My Mom is a great cook - she is the one who inspired me to cook and be creative in the kitchen! This beautiful dish was prepared by her :-}

 

This scrumptious dish of giant prawns just melted in your mouth. Having feasted on a copious Easter brunch earlier in the day, this was the perfect dinnerl - light and bursting with incredible flavours!

 

She used large prawns [5 to 6 per lb (454 g) - with shell on but heads removed]. Shell the prawns. In a large, heavy bottomed frying pan, gently sautee some finely chopped French shallot and sliced green onions [scallions] in lots of butter and a little olive oil. Meanwhile, very lightly dredge the prawns in flour mixed with dried dill, sea salt and a generous amount of freshly ground pepper. Over med-high heat, add prawns and sautee until golden - be very careful not to overcook [there is nothing worse than overdone seafood!]. Immediately remove to hot plates and deglaze pan with a little lemon juice, then add some white wine and a few tablespoonfulls of creme fraiche [or whipping cream if you can't find creme fraiche], stirring continuously with a wooden spoon. Taste and correct seasoning. Spoon on and around prawns.

 

TipsYou only need a little sauce, but you want it really bursting with flavour! The idea here is to work very fast. The pan must be very hot, the lemon juice will evaporate very quickly and the wine will reduce quickly as well. Once the cream is added and the mixture is hot it's ready. So make sure your plates are hot and have your vegetables and rice/potatoes or whatever you wish ready to serve. The seafood won't wait!!!

A delicious, simple lunch or dinner meal :: Aubergine Stacks served with large, jumbo prawns that have marinated in a fresh lime, cilantro, and garlic marinade.

A superb feast of giant Thai king prawns [to the right, taking up most of the large plate!] in a fiery, fragrant sauce of chopped tiny bird's eye chilies, chopped garlic, and tamarind, with Pad Thai noodles [top left of the plate] and a little plain Thai rice [top, hidden behind the King prawns and some chili garlic tamarind sauce] to soak up all the flavours!

Dinner at one of my favourite North London restaurants, Thai & Co. Along with the dish of fiery Tamarind Garlic King Prawns we had some of the best Pad Thai noodles in London, if not the UK!

 

Pad Thai, a "fast food" dish in Thailand sold on the street for busy Thai's to purchase on the go, is typically made with wide rice noodles stir fried in a sauce of tamarind paste, palm sugar, fish sauce, and lime juice with prawns, chicken, and scrambled egg, topped with chopped peanuts and more fresh lime juice just before eating. It has become a staple in most Thai restaurants, although it is usually prepared with thinner rice noodles here in the Occident. But few make it as well as Thai & Co.! The small round dish to the left contains Thai fish sauce and lots of chopped Thai bird's eye chilies to add extra flavour should one need to :-)

Here's a different way of serving these tasty Aubergine Stacks ~ with large, jumbo prawns that have marinated in a fresh lime, cilantro, and garlic marinade.

Had dinner in one of my favourite North London restaurants last evening, Thai & Co. Their cuisine is prepared to order with fresh ingredients and is incredibly tasty. This dish of fiery Tamarind Garlic King Prawns was absolutely superb! Five huge king prawns, about 5 inches long each one [they are split down the centre before grilling so were positively huge and had to be placed diagonally across the plate as shown above], were grilled and topped with a fiery but extremely flavourful sauce composed of tons of chopped fresh red Thai chilies, chopped garlic, several large dry chilies, Thai fish sauce and palm sugar.

 

It should have come with a warning about the heat factor for those not initiated to the pleasures of fiery Thai food :-)

Ben told us he had bought some giant prawns at the supermarket. The word giant didn't really do them justice.

The purple is eggplant, underneath that is sweet potato fried in something that definitely wasn't tempura, but felt like it ought to be. In the middle, giant prawns, and on the right, asparagus and some sort of ... squash?

Someone should do a history of giant things in Australia. I have seen a few of the giant things, like the big Merino, I think I saw the big banana. I also saw the 'small' big thing. Can anyone guess what it is? Hint, there is a pic of it somewhere else on my flickr account.

The massive South African prawns Chris & I picked up at Borough Food Market.

The GIANT PRAWN rears its head over the wreckage of surrounding buildings! Seriously everything around the giant prawn had been demolished.

Before we called it a day and headed back to our hotel, we stopped by this food store specializing in smelly tofu and giant fried prawns.

 

Cherelle got the cold noodles while I tried the prawn.. it was soooooo gooood...
