I didn't want to use expensive shit the first time.
Put that jazz in the stand mixer on high for like ten minutes. Once it gets all splashy, pour off the buttermilk into another container. Take a wooden spoon and press the butter against the side of the bowl to remove as much butter milk as possible.
Once you've got as much out as you can, pour about a half cup of ice water into the bowl and hit it with the paddle attachment for about ten seconds. Dump the water and press again; repeat until the water stays clear. Mix in a pinch of salt and you're golden.

Choice between this and a cheese omelette with potatoes and a fruit
plate. This is the old, reliable Rice Krispies, Biscuit, Banana and
Blueberries. The bagel was cinnamon raisin, so I passed. Is it me or
did American change their muffins? They used to be a lot less fluffy.
These were fluffy and very flavorful. Bravo.
Hubby had the cheese omelette and said the breakfast was solid. The
potatoes were very good.
