After surviving two rounds of layoffs (still employed), you get to thinking...it's time.
Time for a career change or something else...it's the something else that scares me (since I tend to take chances).
Sorry for being behind with so many of you, but I took on a project with a deadline of today. And it wasn't even job related.
INGREDIENTS:
1 container (8 oz) reduced-fat sour cream
1 container (8 oz) plain fat-free yogurt
1 can (10 3/4 oz) condensed 98%-fat-free cream of chicken soup with 30% less sodium
1 can (4 oz) chopped green chiles, undrained
12 white corn or flour tortillas (6 or 7 inch)
1 cup shredded reduced-fat Cheddar cheese (4 oz)
1 1/2 cups chopped cooked chicken
4 medium green onions, sliced (1/4 cup)
Shredded lettuce, if desired
Chopped tomatoes, if desired
DIRECTIONS:
1. Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In medium bowl, mix sour cream, yogurt, soup and chiles.
2. Spoon about 3 tablespoons sour cream mixture down center of each tortilla. Reserve 1/4 cup of the cheese; sprinkle tortillas with remaining cheese, chicken and onions. Roll up; place in baking dish. Spoon remaining sour cream mixture over tortillas. Cover with foil.
3. Bake 25 to 30 minutes or until hot and bubbly. Sprinkle with reserved 1/4 cup cheese. Bake uncovered 5 minutes longer or until cheese is melted. Garnish with shredded lettuce and chopped tomatoes.
As 2018 came to a close I want to express my sincerest gratitude for all that’s transpired throughout the year. Thank you to my family and friends who continuously come to my art shows and exhibits, who continue to support my journey and who have been there since day one.
My wish for you in 2019 as 2018 sets is that you find your truest joys and passions in 2019. That you commit to making them happen and live your happiest and truest life. My wish for each and everyone of you is for you to explore everything that there is to explore, to be curious and hungry for knowledge. I wish that you ardently desire to pursue what you’ve always wanted.
The world needs these shifts in perspective. The world needs you to pursue your deepest and greatest loves because you never know whose life you will impact the most. My wish for you is that in 2019, you set out on a journey of adventure and truly savor and enjoy each and every second of your life.

The Coney Island Polar Bear Club is the oldest winter bathing organization in the United States, whose members regularly take polar bear plunges in the winters. The club was founded by famed health advocate Bernarr McFadden in 1903.
The club began using the event to raise funds for Special Olympics starting in 2005, and Camp Sunshine in 2007. In 2018, the club decided to support local groups and charities and began partnering with the Alliance for Coney Island to raise funds for local nonprofit organizations.
Members swim in the Atlantic Ocean at Coney Island, New York, United States every Sunday from November through April. Every New Year's Day, the Club is joined by participants from around the country, who partake in an annual swim. The 2005 event had 300 participants and 6000 onlookers. The Chief Polar Bear blows a conch shell to gather the swimmers before they run into the water.
The club was mentioned in popular culture. It is mentioned on the season three episode of Seinfeld, The Pez Dispenser In the episode Kramer informs Jerry that he has joined the club, claiming it to be 'invigorating'. It was also publicized on The Daily Show with Jon Stewart, in a taped segment by Dan Bakkedahl about the effects of global warming on the club in faux-nature documentary style.

119th Annual Coney Island Polar Bear Club New Year's Day Plunge!
Taking place on January 1, 2022, unlike past years the plunge will be an open swim, the beach will open starting at 11am and allow you to swim at any point until 2pm on the world famous Coney Island Beach. All funds raised help support our local non-profits and community by supporting a variety of initiatives including free public programming, environmental and educational programming, quality of life issues and more. With your help, we can help ensure that Coney Island continues to thrive!
No fee to participate but we encourage donations & fundraising for your plunge!
Registration begins at 10AM, we recommend that all plungers arrive no later than 12PM
Registration tables are located at Stillwell Avenue & the Boardwalk
All participants must sign a waiver on-site the day of the Plunge
Plungers under 18 years of age must have their parent or guardian present to sign the waiver the day of the Plunge.
Plunge as an individual, create a team, join a team or you can even help virtually!
Info about the Plunge:
There is no fee for plunging but donations are encouraged and you must register in order to participate. There is no donation minimum required to register online, You can register and pledge here, or on-site the morning of the plunge after 10:00am. All participants should arrive by 12PM to go through registration. If you are plunging as a group/team, all members must arrive together in order to ensure you all have the same plunge time. ALL participants whether pre-registered or registering the day of must go to the registration area to claim their wristbands with designated times to participate.
Bring warm clothes, surf boots or old sneakers, towels and definitely bring your camera! The NYC Parks Department provides changing facilities on the Boardwalk at Stillwell Avenue.
Plunge for a Cause!
Coney Island is a neighborhood of 50,000 residents with a poverty rate close to 30% and is situated right on the Atlantic Ocean. The Coney Island Polar Bear Club New Year’s Day Plunge helps raise funds to support the local organizations including the New York Aquarium, Alliance for Coney Island, Coney Island USA, Coney Island History Project and other local arts and history organizations helping to make a difference in the Coney Island community.
Nine years after the devastation of Superstorm Sandy and throughout the 2019 Pandemic, the Coney Island neighborhood continues to recover. The Alliance for Coney Island is focused on ensuring residents have an improved quality of life through their supplemental services and workforce development programs.
With your help, the funds raised will support workforce development programs for local residents to connect them to job opportunities and neighborhood services, as well as help increase their advocacy for clean water and educate the public about waste.

INGREDIENTS:
4 oz fresh mozzarella cheese
1/3 cup mayonnaise
1 small clove garlic, finely chopped
1/4 teaspoon salt
1/8 teaspoon McCormick® Ground Black Pepper
1 teaspoon lemon juice
3 tablespoons finely chopped fresh basil leaves
2 cans Pillsbury® Place 'n Bake® refrigerated crescent rounds
3 tablespoons Crisco® 100% Extra Virgin Olive Oil
1/2 teaspoon McCormick® Italian Seasoning
1 package (9 oz) refrigerated cooked Italian-style chicken breast strips, finely chopped
2 medium plum (Roma) tomatoes, cut into 16 slices
DIRECTIONS:
1. Heat oven to 375°F. Lightly spray 2 cookie sheets with Crisco® Original No-Stick Cooking Spray. Freeze mozzarella cheese 30 minutes.
2. Meanwhile, in small bowl, combine mayonnaise, garlic, salt, pepper, lemon juice and 1 tablespoon of the chopped basil; mix well. Cover; refrigerate.
3. Place crescent rounds 2 inches apart on cookie sheets. In small bowl, stir together olive oil and Italian seasoning. Lightly brush tops of rounds with 1 tablespoon of the oil mixture.
4. Bake 8 to 10 minutes or until light golden brown. Cool 5 minutes.
5.Using serrated knife, cut crescent rounds in half horizontally. Place 16 crescent halves, cut side up, on cookie sheets. Lightly brush with oil mixture. Bake 5 to 9 minutes or until golden brown. Repeat with remaining crescent halves and oil mixture.
6. Shred mozzarella cheese. Spread about 1/2 teaspoon of the mayonnaise mixture on each cut side of crescent rounds. Top bottom of each crescent round with 1 rounded tablespoon chicken, 1 tomato slice and 1 tablespoon shredded mozzarella. Place on cookie sheets.
7. Set oven control to broil. Broil 4 to 6 inches from heat 2 to 3 minutes or until cheese is melted. Remove from oven; top with remaining basil and crescent round tops. Secure sliders with cocktail toothpicks.

3/4 cup mashed very ripe bananas (about 2 medium)
1 container (6 oz) Yoplait® Greek Fat Free plain yogurt

DIRECTIONS:
1. Heat oven to 350°F. Grease bottom only of 8x4- or 9x5-inch loaf pan with shortening or cooking spray.
2. In large bowl, beat all ingredients except nuts with electric mixer on low speed 30 seconds. Beat on medium speed 45 seconds, scraping bowl frequently. Stir in nuts. Pour batter into pan.
3. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan. Remove from pan to cooling rack. Cool completely, about 1 hour.
**You can make this recipe with 1 1/2 cups all-purpose flour, and omit the whole wheat flour.
**For the best flavor, use bananas that have lots of brown specks on the skin and are slightly soft.

I'm going to process against my patterned instincts (and maybe even do a selective color). When it comes to shooting, I'm going to try to go where I haven't gone before. I'm going to abuse film. I'm going to make some art for a change. I'm not sure I've ever made (or kept) a New Year's resolution in my life, but this is my photographic resolution. Just go out there, baby!

INGREDIENTS:
3 to 4 boneless skinless chicken breasts (about 1 lb)
3/4 cup Progresso® Italian style panko crispy bread crumbs
1/2 cup chopped pecans
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1 container (6 oz) Yoplait® Greek Fat Free plain yogurt
3 tablespoons olive oil or butter
DIRECTIONS:
1. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick.
2. In shallow dish, mix bread crumbs, pecans and parsley. In another shallow dish, place yogurt. Dip chicken into yogurt, then coat with crumb mixture.
3. In 10-inch skillet, heat oil over medium heat until hot. Cook chicken in oil 8 to 10 minutes, turning once, until chicken is no longer pink in center and coating is golden brown.
**You can substitute chopped walnuts or almonds for the pecans.

I think it is good to take stock periodically and think about what we want to do to better ourselves. It feels like starting out with a clean slate, looking forward and not back.

Well, I managed to complete by New years resolution for 2011 - once a month, up to the summit of Pen y Fan. Looking forward to a new challenge this year :-)
Yes, I am secretly a four year that loves crayons and all things fun. Hehe.
Today I bought a box of 96 crayons, the ones you see in the picture. It was very exciting, and it made me extremely happy. I love crayons, markers, gel pens, sharpies, and colored pencils, the brightest ones you can find.
When my sisters and I were little, my mom took a bunch of our broken crayons and melted them in little muffin tins to make big, round, multicolored crayons. They were lots of fun.
I was tagged by Joanna to share a few New Years resolutions, so here are the main ones:
1. To be more friendly, because a lot of times I like to hide from people at social gatherings ^ ^
2. To spend more time reading my Bible everyday, because I never do
3. To stop wasting time and do things that really matter
4. To write more letters and more in my journal (I've kept one since I was seven)
5. To work out more frequently and eat less sugar
6. To work harder at school, especially algebra, because that stuff makes no sense to me :P

The Coney Island Polar Bear Club is the oldest winter bathing organization in the United States, whose members regularly take polar bear plunges in the winters. The club was founded by famed health advocate Bernarr McFadden in 1903.
The club began using the event to raise funds for Special Olympics starting in 2005, and Camp Sunshine in 2007. In 2018, the club decided to support local groups and charities and began partnering with the Alliance for Coney Island to raise funds for local nonprofit organizations.
Members swim in the Atlantic Ocean at Coney Island, New York, United States every Sunday from November through April. Every New Year's Day, the Club is joined by participants from around the country, who partake in an annual swim. The 2005 event had 300 participants and 6000 onlookers. The Chief Polar Bear blows a conch shell to gather the swimmers before they run into the water.
The club was mentioned in popular culture. It is mentioned on the season three episode of Seinfeld, The Pez Dispenser In the episode Kramer informs Jerry that he has joined the club, claiming it to be 'invigorating'. It was also publicized on The Daily Show with Jon Stewart, in a taped segment by Dan Bakkedahl about the effects of global warming on the club in faux-nature documentary style.

All funds raised help support our local non-profits and community by supporting a variety of initiatives including free public programming, environmental and educational programming, quality of life issues and more. With your help, we can help ensure that Coney Island continues to thrive!
No fee to participate but we encourage donations & fundraising for your plunge!
Registration begins at 10AM, we recommend that all plungers arrive no later than 12PM
Registration tables are located at Stillwell Avenue & the Boardwalk
All participants must sign a waiver on-site the day of the Plunge
Plungers under 18 years of age must have their parent or guardian present to sign the waiver the day of the Plunge.

The Alliance for Coney Island is focused on ensuring residents have an improved quality of life through their supplemental services and workforce development programs.
With your help, the funds raised will support workforce development programs for local residents to connect them to job opportunities and neighborhood services, as well as help increase their advocacy for clean water and educate the public about waste.

Surely the real number that popped up while taking this series of shot must be an "E" for error! Too much holiday baking...anyway, I couldn't bring myself to post the shot that showed my actual after-holiday weight especially since my pre-holiday weight was already more than I want to admit. Perhaps it is time to get back on WeightWatchers which I did a couple of years ago and which worked really well...until I slipped slowly back into old habits!
