I woke up this morning with constipation. Oh, I had a movement. Just not a very pleasant one. About ripped me to shreds... "my ass feels like it's been assaulted".

 

However, my neck felt wonderful. Almost no pain at all. That ended as soon as the hospital got done with me. Poking those damn things into my neck... hurt like a mother fuck. Then I decided to eat breakfast in their cafeteria... It was ok... until I start to drive home. Then all of a sudden I gotta go again, "and not like before"... no accidents. But as soon as I sat down... "Blast Off". My poor rear was in such a state of shock, my penis forgot to pee. I'm walking around the house and all of a sudden. I gotta go to the bathroom again... I'm thinking: What the hell, I just went... "That was no.2, this was no.1"

 

I'm taking Vicodin today, fuck that tylenol shit.

 

My partner at work will be happy to hear this. She said I was a little moody yesterday... she'd be even happier if I shared one with her. :-)

One in a Million

 

This for Rare Disease day on the 29th of February 2012, My name is John O’Connor father to Aoibhe to has a Rare Genetic Disorder called Mucolipidosis Type II/III, we think Aoibhe is the only person in Ireland to have ML 2.5, and this is her story

 

One in a Million

 

Well its actually 1 in 750,000, Aoibhe was our first, born on the 10-11-2006, we were so happy when she was born and to have a little girl, a little bundle of joy, jet black hair and I remember her being very long and having model’s legs, they say she gets the height from our mother? She was just like a normal new born and even very normal up to six or seven months, where we noticed a curve in her spine, not to worried because she seems not to be a big deal, and my niece had something similar, so we booked appointment in the Pink clinic in cork after a referral from our own doctor, my now wife Emma took Aoibhe to a Doctor Tangeny on January of 2008, at this stage we were due to get married in February of 2008, Dr Tangeny who we now own a great deal for diagnosing her at 9 months, other cases we have read about weren’t diagnosed until they were 2 or 3 years old, he spent some time checking Aoibhe and seen things that we never seen, I suppose as new parents we didn’t or weren’t looking for these. She couldn’t straighten her fingers and couldn’t put her arms above her shoulders, curve on her spine. We made another appointment for a week later and we both went, He sat us down and I remember him looking very sorry for us, he got a huge Medical text book up on the table and took out a photocopied page from it and hand it to us, and told us that Aoibhe had MUCOLIPIDOSIS TYPE III, and told us to read the information on the page and there was more information on the internet, but that all he could tell us because he had never seen it before because it was so rare. I remember leaving that Doctor’s office in a Daze. Our prefect little baby girl has something wrong with her and we didn’t know really what it was? So we went home and we got a laptop from my sister and search the internet for this Disorder we seen some positive stories and some scary stories, so we printed the A-Z of Mucolipidosis Type III and we decided to keep away from the Internet until we know for certain what Aoibhe had.

 

At this stage we had got appointments for Crumlin Children Hospital and Temple Street in Dublin, I remember our first trip to Temple Street, we were like the newbie’s and you could seen other parents knew it was our first time, and everytime since we always know the newbie’s when we see them, I say to Emma there are some newbie’s, Aoibhe was seen in the metabolic unit by a Professor Treacy and then we were sent for Aoibhe to take pictures, I remember that Aoibhe couldn’t cry because they needed a normal picture of her, so they could show the progress of the disease, we spent at least 1 hour doing everything we could to stop Aoibhe crying, and I thought to myself and this is only the start of things and it was only a man taking a few pictures. Professor Treacy is a Specialist in these MPS related disease and give us a better understanding of the Mucolipidosis, here comes the science part, The Mucolipidosis (ML) are a group of inherited metabolic diseases that affect the body’s ability to carry out the normal turnover of various materials within cells. In ML, abnormal amounts of carbohydrates and fatty materials (lipids) accumulate in cells. Because our cells are not able to handle such large amounts of these substances, damage to the cells occurs,. Symptoms of ML can be congenital (present at birth) or begin in early childhood or adolescence. Early symptoms can include vision problems and developmental delays. Over time, many children with ML develop poor mental capacities, have difficulty reaching normal developmental milestones, and, in many cases, eventually die of the disease.

 

The MLs are classified as lysosomal storage diseases because they involve increased storage of substances in the lysosomes, which are specialized sac-like components within most cells. Lysosomes play a critical role in the metabolic function of our bodies. One of their primary roles is to pick up substances such as carbohydrates and lipids and break them down into smaller molecules so that they can be used again in the metabolic process. This process is possible because lysosomes contain enzymes, which are proteins that help the body’s chemistry work better and faster. Working continuously, enzymes break down carbohydrates and lipids and assist in the transfer of their by-products throughout the rest of the cell for the production of energy or excretion.

Patients with ML are born with a genetic defect in which their bodies either do not produce enough enzymes or, in some instances, produce ineffective forms of enzymes. Without functioning enzymes, which are proteins, lysosomes cannot break down carbohydrates and lipids and transport them to their normal destination. The molecules then accumulate in the cells of various tissues in the body, leading to damage of organs. In patients with ML, the molecules accumulate in nerve, liver, and muscle tissue as well as in bone marrow, and this abnormal storage causes the various symptoms associated with ML. For example, excess storage of these molecules in nerve tissues can cause mental retardation, accumulation in the tissues of the spleen and liver can cause poor functioning of these vital organs, and excess storage in the bone marrow can damage bones, leading to the skeletal deformities.

The accumulation of carbohydrates and lipids in tissue is not the result of just one deficient enzyme. Lysosomes contain as many as 40 or 50 different enzymes, each responsible for a highly specialized function. Therefore, a deficiency in one particular enzyme or activator protein causes symptoms that may be somewhat different from the symptoms caused by the deficiency of another type of enzyme.

There are four types of ML and each is classified according to the enzyme(s) or other protein that is deficient or mutated (altered). Symptoms can range from mild to severe.

The MLs are similar to another group of lysosomal storage diseases known as the mucopolysaccharidoses. While both conditions produce similar symptoms and are caused by the lack of enzymes necessary to break down and transport carbohydrates and lipids, the mucopolysaccharidoses result in an excess of sugars, known as mucopolysaccharides, in the urine. Mucopolysaccharides are not seen in urine of patients with ML, therefore screening of the urine can help doctors distinguish between the two groups of disorders.

Mucolipidosis types II and III (ML II and ML III) which Aoibhe is in between, we call it ML 2.5, ML 2.5 results from a deficiency of the enzyme N-acetylglucosamine-1-phosphotransferase. Just as luggage in an airport is tagged to direct it to the correct destination, enzymes are often "tagged." In ML II and ML III, the deficient enzyme is supposed to tag other enzymes (activator proteins) so that they can initiate certain metabolic processes in the cell. Because the activator proteins are not properly tagged, they escape into spaces outside the cell and therefore cannot do their usual work of breaking down substances inside the cells. Another way of looking at it is, it is a storage disease, and everyone has bad and good in there body, but Aoibhe cant break down the bad, so it all builds up.

The mucolipidoses are inherited in an autosomal recessive manner, that is, they occur only when a child inherits two copies of the defective gene, one from each parent. When both parents carry a defective gene, each of their children faces a one in four chance of developing one of the MLs. At the same time, each child also faces a one in two chance of inheriting only one copy of the defective gene. People who have only one defective gene are known as carriers. These individuals do not develop the disease but they can pass the defective gene on to their own children. Because the defective genes involved in certain forms of ML are known, tests can identify people who are carriers in some instances. My wife and I are both carriers.

Since then we had numerous trips to Crumlin Children’s hospital for MRI and X-rays and day cases operations, she only had two major operations, one was to put dye in her hips to figure out if her hip joints are ok, and the other was to remove 8 teeth, she had them removed as they were weak and the drink we giving her for her constipation had a high sugar level, so it was best to remove them, she improve a lot after taken them out, eaten and sleeping all improved, when Aoibhe has to be knock out, its not a nice thing to hold a mask over your child’s mouth to put her to sleep while she is screaming for you to help her, but it has be done, and I know we will have to done it alot more over the coming years, we’ve got get help from over families in New Zealand, America and the UK and there is a Forum called Penguin café, where we discuss and ask questions about ML. and from the stories we read about, some children had over 20 operations from spinal rods to joint conductors and most having to use a wheelchair or walking aid, it looks we’ve only hit the tip of the iceberg, and I know there is always someone else worst off then you, but I sometimes fear for the future.

Aoibhe is 5 years old and is happy child, she has a sister Lauren with is 2, she doesn’t have ML, Aoibhe is only around 77cm in Height and weighs 10.2kg, around the same height as a one year old, she wears glasses and has a Special chair at home for herself, she’s quiet bright and they say that she has her dad wrapped around little finger…. She finds it hard to get from a sitting position to standing, or if she fails she really cant manage to get herself up, her legs and arms are bent and she can straighten them, she has a claw hand, meaning that her hands and fingers are swollen and she cant straighten her fingers and finds it had to grip, Aoibhe finds it hard to reach above shoulder level, she balance can be affected, this is due to her curve in her spine and her trying to balance her head, she is in Pre-school 4 days a week, three days in Killeagh and one day in Enable Ireland cork in Ballintemple in Blackrock, Enable Ireland also help which her speech and language, Physiotherapy, and so much more, we hoping to send her to Big school in September, which is very excited about, she loves school, loves colouring, loves playing games, loves her trampoline and wooden steps her uncles made for her, she loves going to play parks, although she cant do everything, she tries hard at them, and sometimes you can see her watching other children wondering why cant I do that or figuring out a way she could do it, Aoibhe is very good at this, finding a way to do what is normal to another child, it might take a while, but she finds a way. There is so many other stories and issues we have, but this letter is really just trying to raise awareness for RARE DISEASE DAY on the 29th of February 2012, we think Aoibhe is the only person in Ireland to have ML 2.5, and if she isn’t we would love to find out about children with this, the MPS society Ireland have annual conference with the UK MPS society that brings families together and also Specialists in these areas. But we have never meet a family had a child with ML II/III.

Back then, we didn't know if she would make it, cause, she could refuse the food (kitten powder milk), and whatever you might think, 12 days old kitten cannot pee or defecate without their mother, cause the mother "stimulates" the little ones with tongues. Benjamin Franklin Gust was born June 6, 1858, in Indiana, and died October 19, 1959, in Kansas at the age of 101 years. Benjamin is buried in St. Paul's United Church of Christ Cemetery located in Holyrood, Ellsworth County, Kansas.

Women who have gone through this usually carry the problem silently and unaided. We must put the light on this situation and see how we can provide them with the right information and help.

Baptists preach religious intolerance at Gay Pride marchers. London, 02.07.2011

  

As this year's London Gay Pride parade made its way from Portland Place, down Regent Street and then on to Trafalgar Square, marchers and onlookers alike were quite shocked and generally offended to discover that there was a demonstration set up at the bottom of Waterloo Place by a group of so-called Christians from the Baptist Church - some of whom looked like they had been time-warped directly from the 1950's, complete with emotional constipation - who spent the entire afternoon insulting and demeaning all gay people and anyone who accepts homosexuality as a part of the enormously wide spectrum of human sexuality by cherry-picking snippets from the Bible - without proper context - and generally showing themselves up to be nothing more than a bunch of hate-filled bigots who laughably claim to love the people they were standing there belittling.

 

Needless to say the gay marchers responded with a continual torrent of cat-calls, laughter, jeering, rude hand-signals, kissing and even a bit of breast-bearing. All of this was just feeding the Baptist's justification for their prejudice, of course, and clearly this group of ideologically-driven individuals felt somehow emotionally nourished and vindicated by the experience, but the truth is that they came across as petty, arrogant and malicious anachronisms.

 

When I arrived on the scene two grinning lesbians with three large black umbrellas were pointedly blocking the public's view of the Baptists and as many of the large, lurid yellow placards erected by the religious zealots as they could. A little later on the onlookers erupted in cheers and whistles as two younger girls kissed right in front of the anti-gay demonstrators, and after that a young man demanded a copy of the Bible from the Baptists and proceeded to sit cross-legged on the pavement checking every single quote mentioned on the yellow boards so he could see for himself how the individual phrases had been quoted completely out of context, just to suit the zealots' low opinion. The preachers spent much of their time mentioning the Devil, but in my eyes the Devil was the one holding the microphone, waving a book around, trying to inflict their misery on everyone else...

Castor Oil

 

Castor oil is nothing to do with squeaky wheels on the legs of furniture (casters), although it can be used as a lubricant.

 

It is a vegetable oil pressed from castor beans. Castor oil is a colourless to very pale yellow liquid with a distinct taste and odour.

 

Castor oil and its derivatives are used in the manufacturing of soaps, lubricants, hydraulic and brake fluids, paints, dyes, coatings, inks, cold resistant plastics, waxes and polishes, nylon, pharmaceuticals and perfumes.

 

Annually 270,000–360,000 tonnes of castor oil are produced for a variety of uses.

 

Composition of Castor Oil

 

Castor oil is a good source of ricinoleic acid, which makes it a valuable addition to feedstocks, commanding a higher price than other seed oils. As an example, in July 2007, Indian castor oil sold for about US$0.90 per kilogram, whereas U.S. soybean, sunflower and canola oils sold for US$0.30 per kilogram.

 

Uses of Castor Oil

 

(a) Castor Oil in Food and Preservatives

 

In the food industry, food-grade castor oil is used in food additives, flavourings, sugar candy, and chocolate. It is also used in food packaging, and as a mould inhibitor.

 

In India, Pakistan and Nepal, food grains are preserved by the application of castor oil. It stops rice, wheat, and pulses from rotting. For example, the legume pigeon pea is commonly available coated in castor oil for extended storage.

 

(b) Castor Oil in Traditional Medicine

 

The use of castor oil as a laxative is first referred to in the circa 1550 BC Ebers Papyrus, although it is known to have been in use for this purpose several centuries before then.

 

The United States Food and Drug Administration (FDA) has categorized castor oil as:

 

"Generally recognized as safe and

effective for over-the-counter use

as a laxative with its major site of

action the small intestine, where it

is digested into ricinoleic acid".

 

Although used in traditional medicine to induce labour in pregnant women, there is insufficient evidence that castor oil is effective in dilating the cervix or inducing labour.

 

Castor oil, or a castor oil derivative is an excipient added to prescription drugs; it acts as a vehicle or medium for an active ingredient. Medications in which castor oil features include:

 

- Miconazole, an antifungal agent

 

- Paclitaxel, a mitotic inhibitor used in cancer chemotherapy

 

- Sandimmune, an immunosuppressant drug widely used in connection with organ transplant to reduce the activity of the patient's immune system

 

- Nelfinavir mesylate, an HIV protease inhibitor

 

- Tacrolimus, an immunosuppressive drug

 

- Xenaderm ointment, a topical treatment for skin ulcers

 

- Aci-Jel (composed of ricinoleic acid from castor oil, with acetic acid and oxyquinoline), used to maintain the acidity of the vagina

 

- Optive Plus and Refresh Ultra, artificial tears to treat dry eye both contain castor oil

 

- Vishnevsky liniment also contains castor oil.

 

(c) Alternative Medicinal Uses of Castor Oil

 

In naturopathy, castor oil is promoted as a treatment for several human health conditions, including cysts. However, according to the American Cancer Society:

 

"Available scientific evidence does

not support claims that castor oil on

the skin cures cancer or any other

disease."

 

(d) Castor Oil in Skin and Hair Care

 

Castor oil is used in cosmetic products including creams and moisturisers. Small amounts of castor oil are frequently used in soap to increase lathering in the finished bar. It has also been used to enhance hair conditioners and anti-dandruff products.

 

(e) The Use of Castor Oil in Coatings

 

Castor oil is used in the polyurethane industry, where it is widely used as a rigid polyol and in coatings. One particular use is in polyurethane concrete where a castor-oil emulsion is used with cement to make a construction aggregate. This is applied fairly thickly as a slurry which is self-levels to build a resilient floor.

 

It is not a drying oil, meaning that it has a low reactivity with air compared to oils such as linseed oil and tung oil.

 

(f) Castor Oil as a Precursor to Industrial Chemicals

 

Castor oil can be broken down into other chemical compounds that have numerous applications.

 

Transesterification followed by steam cracking gives undecylenic acid, a precursor to specialized polymer nylon 11, and heptanal, a component in fragrances.

 

Breakdown of castor oil gives 2-octanol, both a fragrance component and a specialized solvent.

 

Hydrogenation of castor oil produces a waxy lubricant.

 

Castor oil can be epoxidized to make the triglycidyl ether of castor oil which is useful in epoxy technology. This is available commercially as Heloxy.

 

The production of lithium grease consumes a significant amount of castor oil. Hydrogenation and saponification of castor oil yields a high performance lubricant grease.

 

Since it has a relatively high dielectric constant, highly refined and dried castor oil is sometimes used as a dielectric fluid within high performance high voltage capacitors.

 

(g) Castor Oil as a Lubricant

 

Vegetable oils are generally unattractive alternatives to petroleum-derived lubricants because of their poor oxidative stability. Castor oil has better low-temperature viscosity properties and high-temperature lubrication than most vegetable oils, making it useful as a lubricant in jet, diesel, and racing engines.

 

The lubricant company Castrol took its name from castor oil.

 

However, castor oil tends to form gums in a short time, and therefore its usefulness is limited to engines that are regularly rebuilt, such as racing engines.

 

Castor oil is also used as a lubricant for bicycle pumps because it does not degrade natural rubber seals.

 

(h) Early Aviation and Aeromodelling

 

World War I aviation engines used castor oil as a primary lubricant, mixed with the fuel.

 

Castor oil was the preferred lubricant for rotary engines, such as the Gnome engine after that engine's widespread adoption for aviation in Europe in 1909.

 

It was used almost universally in rotary engined Allied aircraft in World War I. Germany had to make do with inferior ersatz oil for its rotary engines, which resulted in poor reliability.

 

Methanol-fuelled two-cycle engines used for aeromodelling, since their adoption by model airplane hobbyists in the 1940's, have used varying percentages of castor oil as a lubricant. It is highly resistant to degradation when the engine has its fuel-air mixture leaned for maximum engine speed.

 

Gummy residues can still be a problem for aeromodelling powerplants lubricated with castor oil, however, usually requiring eventual replacement of ball bearings when the residue accumulates within the engine's bearing races.

 

One British manufacturer of sleeve valved four-cycle model engines has stated the "varnish" created by using castor oil in small percentages can improve the pneumatic seal of the sleeve valve, improving the engine's performance over time.

 

(i) The Use of Castor Oil in Turkey Red Oil

 

Turkey red oil, also called sulphonated castor oil, is made by adding sulphuric acid to vegetable oils, most notably castor oil. It was the first synthetic detergent after ordinary soap.

 

(j) Castor Oil in Biodiesel

 

Castor oil, like less expensive vegetable oils, can be used as feedstock in the production of biodiesel. The resulting fuel is superior for cold winters, because of its exceptionally low cloud point and pour point.

 

Initiatives to grow more castor for energy production, in preference to other oil crops, are motivated by social considerations. Tropical subsistence farmers would gain a cash crop.

 

(k) Castor Oil as an Instrument for Punishment and Torture

 

Some parents used to punish children with a dose of castor oil. Physicians recommended against the practice because they did not want medicines associated with punishment.

 

A heavy dose of castor oil could be used as a humiliating punishment for adults. Colonial officials used it in the British Raj (India) to deal with recalcitrant servants. Belgian military officials prescribed heavy doses of castor oil in the Belgian Congo as a punishment for being too sick to work.

 

The most famous use of castor oil as punishment came in Fascist Italy under Benito Mussolini. It was a favourite tool used by the Blackshirts to intimidate and humiliate their opponents. Political dissidents were force-fed large quantities of castor oil by Fascist squads.

 

Victims of this treatment sometimes died, as the dehydrating effects of the oil-induced diarrhoea often complicated the recovery from the nightstick beating they also received along with the castor oil.

 

However, even those victims who survived had to bear the humiliation of the laxative effects resulting from excessive consumption of the oil. It is believed that the Nazi SA used this torture method against German Jews shortly after the appointment of Adolf Hitler as Chancellor of Germany in 1933.

 

It is said that Mussolini's power was backed by "The bludgeon and castor oil".

 

In lesser quantities, castor oil was also used as an instrument of intimidation, for example, to discourage civilians or soldiers who would call in sick.

 

Today, the Italian terms manganello and olio di ricino still carry strong political connotations. The words are used to satirise patronising politicians, or the authors of disliked legislation. The terms Usare l'olio di ricino, ("to use castor oil") and usare il manganello ("to use the bludgeon") mean "to coerce or abuse".

 

The Safety of Olive Oil

 

The castor seed contains ricin, a toxic lectin. Heating during the oil extraction process denatures and deactivates the lectin. However, harvesting castor beans may not be without risk.

 

The International Castor Oil Association FAQ document states that castor beans contain an allergenic compound called CB1A. This chemical is described as being virtually non-toxic, but has the capacity to sensitize people with hypersensitivity. The allergen may be neutralized by treatment with a variety of alkaline agents. The allergen is not present in the castor oil itself.

 

These health issues, in addition to concerns about the toxic by-product (ricin) from castor oil production, have encouraged the quest for alternative sources for hydroxy fatty acids. Alternatively, some researchers are trying to genetically modify the castor plant to prevent the synthesis of ricin.

 

Since castor oil is sometimes used to induce labor in full-term pregnancies (scientific evidence of its effectiveness is lacking, however), consuming castor oil to treat constipation is not considered safe in pregnancies that are not at full term yet, as it may cause contractions of the womb.

Black pepper (Piper nigrum) is a flowering vine in the family Piperaceae, cultivated for its fruit, known as a peppercorn, which is usually dried and used as a spice and seasoning. When fresh and fully mature, it is about 5 mm in diameter and dark red, and contains a single seed, like all drupes. Peppercorns and the ground pepper derived from them may be described simply as pepper, or more precisely as black pepper (cooked and dried unripe fruit), green pepper (dried unripe fruit), or white pepper (ripe fruit seeds).

 

Black pepper is native to present-day Kerala in Southwestern India, and is extensively cultivated there and elsewhere in tropical regions. Vietnam is the world's largest producer and exporter of pepper, producing 34% of the world's crop, as of 2013.

 

Ground dried and cooked peppercorns have been used since antiquity, both for flavour and as a traditional medicine. Black pepper is the world's most traded spice, and is one of the most common spices added to cuisines around the world. Its spiciness is due to the chemical compound piperine, which is a different kind of spicy from the capsaicin characteristic of chili peppers. It is ubiquitous in the modern world as a seasoning, and is often paired with salt and available on dining tables in shakers.

 

ETYMOLOGY

The word pepper has roots in the Sanskrit word pippali for long pepper. Ancient Greek and Latin turned pippali into the Greek πέπερι peperi and then into the Latin piper, which the Romans used for both black pepper and long pepper, erroneously believing that both came from the same plant.

 

From its Sanskrit roots, today's "pepper" is derived from the Old English pipor and from Latin, which is the source of Romanian piper, Italian pepe, Dutch peper, German Pfeffer, French poivre, and other similar forms.

 

In the 16th century, people began using pepper to also mean the unrelated New World chili pepper (genus Capsicum). People have also used pepper in a figurative sense to mean "spirit" or "energy" at least as far back as the 1840s. In the early 20th century, this shortened to "pep".

 

VARIETIES

BLACK PEPPER

Black pepper is produced from the still-green, unripe drupes of the pepper plant. The drupes are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures cell walls in the pepper, speeding the work of browning enzymes during drying. The drupes dry in the sun or by machine for several days, during which the pepper skin around the seed shrinks and darkens into a thin, wrinkled black layer. Once dry, the spice is called black peppercorn. On some estates, the berries are separated from the stem by hand and then sun-dried without the boiling process.

 

Once the peppercorns are dried, pepper spirit and oil can be extracted from the berries by crushing them. Pepper spirit is used in many medicinal and beauty products. Pepper oil is also used as an ayurvedic massage oil and in certain beauty and herbal treatments.

 

WHITE PEPPER

White pepper consists solely of the seed of the ripe fruit of the pepper plant, with the thin darker-coloured skin (flesh) of the fruit removed. This is usually accomplished by a process known as retting, where fully ripe red pepper berries are soaked in water for about a week so the flesh of the peppercorn softens and decomposes; rubbing then removes what remains of the fruit, and the naked seed is dried. Sometimes alternative processes are used for removing the outer pepper from the seed, including removing the outer layer through mechanical, chemical, or biological methods.

 

Ground white pepper is used in Chinese and Thai cuisine, but also in salads, cream sauces, light-coloured sauces, and mashed potatoes (as a substitute, because black pepper would visibly stand out). However, white pepper actually has a different flavour from black pepper; it lacks certain compounds present in the outer layer of the drupe

 

GREEN PEPPER

Green pepper, like black pepper, is made from unripe drupes. Dried green peppercorns are treated in a way that retains the green colour, such as with sulphur dioxide, canning, or freeze-drying. Pickled peppercorns, also green, are unripe drupes preserved in brine or vinegar.

 

Fresh, unpreserved green pepper drupes, largely unknown (and unavailable) in the West, are used in some Asian cuisines, particularly Thai cuisine. Their flavour has been described as "spicy and fresh", with a "bright aroma". They decay quickly if not dried or preserved, making them unsuitable for international shipping.

 

WILD PEPPER

Wild pepper grows in the Western Ghats region of India. Into the 19th century, the forests contained expansive wild pepper vines, as recorded by the Scottish physician Francis Buchanan (also a botanist and geographer) in his book A journey from Madras through the countries of Mysore, Canara and Malabar (Volume III). However, deforestation resulted in wild pepper growing in more limited forest patches from Goa to Kerala, with the wild source gradually decreasing as the quality and yield of the cultivated variety improved. No successful grafting of commercial pepper on wild pepper has been achieved to date.

 

ORANGE PEPPER AND RED PEPPER

Orange pepper or red pepper usually consists of ripe red pepper drupes preserved in brine and vinegar. Ripe red peppercorns can also be dried using the same colour-preserving techniques used to produce green pepper.

Pink pepper and other plants

 

Pink peppercorns are the fruits of the Peruvian pepper tree, Schinus molle, or its relative, the Brazilian pepper tree, Schinus terebinthifolius, plants from a different family (Anacardiaceae). As they are members of the cashew family, they may cause allergic reactions, including anaphylaxis, for persons with a tree nut allergy.

 

The bark of Drimys winteri ("canelo" or "winter's bark") is used as a substitute for pepper in cold and temperate regions of Chile and Argentina, where it is easily found and readily available. In New Zealand, the seeds of kawakawa (Macropiper excelsum), a relative of black pepper, are sometimes used as pepper; the leaves of Pseudowintera colorata ("mountain horopito") are another replacement for pepper. Several plants in the United States are also used as pepper substitutes, such as field pepperwort, least pepperwort, shepherd's purse, horseradish, and field pennycress.

 

PLANTS

The pepper plant is a perennial woody vine growing up to 4 m in height on supporting trees, poles, or trellises. It is a spreading vine, rooting readily where trailing stems touch the ground. The leaves are alternate, entire, 5 to 10 cm long and 3 to 6 cm across. The flowers are small, produced on pendulous spikes 4 to 8 cm long at the leaf nodes, the spikes lengthening up to 7 to 15 cm as the fruit matures. Pepper can be grown in soil that is neither too dry nor susceptible to flooding, moist, well-drained and rich in organic matter (the vines do not do too well over an altitude of 900 m above sea level). The plants are propagated by cuttings about 40 to 50 cm long, tied up to neighbouring trees or climbing frames at distances of about 2 m apart; trees with rough bark are favoured over those with smooth bark, as the pepper plants climb rough bark more readily. Competing plants are cleared away, leaving only sufficient trees to provide shade and permit free ventilation. The roots are covered in leaf mulch and manure, and the shoots are trimmed twice a year. On dry soils, the young plants require watering every other day during the dry season for the first three years. The plants bear fruit from the fourth or fifth year, and then typically for seven years. The cuttings are usually cultivars, selected both for yield and quality of fruit.

 

A single stem bears 20 to 30 fruiting spikes. The harvest begins as soon as one or two fruits at the base of the spikes begin to turn red, and before the fruit is fully mature, and still hard; if allowed to ripen completely, the fruit lose pungency, and ultimately fall off and are lost. The spikes are collected and spread out to dry in the sun, then the peppercorns are stripped off the spikes.

 

Black pepper is native either to Southeast Asia or South Asia. Within the genus Piper, it is most closely related to other Asian species such as P. caninum.

 

PRODUCTION AND TRADE

As of 2016, Vietnam was the world's largest producer and exporter of black peppercorns, producing 216,000 tonnes or 39% of the world total of 546,000 tonnes (table). Other major producers include Indonesia (15%), India (10%), and Brazil (10%). Global pepper production may vary annually according to crop management, disease, and weather. Vietnam dominates the export market, using almost none of its production domestically.

 

Peppercorns are among the most widely traded spice in the world, accounting for 20% of all spice imports.

 

HISTORY

Pepper is native to South Asia and Southeast Asia, and has been known to Indian cooking since at least 2000 BCE. J. Innes Miller notes that while pepper was grown in southern Thailand and in Malaysia, its most important source was India, particularly the Chera dynasty (Tamil dynasty) Malabar Coast, in what is now the state of Kerala. The lost ancient port city of Muziris in Kerala, famous for exporting black pepper and various other spices, gets mentioned in a number of classical historical sources. Peppercorns were a much-prized trade good, often referred to as "black gold" and used as a form of commodity money. The legacy of this trade remains in some Western legal systems that recognize the term "peppercorn rent" as a token payment for something that is, essentially, being given.

 

The ancient history of black pepper is often interlinked with (and confused with) that of long pepper, the dried fruit of closely related Piper longum. The Romans knew of both and often referred to either as just piper. In fact, the popularity of long pepper did not entirely decline until the discovery of the New World and of chili peppers. Chili peppers—some of which, when dried, are similar in shape and taste to long pepper—were easier to grow in a variety of locations more convenient to Europe.

 

Before the 16th century, pepper was being grown in Java, Sunda, Sumatra, Madagascar, Malaysia, and everywhere in Southeast Asia. These areas traded mainly with China, or used the pepper locally. Ports in the Malabar area also served as a stop-off point for much of the trade in other spices from farther east in the Indian Ocean. Following the British hegemony in India, virtually all of the black pepper found in Europe, the Middle East, and North Africa was traded from Malabar region.

 

Black peppercorns were found stuffed in the nostrils of Ramesses II, placed there as part of the mummification rituals shortly after his death in 1213 BCE. Little else is known about the use of pepper in ancient Egypt and how it reached the Nile from South Asia.

 

Pepper (both long and black) was known in Greece at least as early as the fourth century BCE, though it was probably an uncommon and expensive item that only the very rich could afford.

 

By the time of the early Roman Empire, especially after Rome's conquest of Egypt in 30 BCE, open-ocean crossing of the Arabian Sea direct to Chera dynasty southern India's Malabar Coast was near routine. Details of this trading across the Indian Ocean have been passed down in the Periplus of the Erythraean Sea. According to the Greek geographer Strabo, the early empire sent a fleet of around 120 ships on an annual trip to India and back. The fleet timed its travel across the Arabian Sea to take advantage of the predictable monsoon winds. Returning from India, the ships travelled up the Red Sea, from where the cargo was carried overland or via the Nile-Red Sea canal to the Nile River, barged to Alexandria, and shipped from there to Italy and Rome. The rough geographical outlines of this same trade route would dominate the pepper trade into Europe for a millennium and a half to come.

 

With ships sailing directly to the Malabar coast, black pepper was now travelling a shorter trade route than long pepper, and the prices reflected it. Pliny the Elder's Natural History tells us the prices in Rome around 77 CE: "Long pepper ... is 15 denarii per pound, while that of white pepper is seven, and of black, four." Pliny also complains, "There is no year in which India does not drain the Roman Empire of 50 million sesterces", and further moralizes on pepper:

 

It is quite surprising that the use of pepper has come so much into fashion, seeing that in other substances which we use, it is sometimes their sweetness, and sometimes their appearance that has attracted our notice; whereas, pepper has nothing in it that can plead as a recommendation to either fruit or berry, its only desirable quality being a certain pungency; and yet it is for this that we import it all the way from India! Who was the first to make trial of it as an article of food? and who, I wonder, was the man that was not content to prepare himself by hunger only for the satisfying of a greedy appetite?

He does not state whether the 50 million was the actual amount of money which found its way to India or the total retail cost of the items in Rome, and, elsewhere, he cites a figure of 100 million sesterces.

 

Black pepper was a well-known and widespread, if expensive, seasoning in the Roman Empire. Apicius' De re coquinaria, a third-century cookbook probably based at least partly on one from the first century CE, includes pepper in a majority of its recipes. Edward Gibbon wrote, in The History of the Decline and Fall of the Roman Empire, that pepper was "a favorite ingredient of the most expensive Roman cookery".

 

POSTCLASSICAL EUROPE

Pepper was so valuable that it was often used as collateral or even currency. In the Dutch language, "pepper expensive" (peperduur) is an expression for something very expensive. Also in Hungarian, the term "a price of pepper" ("borsos ár") means something of extraordinary value. The taste for pepper (or the appreciation of its monetary value) was passed on to those who would see Rome fall. Alaric, king of the Visigoths, included 3,000 pounds of pepper as part of the ransom he demanded from Rome when he besieged the city in fifth century. After the fall of Rome, others took over the middle legs of the spice trade, first the Persians and then the Arabs; Innes Miller cites the account of Cosmas Indicopleustes, who travelled east to India, as proof that "pepper was still being exported from India in the sixth century". By the end of the Early Middle Ages, the central portions of the spice trade were firmly under Islamic control. Once into the Mediterranean, the trade was largely monopolized by Italian powers, especially Venice and Genoa. The rise of these city-states was funded in large part by the spice trade.

 

A riddle authored by Saint Aldhelm, a seventh-century Bishop of Sherborne, sheds some light on black pepper's role in England at that time:

 

I am black on the outside, clad in a wrinkled cover,

Yet within I bear a burning marrow.

I season delicacies, the banquets of kings, and the luxuries of the table,

Both the sauces and the tenderized meats of the kitchen.

But you will find in me no quality of any worth,

Unless your bowels have been rattled by my gleaming marrow.

 

It is commonly believed that during the Middle Ages, pepper was often used to conceal the taste of partially rotten meat. No evidence supports this claim, and historians view it as highly unlikely; in the Middle Ages, pepper was a luxury item, affordable only to the wealthy, who certainly had unspoiled meat available, as well. In addition, people of the time certainly knew that eating spoiled food would make them sick. Similarly, the belief that pepper was widely used as a preservative is questionable; it is true that piperine, the compound that gives pepper its spiciness, has some antimicrobial properties, but at the concentrations present when pepper is used as a spice, the effect is small. Salt is a much more effective preservative, and salt-cured meats were common fare, especially in winter. However, pepper and other spices certainly played a role in improving the taste of long-preserved meats.

 

Its exorbitant price during the Middle Ages—and the monopoly on the trade held by Italy—was one of the inducements that led the Portuguese to seek a sea route to India. In 1498, Vasco da Gama became the first person to reach India by sailing around Africa (see Age of Discovery); asked by Arabs in Calicut (who spoke Spanish and Italian) why they had come, his representative replied, "we seek Christians and spices". Though this first trip to India by way of the southern tip of Africa was only a modest success, the Portuguese quickly returned in greater numbers and eventually gained much greater control of trade on the Arabian Sea. The 1494 Treaty of Tordesillas with the Spanish granted Portugal exclusive rights to the half of the world where black pepper originated.

 

Unsurprisingly, the Portuguese proved unable to monopolize the spice trade. Older Arab and Venetian trade networks successfully imported enormous quantities of spices, and pepper once again flowed through Alexandria and Italy, as well as around Africa. In the 17th century, the Portuguese lost almost all of their valuable Indian Ocean trade to the Dutch and the English, who, taking advantage from the Spanish ruling over Portugal during Iberian Union (1580–1640), occupied by force almost all Portuguese dominations in the area. The pepper ports of Malabar began to trade increasingly with the Dutch in the period 1661–1663.

As pepper supplies into Europe increased, the price of pepper declined (though the total value of the import trade generally did not). Pepper, which in the early Middle Ages had been an item exclusively for the rich, started to become more of an everyday seasoning among those of more average means. Today, pepper accounts for one-fifth of the world's spice trade.

China

 

It is possible that black pepper was known in China in the second century BCE, if poetic reports regarding an explorer named Tang Meng (唐蒙) are correct. Sent by Emperor Wu to what is now south-west China, Tang Meng is said to have come across something called jujiang or "sauce-betel". He was told it came from the markets of Shu, an area in what is now the Sichuan province. The traditional view among historians is that "sauce-betel" is a sauce made from betel leaves, but arguments have been made that it actually refers to pepper, either long or black.

 

In the third century CE, black pepper made its first definite appearance in Chinese texts, as hujiao or "foreign pepper". It does not appear to have been widely known at the time, failing to appear in a fourth-century work describing a wide variety of spices from beyond China's southern border, including long pepper. By the 12th century, however, black pepper had become a popular ingredient in the cuisine of the wealthy and powerful, sometimes taking the place of China's native Sichuan pepper (the tongue-numbing dried fruit of an unrelated plant).

 

Marco Polo testifies to pepper's popularity in 13th-century China, when he relates what he is told of its consumption in the city of Kinsay (Hangzhou): "... Messer Marco heard it stated by one of the Great Kaan's officers of customs that the quantity of pepper introduced daily for consumption into the city of Kinsay amounted to 43 loads, each load being equal to 223 lbs." Marco Polo is not considered a very reliable source regarding China, and these second-hand data may be even more suspect, but if this estimated 4,500 kg a day for one city is anywhere near the truth, China's pepper imports may have dwarfed Europe's.

 

During the course of the Ming treasure voyages in the early 15th century, Admiral Zheng He and his expeditionary fleets returned with such a large amount of black pepper that the once-costly luxury became a common commodity.

Phytochemicals, folk medicine and research

 

Like many eastern spices, pepper was historically both a seasoning and a folk medicine. Long pepper, being stronger, was often the preferred medication, but both were used. Black pepper (or perhaps long pepper) was believed to cure several illnesses, such as constipation, insomnia, oral abscesses, sunburn, and toothaches, among others. Various sources from the fifth century onward recommended pepper to treat eye problems, often by applying salves or poultices made with pepper directly to the eye. No current medical evidence indicates any of these treatments has any benefit.

 

Pepper is known to cause sneezing. Some sources say that piperine, a substance present in black pepper, irritates the nostrils, causing the sneezing. Few, if any, controlled studies have been carried out to answer the question.

 

Piperine is under study for its potential to increase absorption of selenium, vitamin B12, beta-carotene and curcumin, as well as other compounds. As a folk medicine, pepper appears in the Buddhist Samaññaphala Sutta, chapter five, as one of the few medicines a monk is allowed to carry. Pepper contains phytochemicals, including amides, piperidines, pyrrolidines and trace amounts of safrole, which may be carcinogenic in laboratory rodents.

 

Piperine is also under study for a variety of possible physiological effects, although this work is preliminary and mechanisms of activity for piperine in the human body remain unknown.

 

NUTRITION

One tablespoon (6 grams) of ground black pepper contains moderate amounts of vitamin K (13% of the daily value or DV), iron (10% DV) and manganese (18% DV), with trace amounts of other essential nutrients, protein, and dietary fibre.

 

FLAVOR

Pepper gets its spicy heat mostly from piperine derived both from the outer fruit and the seed. Black pepper contains between 4.6 and 9.7% piperine by mass, and white pepper slightly more than that. Refined piperine, by weight, is about one percent as hot as the capsaicin found in chili peppers. The outer fruit layer, left on black pepper, also contains aroma-contributing terpenes, including germacrene (11%), limonene (10%), pinene (10%), alpha-phellandrene (9%), and beta-caryophyllene (7%), which give citrusy, woody, and floral notes. These scents are mostly missing in white pepper, as the fermentation and other processing removes the fruit layer (which also contains the spicy piperine). Other flavors also commonly develop in this process, some of which are described as off-flavors when in excess: Primarily 3-methylindole (pig manure-like), 4-methylphenol (horse manure), 3-methylphenol (phenolic), and butanoic acid (cheese). The aroma of pepper is attributed to rotundone (3,4,5,6,7,8-Hexahydro-3α,8α-dimethyl-5α-(1methylethenyl)azulene-1(2H)-one), a sesquiterpene originally discovered in the tubers of Cyperus rotundus, which can be detected in concentrations of 0.4 nanograms/l in water and in wine: rotundone is also present in marjoram, oregano, rosemary, basil, thyme, and geranium, as well as in some Shiraz wines.

 

Pepper loses flavor and aroma through evaporation, so airtight storage helps preserve its spiciness longer. Pepper can also lose flavor when exposed to light, which can transform piperine into nearly tasteless isochavicine. Once ground, pepper's aromatics can evaporate quickly; most culinary sources recommend grinding whole peppercorns immediately before use for this reason. Handheld pepper mills or grinders, which mechanically grind or crush whole peppercorns, are used for this as an alternative to pepper shakers that dispense ground pepper. Spice mills such as pepper mills were found in European kitchens as early as the 14th century, but the mortar and pestle used earlier for crushing pepper have remained a popular method for centuries, as well.

 

Enhancing the flavor profile of peppercorns (including piperine and essential oils), prior to processing, has been attempted through the postharvest application of ultraviolet-C light (UV-C).

As this year's London Gay Pride parade made its way from Portland Place, down Regent Street and then on to Trafalgar Square, marchers and onlookers alike were quite shocked and generally offended to discover that there was a demonstration set up at the bottom of Waterloo Place by a group of so-called Christians from the Baptist Church - some of whom looked like they had been time-warped directly from the 1950's, complete with emotional constipation - who spent the entire afternoon insulting and demeaning all gay people and anyone who accepts homosexuality as a part of the enormously wide spectrum of human sexuality by cherry-picking snippets from the Bible - without proper context - and generally showing themselves up to be nothing more than a bunch of hate-filled bigots who laughably claim to love the people they were standing there belittling.

 

Needless to say the gay marchers responded with a continual torrent of cat-calls, laughter, jeering, rude hand-signals, kissing and even a bit of breast-bearing. All of this was just feeding the Baptist's justification for their prejudice, of course, and clearly this group of ideologically-driven individuals felt somehow emotionally nourished and vindicated by the experience, but the truth is that they came across as petty, arrogant and malicious anachronisms.

 

When I arrived on the scene two grinning lesbians with three large black umbrellas were pointedly blocking the public's view of the Baptists and as many of the large, lurid yellow placards erected by the religious zealots as they could. A little later on the onlookers erupted in cheers and whistles as two younger girls kissed right in front of the anti-gay demonstrators, and after that a young man demanded a copy of the Bible from the Baptists and proceeded to sit cross-legged on the pavement checking every single quote mentioned on the yellow boards so he could see for himself how the individual phrases had been quoted completely out of context, just to suit the zealots' low opinion. The preachers spent much of their time mentioning the Devil, but in my eyes the Devil was the one holding the microphone, waving a book around, trying to inflict their misery on everyone else...

Flaxseeds and flaxseed oil may help to:

 

- Lower cholesterol, protect against heart disease and control high blood pressure. Several studies indicate that flaxseed oil, as well as ground flaxseeds, can lower cholesterol, thereby significantly reducing the risk of heart disease. Flaxseed oil may also have a protective effect against angina (chest pain) and high blood pressure. In addition, a 5-year study done recently at Boston's Simmons College found that flaxseed oil may be useful in preventing a 2nd heart attack. It may also help prevent elevated blood pressure by inhibiting inflammatory reactions that cause poor circulation and artery-hardening plaque.

 

- Counter inflammation associated with lupus and gout. Omega-3 fatty acids appear to limit the inflammatory reaction associated with these conditions. In cases of lupus, flaxseed oil not only reduces inflammation in the joints, kidneys and skin, but also lowers cholesterol levels that may be elevated by the disease. Taking flaxseed oil for gout may lessen the often sudden and severe joint pain or swelling that is a symptom of this condition.

 

- Control constipation, hemorrhoids, diverticular disorders. Because they are high in soluble fiber, ground flaxseeds can help ease the passage of stools and thus relieve constipation, hemorrhoids and diverticular disease.

 

- Reduce cancer risk. The lignans in flaxseed appear to play a role in protecting against breast, colon, prostate, and perhaps skin cancer. In one study(1), prostate cancer patients who added about 3 heaping tablespoons of ground flaxseed daily to their diet, had more slowly-dividing tumor cells and a greater rate of tumor cell death than men who did not follow such a diet, after about 5 weeks.

 

The researchers found no significant difference in levels of prostate specific antigen (PSA), a protein in the blood which indicates prostate cancer progression, between the 2 groups - although men in the early stages of the disease experienced a trend toward lower levels.

 

Prostate cancer is the most common cancer among American men, excluding skin cancers. The American Cancer Society estimates that more than 198,000 new cases of prostate cancer are diagnosed in the U.S. each year. While the cancer will be diagnosed in about 1 in 6 men, about 1 in 30 will die of the disease.

The preachers spent much of their time mentioning the Devil, but in my eyes the Devil was the one holding the microphone, waving a book around, trying to inflict their misery on everyone else...

Baptists preach religious intolerance at Gay Pride marchers. London, 02.07.2011

  

As this year's London Gay Pride parade made its way from Portland Place, down Regent Street and then on to Trafalgar Square, marchers and onlookers alike were quite shocked and generally offended to discover that there was a demonstration set up at the bottom of Waterloo Place by a group of so-called Christians from the Baptist Church - some of whom looked like they had been time-warped directly from the 1950's, complete with emotional constipation - who spent the entire afternoon insulting and demeaning all gay people and anyone who accepts homosexuality as a part of the enormously wide spectrum of human sexuality by cherry-picking snippets from the Bible - without proper context - and generally showing themselves up to be nothing more than a bunch of hate-filled bigots who laughably claim to love the people they were standing there belittling.

 

Needless to say the gay marchers responded with a continual torrent of cat-calls, laughter, jeering, rude hand-signals, kissing and even a bit of breast-bearing. (I'm not sure why reason # 1 is at the top of this list. #20 comes first with me at my age! Alas, a cup of tea is more appealing when I first wake up in the morning. Then I'm wide awake so bound out of bed to prepare and enjoy my porridge)

Mere miles west of Almira, lies this tiny, crumbling, isolated farmhouse, giving shelter only to dust, insects and the occasional critter. One of its arboreal sentinels has died along with the house, while one still looks lushly upon its pockmarked exterior. There is nothing else for miles and miles.

 

I passed this place on the way to Omak for a photoshoot. I pointed it out to John and said we must stop here on the way back. Well, we took a different route back (much more scenic) and emerged at Wilbur. I remembered this place as being just past Wilbur. So did John.

 

HA! Weren't we silly doofs as I drove and drove and drove. Or so it seemed. And a bit quickly, too, because we were losing the light. FInally, after we passed Almira, and I was on the verge of turning around, there it was! I swear it had moved since four hours earlier. Anyway, we got there barely in time.

 

I did not charge the customer for these out-of-the-way miles, by the way. Just in case they see this.

 

A note about "The Rules." Photographic dogma would have me make this photo obey the "rule of thirds," wherein either the sky, or the ground, should occupy two thirds and one third respectively. And I cropped the panorama to fit that rule, and most of the time it's a good thing to do this.

 

Not this time. Whether it was more sky or more ground, it just didn't look right. So screw the rules this time. Yeah, Rules, I just made you my bitch! Now get the hell out of here until I say you can come back!

 

Last note, I promise:

One of my regular contacts has been noted as writing that she does not like sunset/sunrise photos. She knows who she is. I'd like to apologize to her for this utter abomination, clotted as it is with the blood of a sunset. I have a grimy, gritty, black and white beauty just waiting in the wings for you. It'll rear its monochrome head soon.

Though the house appears to be looking away from the highway, it was actually facing the highway. This is the distortion of a ten-photo panorama, but it makes for a cool composition.
