What You Need

5 RITZ Reduced Fat Crackers, finely crushed (about 1/4 cup)

1/4 cup panko bread crumbs

2 Tbsp. KRAFT Grated Parmesan Cheese

1/2 tsp. garlic powder

1/8 tsp. ground red pepper (cayenne)

1 egg

1 Tbsp. ATHENOS Greek Strained Nonfat Yogurt

2 tsp. GREY POUPON Dijon Mustard

1 Tbsp. flour

2 tilapia fillets (1/2 lb.)

Make It

HEAT oven to 425ºF.

MIX first 5 ingredients in pie plate. Beat egg, yogurt and mustard with fork in separate pie plate until well blended. Place flour on plate.

DIP fish in flour, then in egg mixture and crumb mixture, turning to evenly coat both sides of each fillet. Place on foil-covered baking sheet.

BAKE 15 min. or until fish flakes easily with fork.

I'm sad to say this shot did not turn out well, and the rest were, rushed and worse. Tragic!

Afternoon and after-dinner snacks

Dried tamarind - was actually purchased in Chaweng a couple of nights before; coated with sugar and chilli - very tasty

Fruit-shaped biscuits (most were broken) that had to be dipped in the chocolate

Black Sesame flavoured soy milk - could not be finished

Coke

Coconut Jelly - not consumed until the next day

Squiddy baked cuttlefish - not too bad, but there wasn't much in the box and most of the pieces were broken

Taro filled bun - accidently included in the photo; was not actually eaten

The “HOOK” is a crispy fish slider topped with shredded cabbage n homemade tartar sauce.

But be careful when ordering the “HOOK” cause you might just catch another kind of “hook” (right to the back of your neck)!

Pai is one of my favourite Thai restaurants but I don't come here often enough. I was actually lucky to get in for the last seat at the bar during a lunch rush. Yummm!
