Pakistani Indian Chicken Entree In Red Bank New Jersey - IMRAN®

I met up with my childhood friend Ian for a wonderful “desi” (ethnic Indian Pakistani) dinner in Red Bank, NJ. I was there to speak at a great AI-related event. He lives about half an hour away and drove up for us to grab a bite to eat — before I headed home on a frigid night with snow showers. This was a tender chicken tikka type dish. Earlier I had posted a photo of the great lamb shank too.

Growing up in Pakistan, one was very familiar with the roving individual, the "Bhuttay Walla" (corn seller), roasting corn on charcoal. Carrying his supply on a "thaila", he wandered in various neighborhoods, shouting "bhuttay walla", a so called slogan that made children scamper to buy one.

 

Once the corn is roasted, chutpata masla such as red chilli powder and chaat masala(a blend of various spices) is added with a nip of of salt and lemon to make your mouth water before digging in your teeth :)

These are sweet balls made using semolina (sooji/rava), ghee (clarified butter) and sugar.

Dizzyingly delicious chicken seekh kababs with onion rings...tamarind sauce...lemon and home made desi style paratha.

 

Recipe for Seekh Kababs.

 

Ingredients :

2lbs minced meat chicken/beef

2 tsp red chilli powder ( spicy one not paprika...You will find easily at any Pakistani/Indian or Mexican grocery stores)

2 tsp salt or to taste

6 finely chopped green chillies

2 cloves finely chopped garlic

1 tbs finely chopped ginger

1 tsp cumin seeds

1 tsp coriander seeds

1 tbs roasted gram flour

1 egg

1/2 medium size onion finely chopped

Half bunch of fresh coriander leaves finely chopped

 

Method :

Wash the minced meat and put in a strainer and gently press to squeezeout all the water.

Mix all the ingredients to the minced meat and knead well.

Keep aside for 1 hr or if you are planning to make next day you can refrigerate over night without mixing coriander leaves and onions.

Heat a gas oven or an electric oven with the skewers or BBQ grill.

Take a big ball of the keema mixture and hold a hot skewer carefully in the other hand.

Press the minced meat on to a hot skewer.

The keema will immediately stick to the hot skewer.

Repeat with left over mince on all the other skewers.

Place the skewers in the oven.

Keep rotating the skewers occasionally.

When cooked..gently remove the kababs from the skewers.

To serve sprinkle some chat masala and lemon juice on the kababs.

 

Tamarind Sauce Recipe.

 

Ingredients:

200gms Tamarind (Imli)

300gms of sugar

2 tsp roasted cumin (zeera) powder

1tsp red chili powder

1tsp crushed red pepper

Salt to taste

1/2 tsp ground garam masala powder

 

Method:

Soak tamarind in warm water for few hrs or overnight, if you wanna do it quick soak it in hot water....using your hands squeeze out the seeds and pulp from tamarind.

 

Add 3 cups of water (if it looks less add more) and bring it to a boil.

Add all the ingredients above excluding sugar and mix well...let it cook for a while...then add sugar...cook again on medium heat still sugar dissolves completely and chutney gets semi thick (not too thick) 'cuz this chutney thickens more on cooling so check for consistency when using or you can get an idea from the picture :)

In Pakistan during Ramadan are a lot of delicacies in the bakeries and mithai shops to drool over...Me and my brother were coming back to my khala's place from a shopping spree and spotted this bakery. He mentioned they make the best chicken rolls in town. We bought about 2 dozens of chicken rolls (yes never go for grocery shopping with an empty stomach:)

 

Outside the bakery, this guy was frying a huge pool of samosas, I stepped forward and asked him if I can take a picture? He gave me the biggest smile in town and said....aaho Jee...zaroor :)

Information: Chotpoti is a roadside dish popular in Bangladesh (especially among urban people) and West Bengal, India. Chotpoti is thought to be of Bengali origin. It is spicy, sour and hot in taste. The snack is very popular owing to its availability, low price and ease of preparation. It is mostly sold in roadside stands and in various fast food stores. It can also be prepared at home.

Well, this is one of the favourite food of mine. I'm a foodie and those who following me on Instagram knows that very well. I like to try different types of food at different restaurant/cafe etc. Despite having the opportunity of trying the fines food availabe, "Fuchka/ ফুচকা" avery popular street food of Bangladesh, will always remain on top of my favourite food list.

During the stay at Bangaram Island Resort I got the opportunity to taste the authentic Malayali cuisine.

 

Here the plate shows us the Coconut flavoured rice, Chicken Kozhambu, Beans Poriyal and to conclude with the delicious and crispy fish 65.

Raitas provide a wonderfully cooling contrast to spicy foods.

 

1 cucumber, peeled and diced. (I prefer seedless)

2 cups plain yogurt.

1/4 cup coarsely chopped fresh cilantro.

1 tsp. minced garlic.

1 tsp. lightly toasted ground cumin seeds.

Salt and freshly ground pepper, to taste. (I like to add a pinch of red chilli powder too)

 

For more, make the measurement double...for less make it half or according to your taste.

 

Method:

Whip yogurt along with some milk or water. Add salt, garlic, cumin seeds, pepper. Stir until smooth. Add diced cucumber, mix and enjoy :)

After having insipid food for days, fighting over allergies and fever, I finally sauntered down the kitchen today and cooked something worth eating Mutton with Tori (Zucchini or Courgettes)

Chicken Kofta Karhai :)

 

I need to STOP trying new dishes, otherwise I'll turn into a Beluga whale soon :)

  

I grew up watching my mother's nagging sessions with mali baba (gardener), telling him things like bougainvillea needs pruning or the honeysuckle is dying, papaya tree is growing too tall or the rose bushes need proper spacing or fertilizer. I used to have a Champa tree (Plumeria) too, back home. However she never said anything about that. I don't know why but I always thought Ammi brought that tree in her dowry lol. She was so attached to that Champa tree, always sitting by it having chai, making little garlands of champa flowers or reading something beside it. Years later I came to know that my Nanajan(grandfather) potted that plant for her and few days later he passed away.

 

Anyway I digress, there was a fuss about something, always and forever, with the poor mali baba who was literally vexed by Ammi. Reason was my mother's garden, which was very dear to her and still is. Since I started gardening on my own I now realized why Ammi was so protective about her garden/plants, you start loving them like they are your babies :)

 

After sowing cilantro seeds couple of weeks back, I made sure that everyday it's getting enough sun and water or needs fertilizer may be? Can't describe the excitement, was ecstatic when I used few sprigs of fresh coriander/cilantro from my garden in cooking :)

 

Now I can't wait for mint and purple coneflower to peep out of the soil and smile at me :)

Chicken Pulav/Pilough/Pilav/Pullao :)

 

Recepie:

 

Ingredients:

2 lbs meat/chicken/beef

Rice 4 cups (washed and soaked for 30 minutes)

Ginger paste 1 tbs

Garlic paste 1 tbs

Yogurt(plain) 1 cup (whipped)

Oil 1 cup

Salt per taste

Cumind seeds 1ts

Cinamon 3 sticks

Bay leaf 4

Brown cardamom 3

Green cardamom 4 to 5

black cumin 1/2 ts

Coriander powder 1 ts level

Pepper corns 10

Cloves 7

Mace powder 1/2 tsp

Few drops kewra for aroma.

 

Method :

1 : Warm up oil and add peppercorns...cloves...cinamon...bay leaves...green cardamom...cumin seeds...fry for few minutes then add ginger garlic paste...stir for few minutes then add mutton/chicken/beef...fry for few minutes when meat turns white add 1 to 2 glasses of water...cover and boil on low heat until meat is tender...If you are making chicken pulao then you do not need to 1 to 2 glasses of water...just add half cup of water... cover the pot and keep it on low heat but for mutton and beef you will need to add water....When the meat is tender (about one cup of stock should remain in the pot...if more add water if less increase heat and reduce it.

 

2: Then pour the yogurt over the cooked meat.

 

3: SEPERATELY in 12 glasses of boiling water stir in 5 tsps of salt and then add soaked rice...Boil the rice until more than half cooked....remove from heat and thoroughly drain....Spread the rice over the meat...then sprinkle some dry yellow food color(optional)....cover and cook on low heat on stove until the rice is tender or in the oven on 350F for 30 minutes...Mix the rice gently and serve with raita....If you want you can sprikle some fried onion for garnishing.

       

Probably one of the best I've tried.

My blogger friend, Maryam, posted the recipe of Murgh Quorma in Hyderabadi style the other day. Only reading through the recipe sounded so yummy that I had to make it. So what other day to do so when 14th August was around the corner :)

 

It was yummylicious ... a bit different from the way I cook chicken. But very yummy indeed. I don't indulge in Garam Masala (mixture of spices) during cooking. For this I put in some ... and a dash of Kasoori Methi too. The taste was heavenly. Though my dada, being the oh-so-good cook, was like agar yah karleti tu bahtar tha. Haaa. Dads.

 

I was happy with the outcome BTW =D
