100% Sourdough Bagels hot out of the oven. Really pleased with how these turned out after a cold fermentation overnight. The outside was a thin layer of golden crispness in contrast to the soft, chewy interior. Classic everything bagel seasoning on top (mix up sesame seeds, poppy seeds, garlic powder and bits of dehydrated onions). Today’s loaves fermenting for some lovely humans... 😍 Semolina flour twice milled with Sunflower petals and Stinging nettle seeds, and some sprouted regional Einkorn. Sundried Tomatoes, olive oil, house made preserved lemon, toasted almonds, Aman’s small batch crafted Kadhai spice @paisleynotebook and Nigella seed.
