I love making pasta. Not only is it very easy to make, but it tastes so much better than store bought.
Yesterday my sweet and talented friend, Cathy MCC asked to see my pasta scooper working.

Even though Christmas Day has passed, did you know that Italians traditionally decorate their Christmas trees 🎄 on December 8th (the feast of the Immaculate Conception) but that the tree stays up until the epiphany on January 6th. Italians 🇮🇹 also typically have a big Christmas Eve meal of different fish dishes known as the Feast of the Seven Fishes. To continue our celebration of Italian Christmas, we are highlighting Monte's Trattoria in Greenwich Village which has been in business since 1918. It has been owned by chef Pietro Mosconi and his family since 1983. The overhanging neon sign is from the 1950s. Pietro told us that when he purchased the Italian restaurant from the original owner he decided to keep the name and #signage because he was so fond of it. We love this vintage sign too, especially the chef holding a steaming bowl of pasta. The name "Monte" was shortened from Monteverde, a city in Italy known as the "green mountain". Yes, this dish is sure to seduce anyone, by its aroma, its wonderful colours & textures, and its perfectly orchestrated symphony of flavours!
The original recipe is from a beloved cookbook I bought in London a few years ago, written by Ann and Franco Taruschio, an Italian chef and his wife who are passionate about pasta!

Cutting a batch of gnocchi that I had made and frozen the dough for about a month ago. Easy and fun - just like playing with Play-Doh as a kid!

"Ears" with broccoli. Fresh handmade pasta. it's an art seeing old ladies turn bits of pasta into these little shells.

I skipped breakfast, was so hungry so I just rolled this out. It took no more than 15, ok, maybe 20 minutes. (I used store bought pesto). This can make an impressive dinner, and is also much easier than you might think.
Recipe:
One cup flour plus extra for rolling
One egg
Just enough milk (less than 1/4 cup)
Oil to add for boiling
A little salt
Also, you will need a clear, clean counter space and a rolling pin or glass at least 6 inches long for rolling.
Also you will need a pizza cutter.
Start a large pot of water to boiling. Make sure you do this first to ensure it's ready immediately after cutting pasta.
In a medium-sized bowl, add flour and salt , and make a well in the center. Crack in the egg, and add just a little milk. (They say use half an egg shell's worth, but I use a lot more to get dough uniform and then just add more flour as I roll.)
Mix with a fork, starting from the center, adding more milk as needed. Mix to combine so it forms a ball/lump.
Flour your working surface and rub your hands around on it to spread out the flour. Place dough on it and flatten out a little with your floured hands. Rub some flour on your glass (or rolling pin if you have one) and start rolling! Roll in every direction to make a rectangle. You don't have to make it paper-thin, but thin as possible is desirable. Sprinkle and rub more flour to dough as necessary to prevent sticking.
Trim edges a little with a pizza slicer, then "slice" your pasta into strips. I prefer uneven pieces; some thin, some very wide.
Add oil to the boiling water and bring over a few pieces at a time, making sure to put each piece in individually so they don't stick or tangle. Boil just a few minutes, stirring lightly. Drain and drizzle on a little oil. Toss with some pesto in a bowl.
Serves one, or two alongside a vegetable such as broccoli, and a salad.
You can also make this as a noodle soup, cooking the pasta in broth. (Or drain water and add to broth).
Sun-ripened tomato, minced garlic, two types of basil (Globe, pictured, and Emerald Wine), lemon balm and thyme combine with balsamic vinegar and a pinch of salt before stirring into sizzling sauteed gnocchi.
While this was just a tiny "taster's plate", OMG is it amazing!

Steak with homemade pasta and carbonara sauce
Sear seasoned steak on high in a hot skillet with tbsp of hot oil for 2 mins on each side then 2 mins on medium low for each side again and let it rest.
Pasta recipe is courtesy of pioneer woman's blog/website, however I had extra yolks on hand so I used those and substituted 2 tbsp of water per white of each egg.
