I finally took some photos using the RAW format. I used Canon's Digital Photo Professional software, which comes with their DSLR cameras. The original RAW file was about 20MB. Much larger than the 5MB 18MP JPEG files. However, the software allowed me to edit all kinds of things. White balance, picture style, levels, shadows. All kinds of stuff.
In a world with unlimited time and file storage, I would shoot RAW. I think I will use the JPEG+RAW recording choice if I am taking an important or special photo, in case I want to edit things to look better.
In this screenshot, the image on the left is the original and the image on the right is the edited version. I only spent about 10 minutes tweaking things.
