My son made himself a burrito for dinner yesterday. He likes them spicy; there was hot salsa both inside and outside of it.

Grilled pork Mexico City style marinated with achiote sauce, spices and orange juice. Then served with pineapple, coriander, onions, tortillas and hot salsa.

 

Having seen Anthoyny Bourdain enjoy these in Mexico City, we just had to try these gyros/shawarma style tacos. Strips of grilled pork in a rich and tangy achiote and orange juice sauce was made even more delicious with the rest of the condiments, with pineapple for sweetness, salsa asado for a bit of heat, and the coriander and onions rounding out the herb notes.

Great salsa and just like Rubio's "hot" salsa - too wonderful.

It's around 6:30am and it's done. I put some in a tupperware container for Chong to take to work. And tonight when I got up I asked her how it was. She said it was too watery! Damn, I was hoping she wouldn't notice. Anyway, I accepted that as a compliment cause that's as close to one as I'll get.

I meant to take a nice pic of a bowl of chili with my heavily buttered slices of Jewish Rye bread while I watched a move. But forgot when the time came. I used my giant TV in the living room and watched Mel Gibson killing British Red Coats during the American Revolution in the movie, The Patriot!

 

That's it for chili. As I write this I'm boiling the leftovers in the pot as it's been sitting out all day and evening.

 

I dumped in the two cans of dark red kidney beans, the sliced button mushrooms, the can of diced tomatoes (they seem to have sunk to the bottom), and the large can of tomato sauce.

I diced the onion, thawed out the frozen bell peppers, and put them in the pot with the hamburger meat and some water, then mixed it up. I just turned the burner on and it will take a while to cook up.

Boiling Chili, the movie! I'm sure this is going to go viral!

It's all boiling nicely and I'll be cooking it for hours. Then I thought...I should make a video of boiling chili, that will be interesting to see. I don't have anything else to do anyway...Chong told me to clean the floor, but I said I'd to it tomorrow night.

I stirred in the chili mix than added one more thing that I almost forgot about. I like to dump in thick and chunky salsa. I checked and could only find this jar in the fridge and it didn't have very much left, oh well, I dumped it in.

I used the empty cans to put more water in the chili pot. I used three cans, but should have only used two of them. It's not a real big deal, but it will be less thick than I usually like it. Hopefully Chong won't notice and complain about it being too watery.

Adding the chili powder. I used two bags of this McCormack brand. It's not super hot like it's labeled though. There's lots of different brands you can buy and some are better than others. They are mostly corn starch with cumin and some red pepper in them and a few dried onions. I could make it myself, but this is easier and I'm lazy.

I drained off some of the water and put the pot back on the stove. Next I'll dump the canned stuff in it.

Chili is really great in cold weather, though it' s good at other times as well. Lots of people, and it seems to be a "guy" thing, have secret chili recipes that they swear by as being the greatest of all Chili. But I don't really care, I just keep it simple and put in what I like, and it's not a big deal shrouded in mystery...that's just silly. Anyway, this is all the stuff I'm going to use, except for one other thing that isn't in the picture.

Sausage, Gorgonzola ,and cheddar omelet with hot salsa on the side. It was heaven.

It's been boiling for a while now and the meat is turned mostly brown, the onions are cooked, and the bell peppers are getting limp like they're supposed to. Next I need to drain off some of the water.

We ate delicious food at our favorite Mexican restaurant this week. India Rose decided to be brave and try dipping her tortilla chip in some hot salsa... She is not a big fan of sauces on her food, so I was proud that she tried it, although it may have put her off for life 😂😂We love this restaurant, it is decorated in beautiful, bright colors and the food is so good. India loves Hispanic music, making this one of her favorite places to eat! Thank you Mexico, for all the wonderful culture you give to this country.
