We ate yesterday at the famous Amish Restaurant The Blue Gate. Known for their delicious pies we split this OMG delicious.

Happy Pi day to me! I have now travelled 69 years around the sun and this is my last year in my 60's - a year from now a new decade of trips around the sun on Pi day will come to be. It's only fitting that I celebrate with Pi(e)!

Just needed some hits of yellow. Meyer lemons and the lemon cream tart I made from them a while back. For me, lemons embody the sun.
For Thanksgiving I made pumpkin with coconut milk and lemon chess pie. I've seen the recipe for Chess Pie in my mom's old Joy of Cooking for years and always been intrigued. I finally got up the nerve to try the lemon variation. It was a bit trickier than most pie, but It tastes like lemon cheesecake and was the hit of both dinners!
Lemon Chess Pie
1 pie crust, prebaked (get it good and brown. I didn't and wish I had)
1 large egg
4 large egg yolks
1 1/3 cups white sugar (I subbed 1/2 cup maple syrup for 2/3 cup sugar and it worked out great)
zest of one lemon
1/3 cup fresh squeezed lemon juice
1/3 cup heavy cream (I used a scant 1/3 cup to make up for the extra liquid of the maple syrup)
6 tbs butter
Preheat oven to 275. If not still warm, warm the pie crust in the oven while preparing the filling.
In a heatproof bowl whisk the egg, egg yolk and sugar together "just until no yellow streaks remain" - or a couple seconds with an electric mixer. Whisk in the cream, lemon zest and lemon juice.
Bring 1 inch of water to a simmer in a skillet and set the bowl in the water. Scatter the butter, cut into small pieces, over the egg mixture and whisk until the butter melts. Continue whisking until the mixture is "shiny and warm to the touch" - I was confused but I went until the filling was warm and everything turned out OK.
Pour the filling into the warm crust and bake "from 25 - 40 minutes". Mine took close to 40.
I took it out of the oven when the filling was still a jiggly, but on it's way to being set. It set completely when I took it out to cool, but it was never browned. Everyone raved about this pie.
The joy of cooking had a Chess Pie variation called the Jefferson Davis pie with the eggs, milk, sugar, butter as well as chopped dates, rasins, nuts and warm spices like cinnamon, nutmeg and allspice. A little wacky, a little wild... but it might just be good :)

My brother & mom came to visit on Wednesday before my brother leaves on a trip to Taiwan for a month. We went to dinner an then played scrabble on the back porch & ate this tasty tasty lemon pie.
This pie was super, super easy to make (5 minutes, max).
Recipe:
Ingredients:
2 pkg. (3.4 oz. each) JELL-O Lemon Flavor Instant Pudding
2 cups cold milk
1 Tbsp. lemon juice
1 Graham Pie Crust
8 oz. Whipped Topping, thawed, divided
Directions:
1. In a large bowl, beat pudding mixes, milk and juice with whisk for 2 minutes. (Mixture will be thick.) Spread 1-1/2 cups onto bottom of crust.
2. Whisk half of the whipped topping into remaining pudding mixture; spread this over pudding layer in crust.
3.Top with remaining whipped topping. Refrigerate for 3 hours.

INGREDIENTS:
1 Pillsbury® Pet Ritz® frozen deep dish pie crust
5 eggs, separated
1 3/4 cups sugar
Grated peel of 5 lemons (about 3 tablespoons)
Juice of 5 lemons (about 1 cup)
1/3 cup + 1 tablespoon cornstarch
1 1/2 cups boiling water
1 tablespoon butter
1/4 teaspoon cream of tartar
Dash salt
DIRECTIONS:
1. Heat oven to 400°F. Let crust thaw 10 minutes. Bake on oven rack 11 to 14 minutes or until lightly browned. Cool.
2. In large microwavable glass bowl, mix egg yolks, 1 1/2 cups of the sugar, lemon peel, lemon juice and cornstarch with whisk. Add ¼ cup of boiling water into the mixture using whisk to combine. Add an additional ¼ cup of boiling water. Add the remaining boiling water to the mixture.
3. Microwave on High 4 minutes; stir with whisk. Microwave on High an additional 2 minutes; stir. Continue microwaving at 2-minute intervals at a time until lemon mixture is thickened, about 8 minutes. Stir in butter.
4. Reduce oven temperature to 325°F. In a medium glass bowl, beat the egg whites and cream of tartar with electric mixer on high speed until soft peaks form. Slowly beat in remaining ¼ cups sugar, 1 tablespoon at a time, until stiff peaks form and mixture is glossy. Spoon egg white mixture onto pie filling. Spread over filling, carefully sealing meringue to edge of crust to prevent shrinking.
5. Bake 35 to 40 minutes, or until the meringue is golden brown and temperature in center of meringue reaches 160°F.. Cool away from draft 2 hours. Refrigerate cooled pie until serving. Store covered in refrigerator.
