Over a slow flame, stirring often, cook the quince until it really gets sticky. You can go longer and let it get more thick and more red, or pull it off when it's still pink and soft, depending on what you want to do with it.

 

Things that are good with this:

-Lamb, beef, or pork.

-Cheese (especially manchego)

-Shortbread cookies

-And more

Cook in your home or apartment fireplace? Yes you can! Here's what I use: Fireplace, extra wood, tools, plenty of space cleared for transferring things in and out of the fire, and a comfy sheep skin to kneel/sit on. Note adorable cast iron cauldron!

 

This won't work on a gas fireplace ;-)

I made quince paste over the fire, using one quince. This is a quince. Select them by smell -- strong, good smell = good quince.
