Garnished with yellow mustard, katsup, dill pickle relish and lacto-fermented sauerkraut. Very tasty. I believe I will be using this recipe and method from now on for kielbasa. Winner!

I just pulled the lid open on my hot smoker box to get a quick pic of my kahawai (Arripis trutta, aka Australian Salmon) that I caught and kept yesterday getting underway with the hot smoke/cooking. By the time the methylated spirits runs out it should be a nice golden brown.

This is my back-up smoker. For when I have guests or want to smoke a lot of vegetables. I could do that in batches in my other smoker, but I found this bigger one for a nice price on the internet. And luckily I have tons of cupboard space in my kitchen.

Mount Merapi, which translates as "Fire Mountain," has erupted scores of times over the last 200 years, often with deadly results. Anatoki Salmon Farm is a small freshwater salmon farm, next to the Anatoki River and surrounded by beautiful scenery.

 

You can fish for free in the lake, only paying for what you land - but be careful not catch too many! Once you've hooked a few tasty salmon you can get your catch hot smoked to eat as a picnic or take home.

After filleting the mackeral, sprinkle one fillet with salt, pepper, dill and lemon zest. Lay the other fillet on top

Ready for the smoker - cherry chunks, the prepared mackeral and a glass of beer

I used 1/4 cup of Langdon Wood Maple Syrup with 1/4 cup of compound butter with ramps. (You could use regular butter with 2 tablespoons of fresh chives or chive flowers).

Melt the butter over low heat while the salmon is on the grill. Add chives and syrup and stir until combined. Leave on low heat for five minutes.

About fifteen minutes before you expect the fish to be done, brush the fillet(s) with the glaze. Repeat a few minutes before removing the salmon from the grill.

  

Right off the grill and right into my mouth.
