Cooking from scratch is the best way to ensure that what’s you’re eating is as healthy as it can be. I purchase pastured pork from a friend who raises hogs and I get all the pork simply ground, no spices added for sausage. The butcher shop we use will make nitrate free sausage, bacon and ham, but I prefer not to have them add the spices because I don’t know exactly what they use. Not to mention, when I mix it up myself each time I can make it however I want and tweak the flavors depending on what I’m making. I don’t have to figure out at processing time exactly how much of each type of sausage I want. If I want to make sausage and lentil soup I’ll mix hot Italian spices with the ground pork. If we want to have sausage with pancakes, I mix is savory breakfast sausage spices. Over the years I’ve played around with different spices and come up with a recipe we really love.

A 70th Birthday cake that is feminine yet with a South Dakota Western flair. The purple flowers are S.D. state flower, the Pasque flower. Even the cactus are model from the type found in S.D.

Mr Chiots is a hunter, so each year our freezer is filled with loads of venison. This past November, he got four deer for the freezer, a few of them were yearlings so they’re fairly small, but quite tasty. One of my favorite winter meals is roasted venison. You can’t get much easier than making a roast. Throw a variety of root vegetables and a roast in a dutch oven, add a few spices like thyme, rosemary, garlic, salt and pepper. Top it off with a cup or two of red wine or a dark beer, and throw it in the oven at 325 for 3-5 hours depending on the size of the roast.

I bought the Lady Fingers to make a different dessert, but since there was a Tiramisu recipe was on the back I figured it would be just as easy to make that, instead.

Growing up I loved it when my mom made liver & onions. I just got some from the local farm - delicous pastured liver. Tonight I dredged it in freshly ground flour and sauteed it in butter for 1.5 min on each side and covered it with onions caramelized in balsamic & butter. We enjoyed it with a light side of freshly harvest greens topped with figs, blue cheese and violet blossoms.

Eighteen pounds of sauerkraut, that's how much I made 10 days ago. People keep asking me, "What are you going to do with all that?". I'll give a few jars away to friends, but we'll eat most it. It will be on our plate every meal until it's gone. The chiots will get some each morning as well. We even eat it for breakfast, head on over to Eat Outside the Bag for more about that and links to my recipe.

When you grow you own strawberries they’re so much better than what you get at the store, you don’t want to overpower them with too much sugar. I make homemade shortcake with real butter, whole grain flour, crystallized ginger and just a small amount of sugar. This lets the sweetness and flavor of homegrown sun ripened strawberries be the star of the meal. The shortcakes are cooked until crispy on the outside and soft on the inside. When cooled we crumble them in a bowl, top with strawberries macerated with maple syrup and a dash of vanilla. Then we top it all off with some raw milk.

I loved the wayi the sunlight was coming in the window and spolighting this sandwich I made the other night for dinner.

The inside was filled with either pink or blue buttercream, nobody but the cake decorated and the ultra-sound tech knows for sure until the guests cut the cake!

The design for the tree and the birds came from the invitation. All of the decorations were hand cut from fondant.

Nothing compares to the velvety feel of well-kneaded bread. I haven't kneaded bread entirely by hand in I don't remember how long, seeing as I have two Hobarts at hand in my kitchen, so I thought I'd give it a try with this new recipe.

I just thought this looked so pretty, with his blue owl shirt, flour and dough everywhere.

What do you do when you accidentally over bake rolls and they are too dry? You bake them up into a delicious custardy bread pudding. Also a great use for some of that extra cranberry relish left over from Thanksgiving. It was so good I may "accidentally" over bake rolls again. I used the recipe from The River Cottage Cookbook (I used half the amount of sugar)

This cake was designed to match the invitation which is pictured at the bottom of the photo. "A gift from above...Two Little Girls to Love."

This cake was actually 2 cakes that you could pull apart at the seam. The father and son birthday cake had their names on the side with the age in the "eye". The cake was covered in fondant.

There’s not much I enjoy more than spending a day in the kitchen cooking up all kinds of goodness. Since there are only 2 of us in the house and we don’t eat lots of sweets or grain items, it doesn’t take much time to prepare the food we eat. I’m always happy when there’s a party invite or some other event that allows me to spend the day baking/cooking.

Pretty darn good on a hot hot day

I found a recipe online last week for cupcakes for two. I thought it was just too perfect for me, since I have been in a big baking kick, but am the only one eating my goodies pretty much. So, I tried it out tonight. The recipe was just for vanilla cupcakes, but I added some sprinkles to make them funfetti. It was the first time I had made cupcakes from scratch, and they were delicious. The frosting was made from scratch too, and together it was the perfect little treat.

I gave one to my roommate and she took a bite before I could get a picture, but, I am glad she did!
