I've met this old man selling his Masala Chai in his old tea room on wheels, in Amritsar, Punjab. The contrasts of the colors and the whites of the teacups and the his beard, were so vivid that I had to ask him to pose for me.

Ok, I admit it, this was a rush job as the grindstone is calling, I wanted to use hi-res handheld mode on the Olympus Em1 but it went totally out of my single useful brain cell… I just needed a little more thyme 😉

In hindi la parola chai significa semplicemente tè (la base utilizzata è solitamente un tè nero molto concentrato come Assam o Celyon), mentre il masala è un mix di spezie tra le quali spiccano cannella, cardamomo, zenzero, anice stellato, chiodi di garofano e pepe nero. In India questa bevanda viene consumata a colazione spesso accompagnata da frittelle salate e saporite, poi al bisogno si gusta durante tutta la giornata (un po’ come il nostro espresso).
Questa delizia aromatica è sempre preparata con l’aggiunta di zucchero e latte. Il chai caldo caldo, servito dai chaiwala (venditori di tè) più esperti, viene versato a cascata da una tazza all’altra per creare una deliziosa schiumina che lo rende ancora più invitante.
In Hindi the word chai simply means tea (the base used is usually a very concentrated black tea such as Assam or Celyon), while masala is a mix of spices among which cinnamon, cardamom, ginger, star anise, cloves and black pepper. In India, this drink is consumed for breakfast often accompanied by savory and savory pancakes, then when needed it can be enjoyed throughout the day (a bit like our espresso).
This aromatic delight is always prepared with the addition of sugar and milk. Warm hot chai, served by the most experienced chaiwala (tea vendors), is cascaded from cup to cup to create a delicious foam that makes it even more inviting.
With peas (cos I like them), yogurt and chopped parsley.
The cauliflower was al dente, and you could still taste the vegetable, as well as the spices.

I've cobbled this together for an upcoming competition. The brief is 'Still Life' and it has to tell a story.
I do enjoy a good curry and especially if it's made from scratch. I can happily spend an afternoon in the kitchen making up batches of curry gravy to freeze up then add all manner of spices to when I'm ready. I also make my own Garam Masala. When the aromatic spices are combined it smells heavenly. I'd almost compare the sensation to nuzzling the neck of a bedewed lady! But I'm digressing!!
My image is part of the process from whole spice, the milling process then onto the amalgamation. I have obviously embellished some of the ingredients for the sake of art :)
My own critique tells me the centre panel isn't quite right. The perspective is wrong and it just looks out of place. I have redone it 3 times now and I've had enough of it!
For anyone interested in how I lit this then:
I used my 24" softbox equipped with a Yongnuo YN560IV speedlight 1/8 @ 24mm. This was placed to the rear of the spices, pointing down at a 60° angle. No more than 18" away from the worktop. I placed an A1 piece of white foamboard directly in front of the spices, just out of frame to bounce some light back into the frame. Shot handheld from above whilst balanced on a chair...
Just added sambar masala. Tasting good. I like!

Masala Vadas are made of coarsely ground soaked Bengal Gram Dal. Then spices, onions & herbs are added to the dough. This dough is then shaped to small disc or patties & deep fried.
Butter Paneer Masala is a North Indian delicacy that is made by cooking Indian cottage cheese in a rich and creamy onion-tomato-cashew sauce. It is also listed as Paneer Makhani, or Shahi paneer.

Since this is my most popular image I wanted to add that I no longer have these birds sadly. :( Masala tragically passed away and when I moved from America to the UK I had to rehome Mishri. :( I really miss them.

Mushrooms, chickpeas, baby spinach, tomatoes, onions, garlic, pepperflakes, ginger, cashews, spices = goodness simmered in a pot and served with rice, flat bread or another grain, garnished with fresh coriander leaves.
(I grind my own Garam Masala. This is much better than the store bought Garam Masala which often contains rice flour)
I overcooked the rice a bit :/
We love the flavours of India and, especially, just about everything is cooked with fresh ingredients and from scratch.
I added a couple of portobella mushrooms, including the gills, which may be the reason the curry turned a bit brown. Also, my blender does not blend nuts very smooth. However, the little crunch in the sauce does not bother us. I actually quite like it :)
