Pear and blueberry cake ready for baking, with another sprinkling o fruit and sugar on top.

 

Ingredients

 

450g (1lb) wholemeal self raising flour, sifted

Pinch of salt

250g (9oz) butter, diced

350g golden granulated sugar

4 large eggs, beaten

4 large pears, peeled cored and sliced

200g (7oz) blueberries

 

Method

 

1. Preheat the oven to 190°C/375°F/gas 5. Grease and baseline a 20.5cm round tin.

2. Rub together the flour, salt and butter until they look like breadcrumbs. Add 250g (9oz) sugar and the beaten egg and stir.

3. Spoon half the mix in the bottom of the tin, top with the sliced pears and the blueberries, keeping a few slices of pear and a few blueberries back. Sprinkle with some of the remaining sugar. Spoon over the remaining cake mix.

4. Place the remaining fruit on top pressing down slightly, and finish off the left over sugar.

5. Bake for 1hr to 1hr 10 mins, or until a skewer inserted in the middle comes out clean. Cool and remove form the tin.

We stayed for our 3rd time during January 2016 at the memorable and ideally located Hilton Dublin Airport Hotel, Deluxe Room. Good airport shuttle connections, efficient and friendly service, good food/drinks offerings and of course large rooms make this hotel before/after a flight from/to DUB highly recommended. Of note, while the shuttle service from the airport is complimentary, the same service from the hotel to the airport is 2 Euros per person. Overall, highly recommended.

An iconic, historical steeplechase held every year since 1837 ( some historians say 1839) with the exception of the 2 World Wars. It has been an important sporting event for the city of Liverpool for all of these years. Thousands and thousands of people come out to watch and bet on the horses, and this year I was one of them. The last time I was able to attend was 1983 and 1985. It was a wonderfully fun day, no horse or riders were injured. The horse in front # 35 is Rogue Angel, 15 is Regal Encore, the blue checked cap is Double Shuffle and the horse with the bright blue blinkers is GoodToKnow. The winner eventually was One For Arthur, only the second Scottish owned and trained horse to win the Grand National.
