Ten hours with a ruling pen, a half hour with a watercolor brush, and lots of Windsor & Newton Designer's Gouache (Lamp Black). As gruelling as gouache can be to work with, I love how it looks.

It is SO efficient and even looks good too....
Well to find out I have two of these things as well. Glass bottom, screw on top portion which houses the grinding wheel. I feel secure in the knowledge that if I want to grind up nuts I could just go crazy!

My old one (left) feels a bit sturdier and has the rubber grips at top and rubber ball pad at the top, which cushions it against your hand. But it's not made any more, sigh. So the new one (right) will have to do when my old one breaks. And you can get one yourself from Silver Leaf International.
The Indonesian mortar is made from a hard basalt stone. Although the cobek has a smooth appearance the stone is rough enough to crush and break through the typical sambal ingredients like chiles, garlic, peanuts, coconut and even lemon grass.
Ingredients are crushed together using a firm but gentle up and down motion. This crushing extracts the most flavor from the ingredients and gives the sambal the traditional texture. It takes about 3 to 4 minutes of "vigorous work" to create a paste of the proper consistency.

I think this belonged to Philip's grandmother. I love it. Although I am very thankful to have my Kitchenaid mixer, sometimes you don't need anything more than a little hand beater.
