Dutch Pancake

 

1 tablespoon butter

1/2 cup sifted flour

1 teaspoon sugar

1/2 teaspoon salt (or less to taste)

3 eggs, well beaten

1/2 cup milk

Vanilla (optional, add small amount to taste)

 

Preheat oven to 425 degrees F. Set a 10-inch heavy skillet with heat resistant handle over Low heat (I use a glass 10 inch skillet and I do this part on top of stove on burners). Melt butter in skillet; tilt skillet to coat sides and bottom. Sift together the flour, sugar, and salt. Beat eggs and milk together, stirring constantly, blend the egg mixture into flour mixture. Quickly pour batter into hot skillet. Cook 2-3 minutes over Medium heat. Place skillet in oven and bake at 425 degrees F about 10 minutes or until pancake is a light golden brown and top springs back when lightly touched at center (or when golden brown and fluffed up around sides of skillet like a souffle). When done, remove to warm platter.

 

Optional, sift confectioner's sugar over top. Serve at once with lemon wedges.

 

Serves 4-6

 

(Much depends on your oven. I do 3 minutes on top of stove at first and then 13 minutes in oven).
