modelling chocolate
Modelling Chocolate has changed the world of modern day Sugar-craft. It means anyone can now buy or make a cake and decorate it by sculpting something fantastic that can be eaten or use some of the many moulds available online. It’s added a new dimension to modelling because seams can be ‘blended ‘and joins covered over. This can be done by simply running a finger along a seam, the chocolate melts, it disappears! It can be used as a layer under sugar-paste on a chocolate cake; you need the modelling chocolate to be heated to ensure it is soft so that it does not crack when laid over the cake. Or if you prefer you can use it as the top layer for a cake. There is nothing better than having a covered cake which not only tastes wonderful, but actually has the most amazing aroma too…
It only takes two ingredients three if you want to colour it.
Products to use-
I’m often asked where to buy corn syrup to make modelling chocolate with. Most of the recipes on the internet for modelling chocolate are American and the Americans use Corn Syrup. It is difficult to buy in the UK, American Corn Syrup = English Golden Syrup! They are the same thing of course it will have a slight golden tinge that corn syrup doesn’t.
Chocolate use the chocolate you like to eat but a high fat content is good.
Recipe for Modelling Chocolate
I make my modelling chocolate in small batches, one batch should make around 600g,
White Modelling Chocolate Ingredients -
450g of white chocolate- 7 tbsp. of syrup –
Dark Modelling Chocolate Ingredients -
450g of dark chocolate – 10 tbsp. of syrup.

In my spare time (when I'm not shooting something with my Nikon, or devising clever spreadsheets for my employer,) I airbrush model horses. Here is an Andalusian model (by Breyer) that I did just this evening.
This weekend I'll be painting another Breyer model called Huckleberry Bey. I use an Iwata custom micron, CM-C+, and Higgins inks, plus another Iwata with custom-blended acrylics. :)
