Diwali is one of the biggest festival of Hindus, celebrated with great enthusiasm and happiness in India. The festival is celebrated for five continuous days, where the third days is celebrated as the main Diwali festival or 'Festival of lights'. Different colorful varieties of fireworks are always associated with this festival. On this auspicious day, people light up diyas and candles all around their house. They perform Laxmi Puja in the evening and seek divine blessings of Goddess of Wealth. The festival od Diwali is never complete without exchange of gifts. People present diwali gifts to all near and dear ones.

 

During Diwali, Goddess Lakshmi is believed to visit homes that are well lit, so families decorate their homes. People wear their best clothes or buy new ones, children are given presents and new year greetings are exchanged through visits or Diwali cards. Thus, a Rangoli design is created on doorsteps to welcome everybody. Rangoli exudes a pattern in color that are specific for each region.

 

During Diwali, in the art of floor painting, the central rangoli design is the symbolic one denoting the deity or the theme. Motifs generally created are lotus, fish, birds, snakes etc. which reflects the unity of man and beast. Most of the rangoli designs are circular exuding a sense of endlessness of time. Celestial symbols such as the sun, moon and other zodiac signs are also common themes for rangoli. Layered with symbolism is the lotus denoting Goddess Lakshmi, the unfolding of life, the heart or the wheel.

  

I must admit that I didn't try the famous Orchha fudge or "kalakand" (milk cake). Something to do with not wanting a tracheotomy - every piece of the sweet I saw was a resting place for a dozen hornet wasps.

The cuisine of Punjab has an enormous variety of mouth-watering vegetarian as well as non vegetarian dishes. The spice content ranges from minimal to pleasant to high. Punjabi food is usually relished by people of all communities. In Punjab, home cooking differs from the restaurant cooking style. At the restaurants, the chefs make a liberal use of desi ghee, butter and cream to make the food lip smacking and finger licking. On the other hand, at home, people prefer using sunflower oil or some other refined oil for cooking, with the basic idea of making the food low in fat content.

 

Wheat is the staple food of Punjabis; however, they do enjoy eating rice on festivities and other special occasions. When it comes to food, each region in Punjab has an entirely different preference like people in Amritsar are particularly fond of stuffed paranthas and milk products. The philosophy of life for most of the Punjabis is to eat, drink and make merry. They are real lively people who are extremely fond of eating good food. In the preparation of Punjabi food, onion, ginger and garlic are used extensively to enhance the taste of the food.

 

Traditional Punjabi thali consists of varied kinds of breads; some are baked in the tandoor such as tandoori roti, lachha paratha, naan and kulcha, while others are dry baked on tava like chapatti and jowar ki roti. There is another fabulous variety of roti called rumali roti, which is larger in size as compared to the normal one and is also easily absorbable. Also, there are breads that are shallow fried such as parantha and deep fried such as puri and bhatoora.

Ingredients for Aam Kalakand Recipe

 

Milk 5 cups

Mango Pulp 4 pinches

Sugar 3/4 cup

Mango pulp 1 cup

Green cardamom powder 1/2 teaspoon

Nuts chopped 1 tablespoon

Silver warq 1 sheet

 

Method

 

Step 1

 

Put the milk to boil on high heat. Add a pinch of tartaric acid. Keep stirring. After few minutes add another pinch of tartaric acid. Keep stirring. Add the rest of the acid and stir.

 

Step 2

 

Boil the milk stirring continuously till it thickens. When the milk becomes thick, add sugar and mango pulp and let boil. Continue to stir till the milk mixture becomes granular without actually curdling.

 

Step 3

 

Reduce the heat. Cook till mixture thickens further and the bubbles form on surface. Pour into a greased tray. Cut into desired shapes. Cool and decorate with silver warq.

Lunchtime snack from Kalakund: samosas and two types of the famous kalakand sweet (Indian milk cake), that derives its name from the place.
