Course #2 in @BoskTO's Chef Menu - caviar with uni bavavois and egg pearls and covered with a bacon crust. This is one of the best caviar dishes I have ever had, primarily because it featured the caviar without overpowering it, or having the caviar overwhelm the rest of the dish... I.e. balance, it had indulgent but not over-indulgent, balance.
