
