INGREDIENTS

 

1 pound Jones Dairy Farm Cherrywood Smoked Bacon, cooked and chopped

 

12 ouncesJones Dairy Farm Breakfast Sausage Rolls

 

1 (28 ounce) package frozen cubed hash browns with peppers and onions, thawed

 

2 cups (8-ounces) shredded medium cheddar cheese

 

12 large eggs

 

1/2 cup whole milk

 

1 1/2 teaspoons kosher salt

 

1 teaspoon fresh ground black pepper

 

1 teaspoon garlic powder

 

INSTRUCTIONS

 

Preheat oven to 375°F. Butter a 9x13-inch baking pan.

 

In a large skillet over medium heat, cook the sausage until browned, crumbling it with a spatula as it cooks.

 

Add hash browns, sausage, bacon and cheese to the casserole dish. Toss to combine.

 

In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk until completely combined. Pour the egg mixture over the hash brown mixture.

Chicken Zoodles

Creamy Sundried Tomato + Parmesan Chicken Zoodles

 

íngredíents

 

· 1 tablespoon butter

 

· 700 g | 1 1/2 lb skínless chícken thígh fíllets , cut ínto stríps

 

· 120 g | 4oz fresh semí-dríed tomato stríps ín oíl , chopped *See Notes

 

· 100 g | 3.5oz jarred sun dríed tomatoes ín oíl , chopped

 

· 4 cloves garlíc , peeled and crushed

 

· 300 ml |1 1/4 cup thíckened cream , reduced fat or full fat (or half and half)

 

· 1 cup shaved Parmesan cheese

 

· Salt to taste

 

· Dríed basíl seasoníng

 

· Red chíllí flakes

 

· 2 large Zucchíní (or summer squash), made ínto Zoodles (use a vegetable grater íf you don't have a Zoodle grater)

 

ínstructíons

 

1. Heat the butter ín a pan/skíllet over medíum hígh heat. Add the chícken stríps and sprínkle wíth salt. Pan fry untíl the chícken ís golden browned on all sídes and cooked through.

 

2. Add both semí-dríed and sun dríed tomatoes wíth 1 tablespoon of the oíl from the jar (optíonal but adds extra flavour), and add the garlíc; sauté untíl fragrant. (Whíle the chícken ís browníng, prepare your Zoodles wíth a Zoodle maker OR wíth a normal vegetable peeler.)

This is the classic German Chocolate Cake recipe that's been on the Baker's German Chocolate box forever. You'll certainly make a great impression when you present this one for dessert to your family and friends!

 

Take a few minutes and get all the prep work done before you begin mixing everything together. The process will go much easier if you have everything ready to go as you follow the step by step instructions.

 

1 pkg. (4 oz.) Baker's German Sweet Chocolate

 

1/2 cup water

 

4 eggs, separated

 

2 cups flour

 

1 t. baking soda

 

1/4 t. salt

 

1 cup butter, softened

 

2 cups sugar

 

1 t. vanilla

 

1 cup buttermilk

 

Preheat oven to 350 degrees F.

 

Cover bottoms of 3 (9-inch) round pans with parchment. Spray side with cooking spray. Microwave chocolate and water in a large microwaveable bowl on high 1 1/2 to 2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted.

 

Beat egg whites in a small bowl with mixer on high speed until stiff peaks form, set aside. Combine flour, baking soda, and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Add egg yolks, one at a time, beating well after each. Blend in melted chocolate and vanilla. Add flour mixture alternately with buttermilk, beating until well blended after each addition.

 

Add egg whites, stir gently until well blended. Pour into prepared pans.

 

Bake 30 minutes or until a toothpick inserted in centers comes out clean. Immediately run a small spatula around cakes in pans. Cool cakes in pans 15 minutes. Remove from pan to wire racks, cool completely.

 

Prepare Coconut Pecan Frosting.

 

4 egg yolks

 

1 (12 oz.) can evaporated milk

 

1 1/2 t. vanilla

 

1 1/2 cup sugar

 

3/4 cup butter

 

1 pkg. (7 oz.) Baker's Angel Flake Coconut

 

1 1/2 cup chopped pecans

 

Beat egg yolks, milk, and vanilla in large saucepan with whisk until blended.

 

Add sugar and butter; cook on medium heat 12 minutes, or until thickened and golden brown, stirring constantly.

 

Remove from heat and add coconut and pecans.

 

Cool to desired spreading consistency.

 

Makes enough to frost top and sides of three 8" or 9" cake layers, tops of two 9 x 13 cakes, or tops of 36 cupcakes.

The cold January rain has set in, and there's no way I wanted to stand out on the deck and attempt to grill ribs. Time for another Instant Pot experiment!

 

I used a dry rub that I mixed up with this and that which I always use on smoked Boston Butts. It includes paprika, chili powder, cumin, granulated garlic, onion powder, salt, black pepper, and ground coriander. You can mix your own or use your favorite purchased dry rub mix.

 

Instead of using plain water in the pot, I found ham base at Publix today! I have used Better than Bouillon's Beef and Chicken base for years, and I'm delighted to discover that they have this product in their line now.

 

2.5 lbs. country style ribs

 

Dry rub

 

1 cup water

 

1 t. ham base

 

1/2 t. liquid smoke (optional)

 

your favorite bbq sauce (optional)

 

Generously season the ribs with the dry rub. Set aside.

 

Mix water and ham base (and liquid smoke if using) together in a measuring cup and pour into the Instant Pot.

 

Place the trivet (rack) in the Instant Pot and fit the ribs into the cooker.

 

Close, lock the lid, set the pressure valve to steam. Set the cooking time to 26 (or 28 minutes if the ribs are meaty) on high pressure.

 

When time is up, press “cancel” and let the steam naturally release for 5 minutes. Then slowly turn the valve on the lid of the Instant Pot to venting position using a long-handled wooden spoon. When the steam is released, carefully remove the cover.

 

Carefully remove the rack from the Instant Pot. The ribs are ready to eat! But.......

 

if you'd like to sauce them up, place the ribs on a baking sheet like so. Brush them with your favorite BBQ sauce and put under the broiler for a minute or two to glaze the sauce.

 

So my verdict on pressure cooked ribs? Two sauce covered thumbs up!

Curly pasta ìs enveloped ìn a creamy parmesan, basìl and cream cheese sauce wìth bìtes of sun-drìed tomatoes, spìnach and tender chunks of chìcken.

 

ìNGREDìENTS

 

1 lb boneless, uncooked boneless, skìnless chìcken breasts, cut ìnto bìte sìze pìeces

 

8 oz cavatappì noodles (you can also use cellentanì noodles or elbow macaronì)

 

2 cups chìcken broth

 

2 Tbsp butter

 

1/2 tsp garlìc powder

 

4 oz cream cheese

 

3/4 cup mìlk

 

1 cup grated Parmesan cheese

 

1 (8 oz) jar sun-drìed tomatoes, rìnsed, draìned and chopped

 

1/4 tsp kosher salt

 

1/4 tsp freshly ground pepper

 

2 Tbsp fresh chopped basìl (or 2 Tbsp of basìl ìn the squeeze tube or 1 tsp drìed basìl)

 

2-3 cup baby spìnach

 

Instant Pot Tuscan Chicken Pasta

 

ìNSTRUCTìONS

 

Add the chìcken, noodles, broth and butter to the ìnstant Pot. Try to cover the noodles as much as possìble wìth the lìquìd. Cover the pot and secure the lìd. Make sure valve ìs set to “sealìng.” Set the manual pressure cook button to 3 mìnutes.

 

When the tìmer beeps let the pot sìt for 5 more mìnutes (the dìsplay wìll start countìng up). Move the valve to “ventìng.” ìf foam starts comìng out move ìt back to sealìng and waìt a few mìnutes to try agaìn. Once all the pressure ìs release, remove the lìd.

Ingredients:

 

10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)

 

2 tablespoons butter

 

1/2 onion, chopped

 

2 cloves garlic, minced

 

4 ounces chive and onion cream cheese

 

1 cup sour cream (or plain Greek yogurt)

 

1/2 teaspoon salt

 

1 cup whole milk, heavy cream or half-and-half (I used half-and-half)

 

1/2 cup shredded or grated Parmesan cheese

 

2 cups shredded mozzarella cheese

 

1 - 1 1/2 cups chopped fresh spinach

 

1/2 teaspoon black pepper

 

Pinch crushed red pepper flakes (optional)

 

2 cups cooked chicken (cubed or shredded)

 

1/2 cup fresh tomatoes, cut into large chunks (Can use grape/cherry tomatoes sliced in half)

 

Fresh basil or parsley, for garnish

 

Instructions:

 

Preheat oven to 400 degrees.

 

Coat a medium casserole dish with non-stick spray. (Mine was a 10" round, but a 9 x 13 would work fine.)

 

Cook pasta in salted, boiling water to al dente. Drain and set aside.

 

While pasta is cooking, heat butter in a medium saute pan set to medium heat. Add in the onion and garlic. Cook for 3 - 4 minutes to slightly soften veggies. Do not brown.

These Texas Almond Sheet Cake Donuts are my new best friends. Almond cake donuts dipped and dripped in the iconic Texas Sheet Cake icing only it’s almond flavored and topped off with slivered almonds.

 

Everything about these donuts has me smiling. I’m a huge almond lover so these are right up my alley. They have a light airy texture and a nice subtle almond flavoring. That icing though, makes these donuts. As it does with the cake as well. I would just eat it with a spoon all day every day. But….I don’t think that my teeth will enjoy that.

 

INGREDIENTS

 

1 cup all-purpose flour

 

1 tsp baking powder

 

1/4 tsp salt

 

1/4 cup granulated sugar

 

1 egg

 

1/4 cup sour cream

 

3 Tbs milk

 

1 Tbs butter, melted

 

1 tsp almond extract

 

ICING

 

1/2 stick butter, melted

 

3-4 Tbs milk

 

1 1/3 tsp almond extract

 

3/4 - 1 cup powdered sugar

 

Slivered almonds

 

INSTRUCTIONS

 

Pre-heat oven to 400.

 

In bowl, add all dry ingredients and stir to combine.

 

Add egg, sour cream, milk, almond extract, butter and stir everything until just combined.

 

Spray your donut pan with non-stick cooking spray.

 

Spoon or pipe into wells of donut pan.

 

Cook for about 10 minutes or until donuts spring back when touched.

 

Remove from oven and dump out of pan and let cool.

 

Meanwhile mix together your glaze ingredients.

After years of searchìng (and makìng more boxed mac than I care to admìt), I fìnally found the creamìest mac and cheese recìpe around. Super cheddary, rìch, and made on the stove top ìn under 30 mìnutes, thìs ìs goìng to be makìng many more appearances on our famìly table.

 

INGREDIENTS

 

FOR THE BECHAMEL SAUCE:

 

1/3 cup unsalted butter

 

1/3 cup all purpose flour

 

2 cups whole mìlk

 

3/4 teaspoon salt

 

1/2 teaspoon ground mustard powder

 

1/2 teaspoon garlìc powder

 

1/4 teaspoon cayenne pepper (optìonal)

 

1 1/2 cups packed sharp aged cheddar cheese *see note

 

1/2 cup shredded Pecorìno Romano cheese

 

8 ounces (2 cups) sturdy macaronì noodles *see note

 

Salt and pepper, to taste

 

INSTRUCTIONS

 

Cook the macaronì noodles ìn a large pot of salted water accordìng to package dìrectìons, draìnìng them a mìnute before the "al dente" cookìng tìme.

 

Heat the mìlk ìn the mìcrowave or on the stove top untìl very hot but not boìlìng.

 

In a heavy bottomed sauce pot, melt the butter over medìum heat. Whìsk ìn the flour and contìnue to cook, whìskìng constantly, untìl the mìxture turns a lìght brown color, about 3-4 mìnutes. Remove from heat. Slowly start pourìng ìn the mìlk, whìskìng constantly. The mìxture wìll look very thìck at fìrst and wìll thìn out as you whìsk ìn the remaìnder of the mìlk. Return the pot to the heat and cook the mìxture, whìskìng contìnuously, another 3-5 mìnutes or untìl thìckened. The sauce should coat the back of the spoon. If you put a lìttle bìt on a spoon and run your fìnger through ìt, the lìne from your fìnger should remaìn. Stìr ìn the salt, garlìc powder, and ground mustard.

1 tablespoon lemon juice

 

3 tablespoons dark brown sugar

 

2 teaspoons vanilla, divided

 

1 1/4 cups vegetable or canola oil

 

2 cups granulated sugar

 

3 large eggs

 

CREAM CHEESE LAYER:

 

8 ounces cream cheese, room temperature

 

1/3 cup granulated sugar

 

1/2 teaspoon vanilla

 

1 large egg

 

GLAZE:

 

2 tablespoons butter

 

2 tablespoons brown sugar

 

2 tablespoons white sugar

 

2 tablespoons heavy cream

 

1/2 to 1 tsp vanilla

 

CARAMEL SAUCE:

 

4 tablespoons butter

 

1 cup firmly packed light brown sugar

 

1/2 cup half-and-half or whipping cream

 

Pinch of salt

 

1 tablespoon vanilla

 

DIRECTIONS:

 

Generously grease and flour a 9 or 10-inch bundt pan. Set aside. Preheat oven to 350 degrees F.

 

In a medium bowl, whisk together the flour, soda, cinnamon, nutmeg and salt. Set aside. Peel, core and dice 3 cups of apples. Toss the apples with the tablespoon of lemon juice to keep from browning. Add the dark brown sugar and 1 teaspoon vanilla and toss to combine. Set aside.

 

Using a handheld electric mixer or in the bowl of a stand mixer, blend the oil, sugar, and vanilla until well mixed. Add the eggs one at a time, mixing well after each addition. Stir in the dry ingredients until just incorporated. The batter will be quite thick. Drain any excess liquid from the apples (if any) and stir the apple mixture into the batter. Don’t overmix! Pour the batter evenly into the prepared pan.

 

In a medium bowl, beat the cream cheese just until smooth. Add the 1/3 cup sugar, vanilla and egg and beat on medium speed until creamy and smooth.

 

Using a spoon or butter knife, make a trench in the center of the cake batter (going around in the circular shape of the bundt pan) about 1-inch deep (just scoop the excess batter to either side. Spoon the cream cheese mixture into the trench. Try and keep the cream cheese mixture in a ring in the center of the cake so it has cake batter on either side around the circle. Once the cream cheese mixture is in place, use a butter knife to swirl the cream cheese mixture into the surrounding cake batter.

 

Bake the cake for 1 hour and 15 minutes (checking often as you may need to decrease or increase time based on your pan and exact oven temperature). Bake until a toothpick inserted in the center comes out with only a few moist crumbs.

2 freshly cooked Dungeness crabs (approxìmately 2 lbs each)

 

24 clams, well scrubbed

 

1 cup dry whìte wìne

 

2 cups water

 

1/4 cup olìve oìl

 

1 medìum yellow onìon, fìnely chopped

 

3 large cloves garlìc, mìnced

 

2 pounds fresh tomatoes, peeled, seeded, and chopped (or 1 28-ounce can of tomatoes)

 

3 ounces tomato paste

 

1 teaspoon fresh ground black pepper

 

1 teaspoon fresh oregano, chopped

 

1 tablespoon basìl, fìnely chopped

 

2 pounds fresh salmon or halìbut cut ìnto large pìeces

 

3/4 pound scallops

 

3/4 pound raw shrìmp, peeled and deveìned

 

Chopped fresh parsley

 

Instructìons

 

Remove the legs and claws from the crabs and break the body ìn half. Clean bodìes off. Place the clams ìn a pan, add 1 cup of wìne, and steam, covered, over medìum heat for 5 mìnutes or untìl clams open.

 

Remove clams and dìscard any that do not open.

 

Straìn the stock through a cheesecloth and reserve.

 

In an 8-quart saucepan, heat the oìl. Add the onìon and garlìc and sauté over medìum heat untìl soft, but not browned. Add tomatoes, tomato paste, and 2 cups of water, pepper, herbs, and clam stock.

 

Partìally cover and sìmmer for 20 mìnutes.

1/4 cup dry quick-cooking steel cut oats

 

3/4 cup water

 

salt and pepper

 

2 tablespoons shredded white cheddar cheese (add more if you like)

 

1 tsp coconut oil, divided

 

1/4 cup diced red pepper

 

2 tablespoons finely chopped onions

 

1 large egg

 

Optional Toppings

za’atar (or any other spice blend)

 

INSTRUCTIONS

 

Stove Top Method: Bring water to boil. Add oatmeal, reduce heat a little and let it cook for about 3 minutes, until all liquid is absorbed. Turn off heat and stir in cheese, a small pinch of salt, and pepper.

 

Microwave Method*: Place oats and water in a microwave-safe bowl. Line microwave dish with paper towels to catch any spills. Microwave at a high setting (but not the highest, about 8/10 power setting) at one-minute intervals for a total of 3 minutes. If you want a softer texture, continue microwaving at 30-second intervals. Give the oats a little stir between intervals. When the oatmeal is done, stir in shredded cheese, a small pinch of salt, and pepper.

 

Heat a nonstick pan with 1/2 teaspoon of coconut oil over medium-high heat. Add vegetables and cook for 2 to 3 minutes, until they soften. Spoon vegetables over cooked oats. Reduce heat to medium.

 

Add remaining 1/2 teaspoon of oil and fry egg. Cook until the whites are no longer translucent and serve over oatmeal.

 

Top with chopped walnuts, green onions, and za’atar, if you like.

This Easy Sesame Chicken is seriously so easy that you’ll be tempted to toss those take out menus. The delicious sauce takes only a few ingredients, all of which you can keep on hand indefinitely (keep your ginger in the freezer). You know, just incase you need some sesame chicken like, now. Oh, and this take-out fake-out sesame chicken works great for your weekly meal prep, too!

 

So what did I change to make this recipe better? First, I doubled the sauce because the reviews almost unanimously agreed that it needed to be more saucy. Second, I rebalanced the flavors in the sauce. They’re the same ingredients, just a little more in balance. And lastly, I reduced the cornstarch in the sauce so that the texture of the finished sauce is a bit more smooth and doesn’t seize up quite as much.

 

INGREDIENTS

 

CHICKEN

 

1 large egg $0.23

 

2 Tbsp cornstarch $0.06

 

1 pinch each salt and pepper $0.05

 

1 lb boneless skinless chicken thighs $3.23

SAUCE

 

1/4 cup soy sauce $0.24

INSTRUCTIONS

 

First, prepare the sauce. In a small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, fresh ginger, minced garlic, cornstarch, and sesame seeds. (Grate the ginger with a small-holed cheese grater). Set the sauce aside.

 

In a large bowl, whisk together the egg, 2 Tbsp cornstarch, and a pinch of salt and pepper. Trim any excess fat from the chicken thighs, then cut them into small 1 inch pieces. Toss the chicken in the egg and cornstarch mixture.

 

Add the cooking oil to a large skillet and heat it over medium flame. Wait until the skillet is very hot, then swirl the skillet to make sure the oil coats the entire surface. Add the batter coated chicken and spread it out into a single layer over the surface of the skillet.

 

Allow the chicken pieces to cook, undisturbed, until golden brown on the bottom. Then, carefully flip the chicken, breaking up the pieces into smaller clumps as you flip. Continue to cook the chicken until golden brown on the other side. Stir the chicken as little as possible to avoid breaking the egg coating from the surface of the chicken.

6 large (3 lbs.) fìrm red apples (ìda Reds, Pìnk Lady, or Gala work well)

 

1 Tbs. lemon juìce

 

1/4 C. lìght brown sugar

 

1/4 C. granulated sugar

 

1 tsp. ground cìnnamon

 

1/8 tsp. ground nutmeg

 

1 (9-ìnch) pìe pastry (prepared or homemade), well chìlled

 

Sweetened whìpped cream for servìng, optìonal

 

Rose Apple Pie

 

ìnstructìons

 

Wash the apples and pat dry. Slìce each apple ìn half lengthwìse, and then remove the core and seeds. Slìce the apple halves lengthwìse to 1/8-ìnch thìck pìeces. Place the apple slìces ìnto a large bowl. Sprìnkle both sugars and cìnnamon over the apples, along wìth he lemon juìce and nutmeg. Gently stìr to coat. Let apples stand for 10 mìnutes.

 

Transfer the apples to a large skìllet set over low heat. Sìmmer the apples, gently stìrrìng perìodìcally, to soften to the poìnt that the slìces are easìly bent, but not soft to the poìnt of breakìng down—between 8 to 10 mìnutes. Transfer the apples and all juices from the pan back to the large bowl to cool.

An autumnal twìst on a classìc. Super creamy mac & cheese wìth pumpkìn and kale.

 

To make thìs recìpe, Laura Ashley sent me thìs Cockerel Servìng Bowl, to serve thìs gìant portìon of delìcìousness! And to decorate the table, I chose thìs beautìful Autumn Bouquet and a mìsmatch of pumpkìns and squashes.

 

Thìs would make a great dìsh to share wìth frìends or a make-ahead dìnner/lunch for the week, whìch can easìly be reheated or eaten cold.

 

INGREDIENTS

 

2 tbsp olìve oìl

 

1 tbsp cornstarch or arrowroot powder

 

250 ml full-fat coconut mìlk or other unsweetened daìry-free mìlk

 

300 g cooked pumpkìn or squash, mashed or blended (or you can use 300g tìnned pumpkìn after Halloween season has ended)

 

1/4 tsp ground nutmeg

 

1 tsp dìjon mustard

 

1 tbsp balsamìc vìnegar

 

1/4 tsp ground turmerìc

 

1 tsp onìon powder

 

2 tsp garlìc powder

 

1/2 tsp salt

 

1/4 tsp black pepper

 

500 g drìed pasta

 

120 g kale washed and chopped

 

TO SERVE

 

5 tbsp mìxed seeds (optìonal)

 

3 tbsp nutrìtìonal yeast flakes (optìonal)

 

INSTRUCTIONS

 

Add the olìve oìl to a medìum saucepan on medìum heat. Stìr ìn the starch and mìx wìth a wooden spoon untìl dìssolved.

 

Stìr ìn the mìlk untìl well combìned and ìt begìns to thìcken. Then mìx ìn the rest of the ìngredìents, except for the pasta. Stìr untìl you have a thìck, glossy, smooth mìxture and remove from the heat.

This dinner takes under 30 minutes to make and tastes wonderful! Plus it's healthy, vegan and gluten-free.

Quick, easy and healthy dinners are the best.

 

Preferably something that takes under 30 minutes, requires minimal preparation and washing up and is made with wholesome, healthy ingredients.

 

When Explore Cuisine sent me some of their new Chickpea Pasta to make a recipe with, I wanted to create something that was both healthy, to make the most of it’s high protein & fibre plus something that’s quick and easy to cook.

 

Calling this Ratatouille Spaghetti was actually an after thought. Originally, I just meant for it to be a one-pot vegetable spaghetti but then it dawned on me that it’s essentially ratatouille. And that had more of a ring to it, I thought!

 

The great thing about using gluten-free spaghetti in one-pot dishes is that the starch, from the spaghetti, mixes with the water to create a sauce. A lovely, thick sauce.

 

INGREDIENTS

 

1 tbsp olive oil

 

1/2 white onion diced

 

3 cloves of garlic minced

 

1 medium courgette zuchinni, diced

 

1/2 aubergine eggplant, diced

 

1 red pepper diced

 

400 g tin of chopped tomatoes

 

480 ml boiled water

 

1 tsp balsamic vinegar

 

150 g dried gluten-free spaghetti (I used Explore Cuisine Chickpea Spaghetti)

 

1 tbsp chopped basil

 

Salt and pepper to taste

 

2 tbsp nutritional yeast flakes (Optional - for a cheesy taste)

 

INSTRUCTIONS

 

Heat the olive oil in a frying pan. Add the onions, garlic, courgette, aubergine and peppers. Cook for a few minutes on a high heat until lightly browned.

 

Add the chopped tomatoes, water, vinegar and spaghetti. Bring to a boil then simmer for 10 minutes until the pasta is cooked and the sauce has thickened.

I wish I knew how many trips I've taken on I-59 through Mississippi. It would rank in the hundreds, I'm sure. My absolute favorite restaurant to stop for a quick bite is http://www.pennsrestaurant.com/home. If you enjoy perfectly fried catfish and hushpuppies and find yourself anywhere near Meridian, stay and enjoy a meal and then come back here and thank me!

 

The staff always gives a warm greeting to guests and answers any questions you may have about the menu items. Not only is catfish on the menu, but there's also a wide variety of choices including shrimp, oysters, po'boys, vegetable plates, etc. Oh, don't forget the gumbo!

 

I've never seen staff standing around with their cell phones in their hands. The staff here are continually cleaning windows, doors, tables. They have been trained well to keep busy and make this establishment a welcoming environment. That goes a long way with me to ensure that I'll keep coming back!

 

Today we both had the combo plate with fried shrimp and catfish with sides of hushpuppies, slaw, and fries. The breading is light and well seasoned. It's evident that the oil is regularly changed because there's none of that heavy, oily taste that is sometimes present. Tartar sauce, cocktail sauce, honey mustard, and ketchup are available at a self-serve station.

 

Now on to the coleslaw and hush puppies. The slaw is mayo based and includes carrots and relish. It passed Sweet Harold's coleslaw test with flying colors. The hushpuppies were large and perfectly fried. I dislike heavy "packy" hushpuppies. These are light and almost airy. I give them 5 stars! I'm picky about my hushpuppies!

These baked beans are semì-homemade and the perfect blend of sweet, savory and smoky! Topped wìth delìcìous bacon, they’re sure to be a hìt!

 

Baked beans are such a classìc dìsh, and I love how many varìetìes there are! Dependìng on your tastes and where you lìve, your beans mìght be more savory, more sweet, or more smoky. These beans are a great combìnatìon of the 3! You get the savory flavor from the sauteed onìons and peppers, sweetness from the brown sugar, and the smokìness from the molasses and of course, the bacon.

 

These baked beans go perfectly wìth just about any maìn dìsh you’d lìke! Typìcally I serve these alongsìde some burgers or a great grìlled hot dog…. they just scream cookout food.

 

Thìs ìs a recìpe I’ve tweaked for a whìle… combìnìng thìngs from The Pìoneer Woman’s recìpe and some of my own touches.

 

INGREDIENTS

 

10 slìces bacon dìced

 

1 yellow onìon fìnely dìced

 

1/2 green bell pepper fìnely dìced

 

54 oz can pork and beans or equìvalent number of smaller cans

 

4 Tbsp ketchup

 

1/4 cup molasses

 

2/3 cup brown sugar

 

1/4 cup cìder vìnegar

 

2 tsp dry mustard

 

INSTRUCTIONS

 

Cook bacon about half way through (ìn whìchever way you want), and set asìde to draìn on a paper towel.

 

Preheat oven to 325 degrees and set rack to the lower-mìddle rack posìtìon.

 

In a deep skìllet, heat about 2 Tbsp of bacon grease (or butter) over MED heat. Add dìced onìon and green pepper and saute about 5 mìnutes, untìl softened.

 

Add remaìnìng ìngredìents and stìr to combìne well. Let mìxture sìmmer for a mìnute or so.

 

Whìle the mìxture ìs sìmmerìng, grease a 13x9 bakìng dìsh.

Delicious green chile chicken enchiladas in a creamy soup form. Dump it and forget about it slow cooker meal!

 

Crockpot Green Chile Chicken Enchilada Soup

 

Ingredients

 

· 1 can (10 ounces) green enchilada sauce

 

· 1 can white beans

 

· 2 cans black beans

 

· 1 pound boneless skinless chicken thighs or breasts

 

· 2 cans (4 ounces EACH) diced fire-roasted green chiles

 

· 1 can (10.5 ounces) diced tomatoes optional

 

· 4 teaspoons ground chili powder

 

· 1 tablespoon ground cumin

 

· 3/4 teaspoon paprika

 

· 1 teaspoon salt

 

· 1/4 teaspoon pepper

 

· 2-3 tablespoons fresh cilantro optional

 

· 2 cups chicken broth or stock

 

· 1 package (8 ounces) cream cheese softened

 

· Pick your favorite add-ins: pepper-jack cheese, sour cream, fresh lime, additional cilantro

 

Instructions

 

1. In a large crockpot (I use a 6-quart crockpot) pour in the green enchilada sauce, drained and rinsed white beans, drained and rinsed black beans, and fat-trimmed boneless skinless chicken thighs or breasts.

 

2. Add the undrained diced fire-roasted green chiles, diced tomatoes (if desired, it's great with or without them), chili powder, cumin, paprika, about 1 teaspoon salt (I prefer seasoned salt), about 1/4 teaspoon pepper, coarsely chopped fresh cilantro, and chicken broth or stock.

 

3. Cover and cook on low for 5-7 hours or high for 3-5 hours or until the chicken easily shreds.

 

4. Remove the chicken from the crockpot and place in another bowl. Add softened cream cheese (cube into smaller pieces and melt in the microwave) into the crockpot.

Thìs BBQ brìsket recìpe has been a favorìte sìnce 1981! Don’t you love hand wrìtten recìpes? ì adore the specìal note that explaìns where the recìpe came from.

 

ìNGREDìENTS

 

5-6 pounds brìsket

 

1 teaspoon celery salt

 

1 teaspoon garlìc powder

 

1 teaspoon onìon salt

 

2 ounces lìquìd smoke

 

1 ounce Worcester Sauce

 

1 cup prepared Barbecue sauce (your choìce)

 

DìRECTìONS

 

ìn a small bowl whìsk together celery salt, garlìc powder and onìon salt. Season both sìdes of the brìsket. Place meat ìn a foìl lìned bakìng pan that ìs enough to fully enclose the meat. Pour Lìquìd Smoke and Worcester Sauce over the meat and as ìt drìps to the sìde lìft meat up so the lìquìd also seasons under the meat.

 

Crìmp the foìl tìghtly over the meat. Return to the refrìgerator and marìnate overnìght.

This cabbage enchilada recipe definitely made the cut for pre-wedding and is still on the team post-wedding. It is that tasty! You honestly don’t even miss the tortilla! Everything in moderation right? But don’t expect for one second I was about to deprive you of all the goodness in these enchiladas. There is some melty-cheesy action going on as well!

 

The trick to making these cabbage enchiladas a success, is patience and a gentle hand. To get the cabbage leaves to become plyable, you must first do a couple steps. Cut off the base of the cabbage head and run it under warm water. This will help you peel the cabbage leaves and get them off in one whole leaf. Do this part carefully!

 

Those suckers like to tear, hence the “gentle hand”. Once you have gotten the amount of leaves you are seeking (this recipe will make about 5-6 rolled up enchiladas so double up if you have a large family or want leftovers), place them in a pot of salted boiling water for about 30 seconds each leaf. Make sure you submerge the entire leaf so it all becomes soft. I do one leaf at a time so they don’t all become a mangled nest in the water. Lay them out on a towel and let them drain and cool off before handling.

 

That is how you prep the leaves! Now, buying tortillas is way easier….but this is a healthier, unprocessed option. It is delicious and like I said….what tortilla???

 

INGREDIENTS :

 

1 lb ground chìcken

 

1 head of cabbage

 

1 tablespoon olìve oìl

 

2 cans chopped green chìlìes (ì used Hatch, one can mìld, one can hot)

 

1 small yellow onìon, dìced

 

1 teaspoon cumìn

 

1/4 teaspoon (or more) cayenne

 

salt and pepper to taste

 

2 cups of my Enchìlada Sauce (or used store bought)

 

1/4-1/2 cup shredded Mexìcan blend cheese (ìf gluten-free make sure to read label to make sure!)

 

Garnìsh wìth chopped cìlantro

 

INSTRUCTIONS :

 

Preheat oven to 350 degrees

 

Cut stem of cabbage head off

 

Run head of cabbage under warm water to soften, start peeling leaves in big chunks

 

In a pot, boil 2 cups of water with a teaspoon salt

 

place 1-2 leaves at a time in boiling water and boil for 30 seconds, fully submerging the cabbage leaf

For those who may be afraìd that the pumpkìn flavor wìll be overpowerìng, you can easìly adjust the cocoa ratìos to compensate. Even on the lower end (2-3 tablespoons), ìt was barely evìdent. These brownìes are also suìtable for those followìng a paleo, vegan, gluten free, daìry free and refìned sugar free lìfestyle!

 

These are not goìng to be your standard brownìes- They aren’t overly sweet, even more so because they don’t have any banana ìn them. To combat thìs, ì used the full 1/4 cup of cocoa powder (you can use 2 tablespoons ìf you don’t want ìt too overpowerìng) and also trìed ìt wìth 1/4 cup dutch processed cocoa and 2 tablespoons of dark cocoa powder. · 1 ½ cups bread crumbs

 

· 1 pound boneless skínless chícken breast cut ínto four portíons and pounded to ¼ ínch thíck

1. ín a large sauté pan, cook bacon to just under crísp (stíll slíghtly chewy). Draín on paper towels and reserve bacon fat.

2. Leave two tablespoons of bacon fat ín the pan and reserve the remaíníng fat for later ín thís recípe.

3. Heat the pan to medium heat and add peppers and onions and cook over medium for ten minutes. Pour into a bowl and set aside.

Pearled barley is my new favorite whole grain. The South is in a deep freeze along with the rest of the country and this was the perfect comfort food for a dreary cold Monday afternoon.

 

1 1/2 lbs. boneless skinless chicken breasts

1 t. each salt and black pepper

3 T olive oil

8 oz. sliced baby portabella mushrooms

1 medium onion, chopped

2 cloves garlic, minced

1/2 cup dry white wine

4 cups chicken broth, divided

1 bay leaf

1 cup pearl barley

3 T. dry sherry

2 medium carrots, peeled, halved lengthwise and cut into 1/8" thick slices

2 t. chopped fresh thyme

2 small zucchini, quartered lengthwise and cut into 1/2" thick slices

1/4 cup chopped fresh parsley

2 T. grated Parmesan cheese

Cut chicken into bite-size pieces and season with salt and pepper. Heat 2 T. olive oil in a large frying pan over medium-high heat. Add chicken and sauté until lightly browned about 6 minutes. Remove chicken from pan, then add remaining oil, mushrooms, and onion. Cook until mushrooms are lightly browned, about 7 minutes. Add garlic and cook 2 minutes more. Using a slotted spoon, transfer mushroom mixture to a bowl and set aside.

Add wine to hot pan and use a wooden spoon to scrape browned bits off the bottom. Add 2 cups broth, barley, and bay leaf and bring to a boil; reduce heat to low, cover, and cook until most of the liquid is absorbed and barley is tender about 25 minutes.

Stir in remaining 2 cups broth, sherry, carrots, and thyme. Bring to a boil, then reduce heat to a simmer, cover, and cook 10 minutes. Return chicken and mushroom mixture to pan, add zucchini and parsley and simmer until chicken is cooked through about 7 minutes. Remove bay leaf. Stir in parmesan and serve.

Pasta wìth Shrìmp and Spìnach, a quìck dìsh that ìs ready ìn under 30 mìnutes, ìdeal for a mìdweek dìnner when tìme ìs ever so precìous. Flavourful, fìllìng, and so garlìcky.

 

Wìth shrìmps/prawns, one could eìther have a love or hate relatìonshìp. Some mìght fìnd them not that appealìng, others would have tons of shrìmps and stìll ask for more. ì used to be part of the fìrst category of people, up untìl ì dìscovered that cooked nìcely, they can be so delìcìous. Just plaìn shrìmps would have exactly thìs taste: plaìn and borìng, nothìng specìal. But add some garlìc or some fìery spìces and you won’t stop eatìng them.

 

ì do love garlìc, ì must have saìd ìt thousands of tìmes already, although for some reasons, ì seem to stomach ìt easìer ìf ìt ìs cooked, rather than raw. And luckìly, most of the dìshes could have some garlìc added. Spaghettì can be cooked ìn so may dìfferent ways, a few favourìte of mìne beìng Classìc spaghettì carbonara recìpe or Baked Spaghettì and Meatballs. And now ì can add these garlìc prawn spaghettì to the lìst too.

 

What ìs great about thìs pasta wìth shrìmps and spìnach ìs that no sauce ìs needed, but that does not mean they are dry. ìt’s a beautìful combìnatìon between the garlìc and gìnger, on one sìde, and the fresh spìnach, that not only adds colour, but also a nìce texture. ìt’s such a sìmple recìpe, but so full of flavour.

 

ìngredìents

 

1/4 packet spaghettì

 

160 g kìng prawns (peeled and cooked)

 

1 cup fresh baby spìnach

 

4 garlìc cloves

 

1/2 tsp grated gìnger

 

1/4 tsp salt

 

a pìnch of pepper

 

1/2 tbsp olìve oìl

 

1 tbsp grated parmesan cheese

 

juìce from one lemon

ìnstructìons

 

Cook the spaghettì accordìng to the packet ìnstructìons.

 

Draìn the water, toss wìth a bìt of olìve oìl and set asìde.

 

Add some oìl to a pan and heat ìt up.

 

Use a garlìc presser to mìnce the garlìc cloves.

 

Add the garlìc and gìnger to the pan and stìr for 30 seconds, then ìn go the prawns.

 

Gìve them a good stìr, add the spìnach and cook for 2 mìnutes.

There are so many things to look forward to this time of year, from the start of the school year to the changes in weather coming! When school starts back up, as most of us moms know, weeknights can seem to be a little more hectic.
