So this past week I made cheese pizza, cheese and crackers and grilled swiss cheese with peppered turkey bacon on 100% whole wheat.....and I'm still hungry for more cheese!

For 119 pictures in 2019 #66 "Less is more". Less cheese, more onions makes a tasty grilled cheese. This was made using asiago bread, a layer of swiss cheese, some roast beef piled on, a big pile of the sauteed onions (see next photo), and a final layer of cheese. Butter one side and grill just like you would a plain grilled cheese. Butter the other side and flip. Grill until cheese is fully melted. It got the name "french onion" because of the addition of very well caramelized onion. Sauteing with a bit of vermouth adds something very nice. Note that this is not my recipe, the idea came from a youtuber named Sam the Cooking Guy. I did have to use a different type of bread.

I guess the views are a little intimidating. I get a lot of views, but not so many comments. The comments are from flickr friends and I know they wouldn't mind me uploading my daily things, in fact, they might enjoy it- but what about those vast unkowns?

I ran this as a special for two weeks and it sold very well. This is part of a line of amped up grilled cheese sandwiches I am planning for the new menu.
This sandwich consists of two slices of cinnamon-raisin bread, a slice of cheddar on each slice, apple butter spread on one slice over the cheese, and heated deli sliced turkey. It would be great with leftover turkey from the upcoming holidays.

A turkey burger sandwhiched between two grilled cheeses. As seen on a hamburger today - I made turkey burgers because my husband doesn't really eat beef. Also, skipped buttering the bread and used provolone because I could not bring myself to buy kraft slices. There are also some caramelized onions tucked in there somewhere.

grilled cheese in french toast with strips of fat oozing bacon. my mom wasn't a devout catholic but she would practice certain traditions that had been with her family and most catholic families such as eating only seafood during holy week. so this kind of breakfast was sacrilegious and unthinkable on a good friday.

There was a bit of a chill in the air today, especially after yesterday's warmer than seasonal temperatures that broke records in Ottawa, so after a long day in the office and when all the day's errands had been completed, I decided on comfort food for dinner.
Nothing quite like soup (sweet basil and asparagus in this case) and grilled cheese (swiss, not cheddar) to warm you up after a chilly day.

When I was in the city I would ask for my grilled cheese sandwich a special way. All the Deli’s hadn’t had any problems with it. We would compromise on toppings, or between’s any way of looking at it. My creation of this grilled cheese sandwich became a mainstay on several Deli menus all the way from Harlem to downtown to the Village’s, East and West. All the way up and down Alphabet City. At one point Tavern on the Green also served this by request only. It was not Gucci enough to be on the menu. The only way you anyone could enjoy this gourmet grilled cheese sandwich was to know what it contained. I had my very own Secret Sandwich Society North, South,East and West on the Island of Manhattan. I just had to make it today as I do on the 11th of September since 2001.
Day six of the gratitude project.
Sunday I was thankful for being able to curl up with a bowl of soup & grilled cheese, and watch movies & be lazy for an afternoon with my hubby.
Here's the restaurant I posted yesterday with the colors corrected in Photoshop. I set the white and black points for each channel individually; for the original scan, the histogram for green was a lot more prominent.
I got a craving the other day for a grilled cheese sandwich, something I haven't had in years.
And not just any grilled cheese sandwich. A grilled cheese on white bread. With Kraft full fat Singles American cheese.
I've found that I've gone back to liking the foods I liked when I was younger, and moved away from the idea that I need to "expand my culinary horizons." I think I came to the realization that there were a lot of foods I just didn't like, and eating them just to feel cultured didn't make a lot of sense.
I mean, sure, I don't think I would have eaten Kung Pao Tofu with Asparagus and Cashews when I was a kid, and I actually really like that now. (Though even with that, I eat it with white rice now; when I first started making it, I was eating it with brown rice to be healthy.)
But I just like simple foods.
I was happy to see that the ingredients were simple enough that I could pick them up on an unrelated trip to Target. I got home, spread some buttery spread on two slices of bread, threw one in the cast iron skillet, two slices of cheese on top, and topped it off with the other. After just a tad too long, I flipped it over and, soon enough, I had this.
I was going to take a picture, but I couldn't wait. So I got a picture of it half eaten.
Mmmmm....
